Description
本発明は、パン、パン用ミックス粉及びパンの製造方法に関する。
健康に毎日を過ごすためには食が重要である。例えば、日本では、厚生労働省と農林水産省が共同で策定した「食事バランスガイド」において、1日3食の各食事において、主食の他に、主菜、副菜、汁物を含んだバランスの良い献立にすることにより、必要な栄養素を全て摂取することが推奨されている。そして、この必要な栄養素の基準値として、厚生労働省は、食事摂取基準2020において、エネルギー及び各栄養素の摂取量を定めている(例えば、非特許文献1)。このような必要な栄養素の摂取量基準は、諸外国においても策定されている。
健康を維持するためには、必要な栄養素を食事で摂取することが望ましいことから、例えば、栄養素の種類と含有量が高いパンが提案されている(例えば、特許文献1)。このようなパンでは、献立を考えなくても必要な栄養素を効率的に摂取でき、かつ食事の準備だけでなく食する時間を短縮することができる。

一般的に、パンは経時的な硬さの変化により食感が損なわれる傾向にある。特に、タンパク質の含有量が高いパンは、タンパク質の含有量が少ない、若しくはタンパク質が含まれていないパンよりも経時的な硬化が起こりやすいため、時間が経つことによって柔らかい食感を保つことができず、例えば、噛みにくい、食べにくい、飲み込みにくい、口どけが悪い等の、好ましくない食感になってしまう。
本発明は、経時的に柔らかさを保つ高タンパク質のパンを提供することを目的とする。
上記課題を解決するための本発明の主たる発明は、パンであって、
タンパク質の含有量が11.0質量%以上であり、
食塩の含有量が、前記タンパク質の含有量に対して16.0質量%以下であることとする。
タンパク質の含有量が11.0質量%以上であり、
食塩の含有量が、前記タンパク質の含有量に対して16.0質量%以下であることとする。
その他本願が開示する課題やその解決方法については、発明の実施形態の欄により明らかにされる。
本発明によれば、経時的に柔らかさを保つ高タンパク質のパンを提供することができる。更に、本発明の一実施形態によれば、タンパク質の含有量が11.0質量%以上であり、かつ食塩の含有量をタンパク質の含有量に対して16.0質量%以下に減らしたパンにおいて、経時的に柔らかさを保ちつつ、食塩を減らしたことに起因するパンの異味、甘たるさ、乳脂肪の風味、及び金属臭を改善することができる。
本発明の実施形態の内容を列記して説明する。本発明は、例えば、以下のような構成を備える。

1.パン
本実施形態に係るパンは、タンパク質の含有量が11.0質量%以上であり、食塩の含有量が、前記タンパク質に対して0.1質量%以上16.0質量%以下である。

このようなパンは、例えば、タンパク質と食塩とを含み、食塩の含有量がタンパク質に対して0.1質量%以上16.0質量%以下であるパン用ミックス粉を含有する生地を混合・混錬して得られた生地を加熱することによって得られる。以下に、本実施形態に係るパンに含まれる物質、およびパンに含まれ得る物質について説明する。
本実施形態において、「パン」とは、例えば、「小麦粉又はこれに穀粉類を加えたものを主原料とし、これにイーストを加えたもの、またはこれらに水、食塩、ぶどう等の果実、野菜、卵及びその加工品、砂糖類、食用油脂、乳及び乳製品等を加えたものを練り合わせ(以下「パン生地」または、単に「生地」と呼ぶ。)、発酵させたものを焼いたものであって、水分が10%以上のものを意味するものとする(例えば、農林水産省のパン類品質表示基準)。
本実施形態において、「パン」とは、上記パン用ミックス粉を含む粉類をイースト等の酵母を加えて膨らませて焼いた発酵パンを意味するが、発酵パンだけでなく、ベーキングパウダーや重曹等のガスを発生するふくらし粉により膨らませて焼き、水分が10%以上のものもパンと呼ぶものとする。したがって、本実施形態においては、スコーン、ホットビスケット等のビスケットタイプの硬いパンは含まない。また、本実施形態において、「粉類」は、小麦粉、米粉、豆粉等を含むものであることができる。
1.1.タンパク質
本実施形態に係るパンは、パン中のタンパク質の含有量が11.0質量%以上である高タンパク質パンである。

