Abstract

Frozen vegetables and fruits are prepared by blanching the goods in a vessel from which air has been excluded in water or water vapour at about 100 DEG C, then cooling the goods in the vessel in the reduced pressure obtained and maintained by condensation of the water vapour present after the blanching process, the cooling action being effected by the evaporation of water from the heated goods under the effect of the reduced pressure, and then subsequently freezing the goods without removing them from the vessel. Air or a gas poor in oxygen which has passed in contact with a freezing element arranged either within or in connection with the vessel may be used as a freezing medium. The goods may be made up into packages which are perforated in the direction of flow of the freezing medium.
