Abstract

1,187,766. Sterilizing liquqid foods. UNILEVER Ltd. 6 Dec., 1967 [9 Dec., 1966], No. 55223/66. Heading A2D. In sterilizing liquid foods (e.g. milk, cream, soups, fruits or tomato juices and slurries containing meat, vegetable or fruit solids) the liquid is formed into at least one stream and the stream is heated to at least 100‹C. (e.g. by microwave radiation or alternating electric current) while it is free from contact with a solid surface and then cooled by mixing it with a cool steril liquid while maintaining it free from contact with a solid surface (e.g. by impinging the stream with jets of precooled sterile liquid or my passing the stream into a container of pre-cooled sterile liquid). The process may be carried out at superatmospheric pressure. In the apparatus shown, which is sterilized by passing live steam from pipe 52 through it and is pressurized with oxygen-free nitrogen provided by gas cylinder 53, a stream of liquid supplied under pressure through pipe 42 is heated by microwave radiation as it is passed through radiation transmittent ceramic tube 18 without contact therewith, passed through limb 26 of housing 25 to chamber 33 where it is cooled by being mixed with precooled sterile liquid from inlet tubes 35 and passed to reservoir 37 from which some cooled liquid may be passed through refrigeration unit 49 to inlet tubes 35. Initially the stream is deflected by pivotal scoop 28 through limb 27 of housing 28 till the desired temperature is registered by thermo-couple 31 which is then removed from housing 25 and the scoop 28 is deflected to allow the stream to pass through limb 26. The power of the radiation produced by energized magnetron 56 and passed along wave guide 14 is matched to the load of the stream by adjusting pistons 20, 21 and 22.
