Abstract

Porous gelatinized rice, easily cooked to a fluffy preparation in which the grains stand apart, is made by cooling gelatinized rice at a temperature sufficiently low and for a period sufficient to freeze the inter-stitial water and the gel-bound water and removing a substantial part of this water by sublimation within a temperature range between that of the frozen gelatinized rice and 32 DEG F. For the preliminary gelatinization, 1 lb. of rice may be steeped in 1-2 gal. of water, and then cooked for 20-45 min. at 170-212 DEG F. The freezing may be at 20 to -30 DEG F.; it may be effected by direct action of an expanding gaseous refrigerant such as carbon dioxide. Sublimation may be effected under pressure reduced to 0,05-4,5 mm. of mercury. The porous product may be further dried at above 32 DEG F.
