Abstract

Enzima degradante del ramnogalacturonano II (RG-II), presentando una actividad endo-ß-L-ramnopiranosil-(1->3)-D-apiofuranosil hidrolasa y/o unaactividad endo-alfa-L-fucopiranosil-(1->4)-L-ramnopiranosil hidrolasa. Esta enzima puedeproduci rse por un microorganismo, en particular del tipoPenicillium, como las cepas I-1577 y I-1578, depositadas en la CNCM. EL RG-II puede obtenerse a partir de extractos de origen vegetal, mediante unprocedimiento que comprende unacromatografía.