パン中のタンパク質の含有量は、下限は、11.0質量%であり、12.0質量%、13.0質量%であってもよく、上限は、例えば、25.0質量%、24.0質量%、23.0質量%であり、その範囲は、例えば、11.0~25.0質量%、12.0~24.0質量%、13.0~23.0質量%である。また、パン中のタンパク質の含有量は、8.0質量%、9.0質量%、10.0質量%、11.0質量%、12.0質量%、13.0質量%、14.0質量%、15.0質量%、16.0質量%、17.0質量%、18.0質量%、19.0質量%、20.0質量%、21.0質量%、22.0質量%、23.0質量%で、24.0質量%、25.0質量%であり、これら列挙した数値の何れかを上限または下限として適宜採用してもよい。パン中のタンパク質の含有量をこのような値とすることにより、1日に必要なタンパク質量の少なくとも1/3量、例えば、厚生労働省が定める18才以上の男性の栄養素等表示基準である81gの少なくとも1/3量を1食分のパンに含めることが可能となる。なお、本開示において、パン中のタンパク質の含有量は、パンの総質量を100質量%とした場合のパンに含まれるタンパク質の比率であり、燃焼法全窒素測定装置を用いてパン中の窒素量を定量し、当該窒素量から窒素・タンパク質換算係数を用いて算出される値である。
本実施形態において、タンパク質は、パンの原材料の1つとして含まれる。タンパク質は、原材料として含有する下記の材料、例えば、小麦タンパク、豆類、米類、穀物の糠、小麦粉、卵等に含まれるタンパク質の合計量である。タンパク質の供給源が複数である場合、パンのアミノ酸スコアを高めることができる。タンパク質の含有量の比は特に限定されないが、小麦タンパクの含有量を最も高くすることができる。
小麦タンパクは、グルテン又は麩質とも呼び、穀物の胚乳から生成されるタンパク質の1種であるグルテニンとグリアジンが水を吸収して網目状につながったものである。パンの生地は、グルテンにより独特な粘り気と弾力が生まれ、この生地を発酵させると、酵母が「炭酸ガス」を発生し、生地が膨らむ(例えば、一般社団法人 日本洋菓子協会連合会ウェブサイト、https://gateaux.or.jp/ufaqs/%E3%82%B0%E3%83%AB%E3%83%86%E3%83%B3/)。
小麦タンパクは、吸水性、粘弾性、伸展性・伸長性、結着性、熱凝固性に優れる。このため、パンが小麦タンパクを含むことにより、パンに風味を与え、弾力のある食感をつくる。
小麦タンパクは、その70%以上がタンパク質で構成されている。このため、本実施形態に係るパンが原材料として小麦タンパクを含むと、特にタンパク質の含有量が高いパンとなる。
また、小麦タンパクは、各種のミネラルや食物繊維の含有量が高い。このため、本実施形態に係るパンが小麦タンパクを含むと、タンパク質だけでなく、各種のミネラルや食物繊維の含有量が高いパンを提供することができる。
パン中の小麦タンパクの含有量は、特に制限されず、下限は、例えば、8.0質量%、9.0質量%、10.0質量%であり、上限は、例えば、20.0質量%、19.0質量%、18.0質量%であり、その範囲は、例えば、8.0~20.0質量%、9.0~19.0質量%、10.0~18.0質量%である。また、パン中の小麦タンパクの含有量は、8.0質量%、9.0質量%、10.0質量%、11.0質量%、12.0質量%、13.0質量%、14.0質量%、15.0質量%、16.0質量%、17.0質量%、18.0質量%、19.0質量%、20.0質量%であり、これら列挙した数値の何れかを上限または下限として適宜採用してもよい。
小麦タンパクの含有量が上記範囲内であることにより、パンに必要な弾性等を付与し、吸水性を適当な範囲として、パンの風味や食感を高めることができる。また、後述する小麦粉とは別に生地に加えることにより、例えば、1日に必要なタンパク質量の少なくとも1/3量、例えば、厚生労働省が定める18才以上の男性の栄養素等表示基準である81gの少なくとも1/3量を1食分のパンに含めることが可能となる。さらに、各種のミネラルや食物繊維の含有量が高いパンを提供することができる。なお、小麦タンパクの含有量は、後述する小麦粉に含まれる小麦タンパクを含んだ合計量とすることができる。
1.2.食塩
本実施形態に係るパンは食塩を含み、パン中の食塩の含有量が、パン中に含まれるタンパク質の含有量に対して0.1質量%以上16.0質量%以下である。

