Starch products capable of swelling in cold water are made by increasing the particle size to at least twice its original value, in the presence of moisture, by shear action at a linear pressure of 100 to 50,000 kg./cm. and at a temperature below the gelatinization point of the starch. A suitable apparatus is an edge runner mill, with either rotating or stationary tray, the traversing wheels of which may or may not be under extra pressure. A ball mill may also be used at a speed at least twice that used for grinding purposes. The desired particle size can be selected by subsequent grinding and sieving. The swelling capacity of the products can be improved by addition of substances which promote the gelatinization of starch, such as soda ash, caustic soda, or alkali metal nitrates before or during the treatment. Borax may be added to prevent the formation of lumps during dissolution of the starch. The starch products obtained may be subsequently decomposed by enzymatic action.
