Abstract

Se describe un procedimiento para la esterilización contínua de líquidos biológicos no envasados, particularmente leche y sus derivados, que contienencargas bacterianas y de esporas, el cual incluye las etapas de: a) precalentar gradualmente el líquido con métodos convencionales de calentamiento a unatemperatura entre 90 y 140°C; b) irradiar al producto con un campo electromagnético de radiofrecuencia con una frecuencia menor que 1 GHz demanera de recalentar rápidamente al producto a una temperatura comprendida entre 145 y 165°C y con un gradiente térmico comprendido entre aproximadamente0,01°C/s y 10°C/s; c) enfriar al líquido a una temperatura de aproximadamente 15°C antes de envasar al producto. También se describe un aparato para poneren práctica el procedimiento y que comprende al menos una primera etapa de calefacción por radiofrecuencia, seguida por un medio aislado térmicamentepara conservar al producto irradiado a una temperatura que asegura ladestrucción completa de bacterias y esporas.