食塩は製パンにおいて重要な役割を有する。製パンにおける食塩の役割としては、例えば、製パン性の向上、酵母による過発酵の抑制、貯蔵性の向上等が挙げられる。また、小麦粉を始めとした原材料の旨味や甘味を引き出し、風味を付与する役割もある。その一方で、食塩が多すぎると塩分の摂取過多となり、食塩の摂取を制限している人々にとっては好ましくない場合がある。
本発明者によって、パン中の食塩の含有量を、パン中に含まれるタンパク質の含有量に対して0.1質量%以上16.0質量%以下とすることで、タンパク質の含有量が高いパンにおいて、パンの経時的な硬化が抑制して柔らかい食感を保つことができ、その効果は、例えば、製パンから長時間経つにつれて顕著であることが見いだされた。
上記のように、通常、パンは経時的な硬さの変化により食感が損なわれる傾向にあり、特に、タンパク質の含有量が高いパンは、それ以外のパンよりも経時的な硬化が起こりやすい。これに対し、本実施形態に係るパンでは、パン中の食塩の含有量を、パン中に含まれるタンパク質の含有量に対して0.1質量%以上16.0質量%以下とすることで、時間が経つても柔らかい食感を維持可能となる。
本実施形態に係るパンの食感は、例えば、応力やせん断力で表すことができる。例えば、本実施形態に係るパンの一態様では、作製から2日経過後の応力に関し、下限は、例えば、1.0N、1.5N、2.0Nであり、上限は、例えば、15.0N、14.0N、13.0N、5.0Nであり、その範囲は、例えば、1.0~15.0N、1.5~14.0N、2.0~13.0N、2.0~5.0Nである。応力が前記範囲を満たすことにより、適度な柔らかさで食べやすく、食べ応えが良好になる。また、作製から2日経過後パンの応力は、1.0N、1.5N、2.0N、3.0N、4.0N、5.0N、6.0N、7.0N、8.0N、9.0N、10.0N、11.0N、12.0N、13.0N、14.0N、15.0Nであり、これら列挙した数値の何れかを上限または下限として適宜採用してもよい。
また、例えば、本実施形態に係るパンの一態様では、作製から3週間経過後の応力に関し、下限は、例えば、1.0N、1.5N、2.0N、7.0N、8.0Nであり、上限は、例えば、15.0N、14.0N、13.0Nであり、その範囲は、例えば、1.0~15.0N、1.5~14.0N、2.0~13.0N、7.0~15.0N、8.0~14Nである。応力が前記範囲を満たすことにより、適度な柔らかさで食べやすく、食べ応えが良好になる。また、作製から3週間経過後パンの応力は、1.0N、1.5N、2.0N、3.0N、4.0N、5.0N、6.0N、7.0N、8.0N、9.0N、10.0N、11.0N、12.0N、13.0N、14.0N、15.0Nであり、これら列挙した数値の何れかを上限または下限として適宜採用してもよい。
本開示において、パンの応力の測定条件は次の通りである。パンのクラムを縦3cm、横3cm、高さ1.5cmとなるように切断したものをサンプルとして使用する。レオメーター(テクスチャーアナライザー)を用いて、サンプルを台座中央において、プランジャー(φ20mmアルミ製円柱状)を下降スピード1mm/secで7.5mm押し下げ、10secホールドする条件で圧縮試験を行い、その際の応力のピークを応力の測定値とする。
パン中の食塩の含有量の上限は、パン中のタンパク質の含有量に対して16.0質量%、15.0質量%、14.0質量%、10.0質量%、5.0質量%、4.0質量%、1.0質量%であり、下限は、例えば、0.1質量%、0.2質量%、0.3質量%であり、その範囲は、例えば、0.1~16.0質量%、0.2~15.0質量%、0.3~14.0質量%、0.3~10.0質量%、0.3~5.0質量%、0.3~4.0質量%、0.3~1.0質量%である。また、パン中の食塩の含有量は、タンパク質の含有量に対して、0.1質量%、0.2質量%、0.3質量%、0.4質量%、8.0質量%、9.0質量%、10.0質量%、11.0質量%、12.0質量%、13.0質量%、14.0質量%、15.0質量%、16.0質量%、17.0質量%、18.0質量%、19.0質量%、20.0質量%であり、これら列挙した数値の何れかを上限または下限として適宜採用してもよい。なお、本開示において、パン中のタンパク質の含有量に対するパン中の食塩の含有量は、パンに含まれるタンパク質の含有量を100質量%とした場合のパンに含まれる食塩の比率である。
食塩の含有量が上記範囲内であることにより、パンの経時的な硬化が抑制して、時間が経っても柔らかい食感を保つことができ、その効果は、特に、タンパク質の含有量が高いパンにおいて、また時間が経つにつれて顕著である。このように、本実施形態に係るパンは、パン中の食塩の含有量が、パン中に含まれるタンパク質の含有量に対して0.1質量部以上16.0質量%以下となるように含まれることで、経時的に柔らかさを保ち、好ましい食感を維持可能となる。また、本実施形態に係るパンは経時的に柔らかさを保つため、例えば、消費期限が一ヵ月程度と長いロングライフのパンに好適に適用可能である。
1.3.グルコン酸
本実施形態に係るパンはグルコン酸を含むことができる。本実施形態に係るパンがグルコン酸を含む場合の好適な例として、食塩に対するグルコン酸の質量比が0.08以上43.2以下であることが挙げられる。また、本実施形態に係るパンがグルコン酸を含む場合の他の好適な例として、食塩とグルコン酸の合計量が、パン中のタンパク質に対して0.4質量%以上19.7質量%以下であるように含まれることが挙げられる。
本実施形態に係るパンはグルコン酸を含むことができる。本実施形態に係るパンがグルコン酸を含む場合の好適な例として、食塩に対するグルコン酸の質量比が0.08以上43.2以下であることが挙げられる。また、本実施形態に係るパンがグルコン酸を含む場合の他の好適な例として、食塩とグルコン酸の合計量が、パン中のタンパク質に対して0.4質量%以上19.7質量%以下であるように含まれることが挙げられる。
パンが食塩を含有することで原材料の旨味や甘味を引き出し、風味豊かな味わい深いパンにするため、食塩の含有量を減らすと、結果としてパンの原材料由来と思われる異味(例えば、糖分解物由来と思われる甘たるさ、乳脂肪の風味、金属臭等)が目立ってくる場合がある。今回、食塩に対するグルコン酸の質量比が0.08以上43.5以下、及び/又は食塩とグルコン酸の合計量がパン中のタンパク質に対して0.4質量%以上19.7質量%以下とすることで、食塩を減らしたことに起因する異味を抑制することが可能となることが見いだされた。
本実施形態に係るパンの異味は、例えば、異味強度で表すことができる。異味強度は、官能評価による以下に示す1~9点の尺度で表すことができる。

