Abstract

Se describe un método para la produccion de queso fresco de diferentes tipos tales como requeson, queso crema o queso fresco. La invencion comprende lospasos de pretratamiento de la leche y de concentracion de ésta por medio de filtracion, tal comou ltrafiltracion, así como también el tratamiento de calor delconcentrado de leche. La filtracion de membrana da como sub-producto, un suero dulce, sin tener en cuenta que tipo de queso fresco es producido. El método,además, incluye los pasos deagrega do de un agente de coagulacion y de aditivos de sabor al concentrado de leche. El agente de coagulacion es cuajo y/o cultivoácido, que depende del tipo de queso fresco. La mezcla es empacada directamente en envases para el consumidor a unacierta tem peratura predeterminada, quedepende del tipo de queso, y los envases son seguidamente mantenidos a esta temperatura por un cierto período de tiempo.
