Abstract
Description
The invention relates to the food industry, in particular to pasteurization and sterilization of liquid food products and can be used to sterilize other liquids, for example biomedical preparations.
длительный нагрев продукт нагревают до 65-70оС и выдерживают при этой температуре 30 мин;
высокотемпературный нагрев продукт нагревают до 70-75оС и выдерживают 2-4 мин;
кратковременный нагрев продукт нагревают до 95оС и выдерживают около 30 с;
Known methods of heat treatment of liquid food products, for example milk, in order to destroy harmful microorganisms and increase the storage time of products described in [1] Heat treatment of food products, pasteurization or sterilization consists in heating them to a certain temperature for a certain time. There are several heating modes:
prolonged heating, the product is heated to 65-70 about C and maintained at this temperature for 30 minutes;
high-temperature heating, the product is heated to 70-75 about C and incubated for 2-4 minutes;
short-term heating, the product is heated to 95 ° C and held for about 30 s;
ultra-high temperature heating, the product is heated to 110-140 about C and incubated for several seconds.
The heating modes listed above are based on the temperature dependence of the life of microorganisms. The lifetime of microorganisms at a given elevated temperature is called the thermostable term. This period, as a rule, the shorter the higher the temperature. The essence of heating modes is to ensure that the processed product is heated to a certain temperature for a period of time that is longer than the thermostable period.
However, such methods of heat treatment of liquid products lead to a deterioration in the quality and taste of the product. This is due to the fact that when food is heated, to some extent, the destruction of vitamins (inactivation of vitamins) and protein denaturation or even coagulation occur, which reduces biological value. Moreover, the higher the heating temperature and the exposure time, the more vitamins are destroyed and proteins are denatured. As a result, it is impossible to increase the efficiency of pasteurization or sterilization. In addition, it is impossible when processing products on the heating surface to form solid deposits. So, when milk is processed, milk stone is formed, which is difficult to remove, it disrupts heat transfer, contributes to the formation of burns and spoils the taste of milk, and is a bacterium accumulator. As a result, processing efficiency is degraded. In addition, the formation of deposits leads to the need for regular washing of heat exchange equipment using special cleaning solutions based on acids and alkalis. This ultimately harms the environment.
Closest to the proposed technical essence is the method [2] of direct heating, which is heating the pasteurized product not through the heat transfer wall of the heat exchanger, but by directly mixing the pasteurized liquid product with a heating medium, for example, water vapor. The method includes the operation of feeding the pasteurized product into the pasteurizer, heating to a predetermined temperature by supplying sterile water vapor prepared from drinking water, holding at this temperature, cooling the product and removing excess water that has entered the product as steam. This method allows for a fairly quick heating of the product and is particularly convenient for use in ultra-high temperature heating. In this case, there is no formation of milk stone in the heating zone and its deposition in other parts of the equipment is reduced.
However, this method degrades the quality and taste of the pasteurized product, since there is a destruction of vitamins and coagulation of proteins. In addition, during the pasteurization process, a large amount of water (in the form of steam) is introduced into the product, namely up to 30% by weight of the product. Water removal is associated with additional difficulties and energy costs.
The objective of the invention is the creation of a highly efficient method of heat treatment of liquid products with high quality indicators.
For this purpose, the heat treatment of liquid products, comprising steam heating of the product by mixing them in the known method, it is proposed heating implement a rate not less than 1400 C / s to pasteurization, no less than 7600 C / s for sterilization to a temperature not higher than the temperature value changes in the liquid product. Heating can be carried out by direct contact of the product with condensing water vapor, while the liquid product should be sprayed to a diameter of not more than 0.3 mm.
The temperature of qualitative changes in a liquid product refers to the temperature at which irreversible changes occur in the product with a deterioration in its quality, for example, inactivation of vitamins, denaturation or coagulation of proteins. This temperature is different for different types of liquid products.
The technical result of the invention is the high efficiency of the processing method with less energy and improving the quality indicators of the processed product.
In the proposed method, in contrast to analogues, the damaging factor for microorganisms during heat treatment is the rate of change of temperature, i.e. heating and / or cooling rate. Example experimentally proved that the pasteurization rate should be not less than 1400 C / s, and for sterilization of at least 7600 ° C / s. Thus there is no need for heating the product, such as milk, up to 60 ° C. Pasteurisation is carried out efficiently and at lower temperatures, sterilization is achieved by heating the whole at 40 ° C. It is thus possible to increase the processing efficiency, without compromising product quality.
When spraying the product to a droplet diameter of less than 0.3 mm, the process is much more intense, while the product does not acquire a watery taste.
The proposed method requires a little heating of the pasteurized product and therefore is less energy intensive.
The method can be implemented, for example, in a pasteurizer, a diagram of which is shown in the drawing.
7. The pasteurizer contains a spray of the liquid product 1 to be pasteurized, a
The method is as follows.
A liquid product, for example, milk is fed through an atomizer 1 in the form of a stream of fine droplets into the
The proposed method was tested on two experimental pasteurization plants with a capacity of up to 1000 kg / h. Saline, milk, egg melange, and blood plasma were pasteurized. Before pasteurization, all of these liquids were seeded with E. coli bacteria at concentrations up to 10 7 1 / cm 3 . After pasteurization, the number of bacteria in 1 cm 3 was at the limit of sensitivity of the method for their detection (10% of the initial concentration) or bacteria were not detected at all, and complete sterilization took place. For example, when heating fluids at 4000 on C / s, with an initial temperature of 24 ° C to a final temperature of 52 ° C the percentage of killed bacteria was 99% and for heating of liquids with a velocity 7600 ° C / s initial temperature of 24 C. to a final temperature of 60 ° C the percentage of bacteria killed was 100 m. e. there was a complete sterilization. The preparation of Escherichia coli culture and analysis of pasteurization products was carried out by employees of the microbiological laboratory of the Institute of Medical Radiology of the Russian Academy of Sciences. When tested experimental samples pasteurizers been found that for obtaining a pasteurized milk with a bacteria count no more than 50,000 from the starting milk with a bacteria count of 10 6 -10 7 pcs / cm is sufficient heating rate 1400 / s, and for sterilized milk 7600 C. /from. Maximum temperature of sterilization does not exceed 60 ° C, which guarantees the safety of all the positive qualities of natural milk.
д.An important test result is that due to the low temperature and the short duration of exposure, it is possible to pasteurize liquids such as egg melange, which goes into the production of dry egg powder. In conventional processes satisfactory pasteurization melange problematic because the protein coagulates already at 52 C. Positive results were obtained with blood plasma pasteurization. This method can also be used for pasteurization of fruit and vegetable juices, wines, beer, fermented milk products, etc.
Using the invention will ensure effective pasteurization (up to complete sterilization) and preserve the beneficial properties and natural qualities of the initial pasteurized products, i.e. improve their quality. The proposed method also allows the production of high-quality products, for example, dairy, including for baby food, the production of which is currently very limited, in particular, poor-quality pasteurization. This is achieved by applying a new mechanism of exposure to microorganisms of high-speed and short-term heat stroke.
The proposed method is less energy-intensive, allows the use of various sources of heating (industrial water vapor, electric heating, fossil fuels), and also more effectively solve the problem of deposits of milk stone.