本実施形態に係るパンの異味強度の下限は、例えば、1.5、1.8、2.0であり、上限は、例えば、7.0、6.7、6.5、その範囲は、例えば、1.5~7.0、1.8~6.7、2.0~6.5である。また、パンの異味強度は、例えば、1.5、1.8、2.0、3.0、4.0、5.0、6.0、6.5、6.7、7.0であり、これら列挙した数値の何れかを上限または下限として適宜採用してもよい。異味強度が前記範囲である場合には、好ましい風味と食感のパンであると判断することができる。
本実施形態に係るパンにおいて、グルコン酸はグルコン酸カリウムやグルコン酸ナトリウム等のグルコン酸のアルカリ金属塩由来であることができる。例えば、本実施形態に係るパンは、原材料としてグルコン酸カリウムを使用したグルコン酸カリウム由来のグルコン酸を含むことが好ましい。原材料としてグルコン酸カリウムを使用することで、カリウムの供給源となると共に、食塩を減らしたことに起因するパンの異味を抑制することが可能となる。なお、原材料としてのグルコン酸カリウムは、カリウム源である他の原材料の一部又は全部と置き換えることで使用してもよい。
食塩に対するグルコン酸の質量比の下限は、例えば、0.08、0.1、0.2、10.0であり、上限は、例えば、21.8、43.2、43.5、44.0であり、その範囲は、例えば、0.08~43.5、又は0.08~43.2である。とりわけ、食塩に対するグルコン酸の質量比が0.2~43.5又は0.2~43.2、特に10.0~43.5又は10.0~43.2を満たす場合には、食塩の含有量を減らすことに起因する異味を格段効果的に抑制することが可能になる。また、食塩に対するグルコン酸の質量比は、例えば、0.05、0.07、0.08、0.1、0.2、0.5、1.0、1.5、2.0、3.0、4.0、5.0、6.0、7.0、8.0、9.0、10.0、11.0、12.0、13.0、14.0、15.0、16.0、17.0、18.0、19.0、20.0、21.0、22.0、23.0、24.0、25.0、26.0、27.0、28.0、29.0、30.0、31.0、32.0、33.0、34.0、35.0、36.0、37.0、38.0、39.0、40.0、41.0、42.0、10.9、21.8、43.0、43.2、43.5、44.0であり、これら列挙した数値の何れかを上限または下限として適宜採用してもよい。なお、本開示において、食塩に対するグルコン酸の質量比は、パンに含まれる食塩の含有量を1とした場合のパンに含まれるグルコン酸の含有量の比率である。また、グルコン酸の原料としてグルコン酸のアルカリ金属塩を使用している場合には、食塩に対するグルコン酸の質量比は、パンに含まれるグルコン酸のアルカリ金属塩の含有量からアルカリ金属塩の含有量分を除いた値である。例えば、グルコン酸カリウムの含有量を1とする場合、グルコン酸の含有量に換算した値は0.833である。

グルコン酸又はグルコン酸カリウムの含有量が上記範囲内であることにより、食塩を減らしたことに起因するパンの異味を抑制することが可能となる。これにより、食塩を減らしたことによるパンの経時的な硬化が抑制され、時間が経っても柔らかい食感が維持されると共に、異味が抑制されるパンを提供することが可能となる。
1.4.小麦粉
本実施形態に係るパンは、原材料として小麦粉を含むことができる。小麦粉は、一般的にパン生地の主原材料となる原材料であり、炭水化物を多く含む。このため、パン生地が小麦粉を含むことで、エネルギーの供給源となる、主食となるパンの提供が可能となる。

