Abstract

Opisan je postopek za pripravo visokokoncentriranih sadnih arom iz kondenziranih sadnih hlopov, pri katerem a) skoncentriramo po samih po sebi znanih metodah sadne arome v sadnih hlapih do vsebnosti 0,05 do 1 mas.%, b) koncentrat iz stopnje a) ekstrahiramo s komprimiranim ogljikovim dioksidom pri 60 do 180 barih in 10 do 50В°C kot tudi c) po dekomprimiranju ogljikovega dioksida in v danem primeru po dodatku vode ločimo z aromo bogato oljnato fazo od z aromo revnejše vodne faze. Na ta način lahko pripravimo iz zelo nizko koncentriranih kondenzatov sadnih hlapov visokokoncentrirano sadno aromo z relativno nizko vsebnostjo vode oz. etanola, ki ima dobro obstojnost pri hranjenju in dobre senzorske lastnosti.
