Abstract

Bakers' yeast separated from the wort in which it has grown and retaining at least 75 per cent of moisture, e.g. a suspension containing 40-30 parts of water and 60-70 parts of yeast, is frozen at a temperature below 0 DEG C but not so low as to destroy the cells. The freezing may be undertaken after packaging the yeast suspension. A yeast "snow" may be prepared by spraying the yeast suspension into air or other gas at the temperature below 0 DEG C. The Specification as open to inspection under Sect. 91 comprises also any partial separation of the yeast from the wort, and drying of the yeast, before the cooling, to 15-40 per cent water content. This subject-matter does not appear in the Specification as accepted.