小麦粉は、タンパク質として上述の小麦タンパクを6~15質量%程度含むが、ビタミンやミネラルの含有量は多くはない。そこで、本明細書に記載の各原材料と組み合わせて製パンすることで、糖質の含有量を適量とすると共に、栄養素の種類と含有量が高いパンを提供することができる。ここで、糖質とは、炭水化物から食物繊維を除いたものである。
本実施形態において、小麦粉は、精白した小麦粉であっても良いし、全粒粉であっても良い。全粒粉は上記の小麦ふすま等を上記の糠として含むものであり、その割合は15質量%程度である。このため、小麦粉として全粒粉を用いることにより、本実施形態に係るパンにビタミンやミネラル、脂質、タンパク質、食物繊維を補うことができる。また、全粒粉は、上記の小麦タンパクを10~13質量%程度含む。
本実施形態において、小麦粉として硬質小麦と軟質小麦のいずれを用いても良く、薄力粉、中力粉または強力粉のいずれを用いても良い。この中でもパンの食感を良くするためには、小麦粉として強力粉を用いることが好ましい。
パン生地中の小麦粉の含有量の下限は、例えば、10.0質量%、11.0質量%、12.0質量%であり、上限は、例えば、46.3質量%、25.0質量%、24.0質量%、23.0質量%であり、その範囲は、例えば、10.0~46.3質量%、10.0~25.0質量%、11.0~24.0質量%、12.0~23.0質量%である。また、パン生地中の小麦粉の含有量は、例えば、10.0質量%、11.0質量%、12.0質量%、13.0質量%、14.0質量%、15.0質量%、16.0質量%、17.0質量%、18.0質量%、19.0質量%、20.0質量%、21.0質量%、22.0質量%、23.0質量%、24.0質量%、25.0質量%、46.3質量%であり、これら列挙した数値の何れかを上限または下限として適宜採用してもよい。小麦粉の含有量が上記範囲内であることにより、パンに炭水化物を供給できるとともに、パンの風味を高めることができる。本開示において、パン生地中の小麦粉の含有量は、本実施形態に係るパンの製造に使用されるパン生地を100質量%とした場合のパン生地に含まれる小麦粉の含有量の比率である。
1.5.豆類
本実施形態に係るパンは、原材料として豆類の粉を含むことができる。パン生地中の豆類の粉の含有量の下限は、例えば、3.0質量%、4.0質量%、5.0質量%であり、上限は、例えば、16.0質量%、15.0質量%、14.0質量%であり、その範囲は、例えば、3.0~16.0質量%、4.0~15.0質量%、5.0~14.0質量%である。また、パン生地中の豆類の粉の含有量は、例えば、3.0質量%、4.0質量%、5.0質量%、6.0質量%、7.0質量%、8.0量%、9.0質量%、10.0質量%、11.0質量%、12.0質量%、13.0質量%、14.0質量%、15.0質量%、16.0質量%であり、これら列挙した数値の何れかを上限または下限として適宜採用してもよい。豆類としては、用途によって適宜選択できるが、タンパク質や食物繊維の供給源としては大豆が好ましく、食感の改善のためにはエンドウが好ましい。本開示において、パン生地中の豆類の粉の含有量は、本実施形態に係るパンの製造に使用されるパン生地を100質量部とした場合のパン生地に含まれる豆類の粉の含有量の比率である。

大豆は、タンパク質と脂質を豊富に含み、豆類の中でもタンパク質の含有量が最も高い。このため、パンが、例えば、生地中に大豆を5.0質量%以上10.0質量%以下含むことにより、特にタンパク質と脂質の含有量が高いだけでなく、各種のミネラルや食物繊維の含有量が高く、風味と食感の高いパンを提供することができる。
1.6.穀物の糠
本実施形態に係るパンは、原材料として穀物の糠を含むことができる。パン生地中の穀物の糠の含有量の下限は、例えば、1.0質量%、2.0質量%、3.0質量%であり、上限は、例えば、10.0質量%、9.0質量%、8.0質量%であり、その範囲は、例えば、1.0~10.0質量%、2.0~9.0質量%、3.0~8.0質量%である。また、パン生地中の穀物の糠の含有量は、例えば、1.0質量%、2.0質量%、3.0質量%、4.0質量%、5.0質量%、6.0質量%、7.0質量%、8.0量%、9.0質量%、10.0質量%であり、これら列挙した数値の何れかを上限または下限として適宜採用してもよい。このような範囲で生地が穀物の糠を含むことにより、パンに、脂質や食物繊維、その他の栄養素を補い、さらにはパンの風味と食感を高めることができる。なお、糠の含有量は、例えば、小麦粉が全粒粉の場合には、その全粒粉に含まれる糠部分として小麦ふすまを含んだ合計量とすることができる。本開示において、パン生地中の穀物の糠の含有量は、本実施形態に係るパンの製造に使用されるパン生地を100質量%とした場合のパン生地に含まれる小穀物の糠の含有量の比率である。

糠は、穀物を精白した際に出る果皮、種皮等の部分を指す。例えば、米、もち米の場合には、種子から籾殻を除いた玄米の主に胚芽、外胚乳、糊粉層を含むものとし、小麦、ライ麦等の麦類の場合には、果皮、種皮の表皮部分を含むものとする。
穀物の糠は、精白した穀物にはほとんど含まれないような栄養素を豊富に含む。このため、パンが穀物の糠を含むことにより、種々の栄養素を補ったり、さらには糠特有の成分により、パンに風味と食感を付与することができる。
穀物の糠の原料となる穀物としては、例えば、小麦、米、トウモロコシ、大麦、燕麦、ライ麦、ハト麦、モロコシ、アワ、キビ、ヒエ、ソバ、コウリャン、ライ小麦、ブルグル、キヌア、アマランサス等が挙げられる。大麦はもち麦であっても良い。これらの穀物の糠は、1種単独で用いてもよく、2種以上を組み合わせて用いても良い。
米糠を得るための米の種類は限定されず、例えば、水稲、陸稲、もち米、赤米、黒米、緑米等を含む。これらは、パンに所望の特性を付与するために適宜選択することができる。
穀物の糠の中でも、小麦、ライ麦、米の糠が好ましい。すなわち、穀物の糠として、小麦ふすま、ライ麦糠、米糠を用いることが好ましい。糠は穀物の精白の過程において廃棄されることが多いため、特に、小麦、ライ麦、米の糠は入手しやすい。このため、栄養豊富な原料を安価に入手可能となる。また、小麦、ライ麦、米の糠は、各種栄養素の種類と含有量、風味等の点からも好ましい。
1.7.小麦胚芽
本実施形態に係るパンは、原材料として小麦胚芽を含むことができる。小麦胚芽は、食物繊維や脂質、タンパク質、各種ビタミンやミネラルの供給源となる他、パンに風味や食感を付与する。

