Abstract
Liquid products or liquefiable products liable to damage by enzymes or micro-organisms and containing proteins or vitamins which deteriorate under conventional sterilizing heat treatment, e.g. blood plasma, blood serum, milk, whole egg, egg yolk, butter, are sterilized by quickly heating by high-frequency electrical energy to a temperature above the boiling point of the product at atmospheric pressure, and, immediately after this temperature is reached, are quickly cooled by sudden release of the pressure and vaporization from the product. Milk, preheated to 55 DEG C., is heated by the method to 120 DEG C. in less than 2 seconds, and cooled practically instantaneously to below 45 DEG C.; the cooling may be sufficient to freeze the product. The release of pressure and vaporization may be effected by atomizing the heated product into a current of chemically inert gas, e.g. air or carbon dioxide when milk is being treated, so as to obtain a dry product, the apparatus for such a procedure comprising a supply container for the product, a tube lead therefrom to an atomizer, and devices for developing high-frequency electrical energy in the tube lead immediately before the atomizer. According to an example, butter in a closed container is heated by high-frequency electrical energy to such a temperature that the pressure rises to 2 atmospheres, heating from 80 DEG C. taking not more than 0.1 sec., and after heating the pressure is released, whereupon the butter cools by evaporation of moisture therefrom.