パン生地中の小麦胚芽の含有量の下限は、例えば、0.5質量%、1.0質量%、1.5質量%であり、上限は、例えば、5.0質量%、4.5質量%、4.0質量%であり、その範囲は、例えば、0.5~5.0質量%、1.0~4.5質量%、1.5~4.0質量%である。また、パン生地中の小麦胚芽の含有量は、例えば、0.5質量%、1.0質量%、1.5質量%、2.0質量%、2.5質量%、3.0質量%、3.5質量%、4.0質量%、4.5質量%、5.0質量%であり、これら列挙した数値の何れかを上限または下限として適宜採用してもよい。このような範囲で生地が小麦胚芽を含むことにより、パンに脂質や食物繊維、その他の栄養素を補い、さらにはパンの風味と食感を高めることができる。本開示において、パン生地中の小麦胚芽の含有量は、本実施形態に係るパンの製造に使用されるパン生地を100質量%とした場合のパン生地に含まれる小麦胚芽の含有量の比率である。
1.8.卵
本実施形態に係るパンは、原材料として卵を含むことができる。卵はタンパク質と脂質に富む他、使用することで風味や食感に優れたパンが得られる。また、卵黄中の卵黄リポタンパク質であるレシチンにより、各原材料を均一に混合して生地を安定化したり、生地の保水性を高めることが可能となり、より風味と食感に優れたパンとすることができる。

1.9.海藻
本実施形態に係るパンは、原材料として海藻を含むことができる。海藻は、水溶性食物繊維であるアルギン酸とフコイダンを豊富に含むため、パンに食物繊維を補う。また、パンが豊富に食物繊維を含むと、パンの腹持ちが良くなる他、パンの水分をゲル化する性質を有し、生地の保水力を高める。
本実施形態に係るパンは、原材料として海藻を含むことができる。海藻は、水溶性食物繊維であるアルギン酸とフコイダンを豊富に含むため、パンに食物繊維を補う。また、パンが豊富に食物繊維を含むと、パンの腹持ちが良くなる他、パンの水分をゲル化する性質を有し、生地の保水力を高める。
また、海藻は、カルシウムやヨウ素等のミネラルを豊富に含むため、パンにミネラルを補うことができる。さらに、海藻はうまみ成分であるグルタミン酸を豊富に含むため、パンが海藻を含むことで、パンの風味が高まる。
海藻としては、例えば、昆布、テングサ、オゴノリ、ワカメ、モズク等が挙げられる。これらは、1種単独で用いてもよく、2種以上を組み合わせて用いても良い。これらの中でも、海藻は昆布であることが好ましく、パンに食物繊維を補う他、パンに所望の風味や食感を付与することができる。
1.10.種実
本実施形態に係るパンは、原材料として種実を含むことができる。種実は、堅い皮や殻に包まれた食用の果実・種子の総称であり、堅果とも呼ばれる。種実は、タンパク質や脂質を豊富に含み、相対的に炭水化物量が低い。また、種実は、食物繊維や各種ビタミンやミネラルを豊富に含む。このため、パンが種実を含むことにより、パンに各栄養素を補い、さらには各種実特有の成分により、パンに風味と食感を付与することができる。
本実施形態に係るパンは、原材料として種実を含むことができる。種実は、堅い皮や殻に包まれた食用の果実・種子の総称であり、堅果とも呼ばれる。種実は、タンパク質や脂質を豊富に含み、相対的に炭水化物量が低い。また、種実は、食物繊維や各種ビタミンやミネラルを豊富に含む。このため、パンが種実を含むことにより、パンに各栄養素を補い、さらには各種実特有の成分により、パンに風味と食感を付与することができる。
種実としては、例えば、アーモンド、カシューナッツ、ペカンナッツ、ブラジルナッツ、マカダミアナッツ、ピスタチオ、ヘーゼルナッツ、ココナッツ、松の実、ヒマワリの種、カボチャの種、スイカの種、シイ、クルミ、ゴマ、アマニ、麻の実(ヘンプ)、エゴマ、ケシ、トチ、ハス、松の実、落花生、カカオ等が挙げられる。これらは、1種単独で用いてもよく、2種以上を組み合わせて用いても良い。
1.11.酵母
本実施形態に係るパンは、原材料として酵母を含むことができる。酵母は、生地を発酵させてふっくらと膨らませるだけでなく、ビタミンB群をはじめとする各種ビタミン、ミネラル、アミノ酸、核酸、食物繊維等の供給源となる。また、生地に酵母を含むことにより、パンの風味が増す。

酵母としては、例えば、パン酵母(サッカロミセス・セルヴィシエ菌、いわゆるイースト。)やビール酵母、等が挙げられる。中でも、本実施形態において、生地はパンを膨らませる他、ビタミンB群等の供給源の目的でパン酵母を含み、さらに、所望の性質にあわせて他の酵母を併用することができる。
パン酵母は、イースト、野生酵母、天然酵母のいずれであっても良い。イーストは、ドライイーストやインスタントドライイーストであっても良く、生イーストであっても良い。これらは、1種単独で用いてもよく、2種以上を組み合わせて用いても良い。
1.12.グルコマンナンを含む食品
本実施形態に係るパンは、原材料としてグルコマンナンを含む食品を含むことができる。グルコマンナンは針葉樹の細胞壁や蒟蒻芋に多く含まれる水溶性食物繊維であり、パンの食物繊維の供給源となる。また、パンの生地の乳化安定性、冷凍耐性、離水低減等の機能の付与も期待できると共に、パンの風味や食感を高めることができる。グルコマンナンを含む食品としては、例えば、チアシード、コンニャク粉等が挙げられる。

本実施形態に係るパンは、原材料として油脂を含むことができる。油脂は、パンの味にコクを出して風味を出したり、食感をソフトにする。また、パン生地を成形して焼成する際に、生地の窯伸びが良くなってパンのボリュームがアップし、焼き上がりがふっくらさせる。さらに、パン生地の水分を閉じ込め、乾燥を防き、老化を遅くする機能を有する。

油脂としては、バター、動物脂、または植物油が挙げられる。バターは有塩バターであっても食塩不使用バターであっても良く、発酵バターであっても良い。動物脂としては、牛脂、ラード等が挙げられる。植物油としては、アマニ油、エゴマ油、オリーブ油、ゴマ油、米糠油、サフラワー油、大豆油、調合油、トウモロコシ油、ナタネ油、パーム油、パーム核油、ヒマワリ油、ブドウ油、綿実油、ヤシ油、落花生油が挙げられる。その他、マーガリン、ショートニングであっても良い。これらの中でも、特に風味に優れ、ビタミンAを含む点により、バターを使用することができる。
パン生地中の油脂の含有量の下限は、例えば、0.5質量%、1.0質量%、1.5質量%、2.48質量%であり、上限は、例えば、7.80質量%、5.0質量%、4.5質量%、4.0質量%であり、その範囲は、例えば、0.5~5.0質量%、1.0~4.5質量%、1.5~4.0質量%である。また、パン生地中の油脂の含有量は、0.5質量%、1.0質量%、1.5質量%、2.0質量%、2.5質量%、3.0質量%、3.5質量%、4.0質量%、4.5質量%、5.0質量%、7.80質量%であり、これら列挙した数値の何れかを上限または下限として適宜採用してもよい。このような範囲で生地が油脂を含むことにより、パンの風味や食感を高めることができる。
1.14.その他の原材料
本実施形態に係るパンは、原材料として上記に挙げた原材料以外の成分を含んでも良い。その他の原材料としては、特に制限されないが、例えば、従来公知のパン生地に用いられる原材料や、食品にビタミンやミネラル等を付与したり、風味や食感を付与する原材料が挙げられる。例えば、麦芽、麦芽糖、米粉、もち米粉、イモ類、野菜、デンプン、砂糖等の糖類、にがり、乳製品、ゼラチン、茶葉、酒精、等が挙げられる。また、いわゆるスーパーフードを含んでも良い。また、パンが発酵パンではない場合、ふくらし粉としてベーキングパウダーや重曹を含むことができる。
本実施形態に係るパンは、原材料として上記に挙げた原材料以外の成分を含んでも良い。その他の原材料としては、特に制限されないが、例えば、従来公知のパン生地に用いられる原材料や、食品にビタミンやミネラル等を付与したり、風味や食感を付与する原材料が挙げられる。例えば、麦芽、麦芽糖、米粉、もち米粉、イモ類、野菜、デンプン、砂糖等の糖類、にがり、乳製品、ゼラチン、茶葉、酒精、等が挙げられる。また、いわゆるスーパーフードを含んでも良い。また、パンが発酵パンではない場合、ふくらし粉としてベーキングパウダーや重曹を含むことができる。
米粉は玄米粉であっても良く、玄米粉は発芽玄米粉であっても良い。イモ類は、ジャガイモ、サトイモ、サツマイモ、ヤーコン、キクイモ等が挙げられる。野菜は、炭水化物量が多いカボチャ、レンコン、ニンジン等が挙げられる。デンプンは、片栗粉、キャッサバデンプン等が挙げられる。糖類は、白糖、黒砂糖、和三盆糖、三温糖、加工糖、液糖、粉あめ、水あめ、ブドウ糖、果糖、異性化液糖、黒蜜、ハチミツ、メープルシロップ、サトウキビ抽出物、還元水あめ等が挙げられる。塩は、食塩、精製塩、岩塩等が挙げられる。乳製品は、生乳、加工乳、全粉乳、脱脂粉乳、生クリーム、ヨーグルト、チーズ、ホエーパウダー等が挙げられる。これらは、1種単独で用いてもよく、2種以上を組み合わせて用いても良い。
1.15.パンの製造方法
本実施形態に係るパンの製造方法は、タンパク質と、食塩とを含み、前記食塩の含有量が、前記タンパク質の含有量に対して16.0質量%以下である、パン用ミックス粉を含有する生地を加熱する。

すなわち、本実施形態に係るパンは、タンパク質と食塩とを適量含むパン用ミックス粉に、他の原材料を任意の順序で添加して混錬した生地を発酵後に成形し、必要に応じて更に発酵させた後に任意の温度で加熱して焼成することにより得る。加熱は、生地を加熱する加熱手段、例えば、オーブン等の焼き窯を有するパン製造装置を用いて行う。
より具体的には、生地の作製は、油脂以外の原材料を混合した後に、油脂を添加して混合して捏ね上げればよい。また、作成した生地は、必要に応じてフロアタイム(一次発酵)、分割・丸め、必要に応じてベンチタイム、成型、必要に応じてホイロ(二次発酵)の工程を行ったのちに、焼成の工程に供すればよい。焼成の工程ののちは、冷却し、必要に応じて袋詰めを行えばよい。
この方法により、タンパク質の含有量が11.0質量%以上であり、食塩の含有量が、前記タンパク質の含有量に対して16.0質量%以下であり、経時的に柔らかさを保つ高タンパク質のパンを提供することができる。
2.実施例
以下、本発明を実施例および比較例によってさらに具体的に説明するが、本発明はこれらの実施例のみに限定されるものではない。なお、「%」は質量基準である。

2.1.試験1
2.1.1.パンの作製
表1に記載の配合比で原材料を準備し、最終製品が70~75gになるようにロールパンを作製した。具体的には、先ず、バター以外の原料(小麦粉、小麦タンパク、パン酵母、食塩、全卵、水、グルコン酸カリウム)をミキサーへ投入して、低速で4分間、高速で2分間混合した。次いで、バターを添加し、低速で2分間、高速で7分間混合し、生地を作製した。生地を83gに分割し、30~40回転を目安に丸めを手で行い、成形した。成型後の生地を天板に載せ、温度27℃、湿度75%RHで60分間のフロアタイムを取った。その後、温度38℃及び湿度85%RHで、60分間で発酵を行った。次いで、オーブンにて、上火190℃、下火190℃で24分焼成した後に40分間、常温で放冷した。その後、得られたパンを品質保持剤(「ネガモールド」、フロイント産業)と共に包装した。

2.1.2.タンパク質の分析
燃焼法により、パン中のタンパク質を分析した。具体的には、先ず、パンを粉砕機で破砕した。パンの破砕物200~400mgを小数点以下第4位の単位まで正確に量りとり、サンプルとした。燃焼法全窒素測定装置(SUMIGRAPH NC-TRINITY、株式会社住化分析センター)を用いてサンプルを燃焼してサンプル中の窒素を窒素酸化物に変換した。続いて、燃焼法全窒素測定装置にて窒素酸化物を窒素に還元した。同じく、燃焼法全窒素測定装置にて燃焼生成物の中から窒素を分離して、窒素量を定量した。予め0.0001mgの単位まで正確に量りとった検量線作成用標準品を測定して検量線を作成し、検量線からサンプル中の窒素含量(g/100g)を算出した。窒素・タンパク質換算係数として6.25を使用し、窒素含量に6.25を乗じて、タンパク質量を算出した。タンパク質は試験区番号3の最終製品をN=3で測定した。タンパク質の測定結果は、平均13.98g/100gであった。その値を用いて、各パン中のタンパク質に対する食塩、グルコン酸、グルコン酸カリウムの比を算出した。
燃焼法により、パン中のタンパク質を分析した。具体的には、先ず、パンを粉砕機で破砕した。パンの破砕物200~400mgを小数点以下第4位の単位まで正確に量りとり、サンプルとした。燃焼法全窒素測定装置(SUMIGRAPH NC-TRINITY、株式会社住化分析センター)を用いてサンプルを燃焼してサンプル中の窒素を窒素酸化物に変換した。続いて、燃焼法全窒素測定装置にて窒素酸化物を窒素に還元した。同じく、燃焼法全窒素測定装置にて燃焼生成物の中から窒素を分離して、窒素量を定量した。予め0.0001mgの単位まで正確に量りとった検量線作成用標準品を測定して検量線を作成し、検量線からサンプル中の窒素含量(g/100g)を算出した。窒素・タンパク質換算係数として6.25を使用し、窒素含量に6.25を乗じて、タンパク質量を算出した。タンパク質は試験区番号3の最終製品をN=3で測定した。タンパク質の測定結果は、平均13.98g/100gであった。その値を用いて、各パン中のタンパク質に対する食塩、グルコン酸、グルコン酸カリウムの比を算出した。
2.1.3.パンの応力測定
下記の機器、測定方法により、パンを作製してから2日後と3週間後のパンの応力を測定した。パンは常温で保管した。パンの応力測定は、パンのクラムを縦3cm、横3cm、高さ1.5cmとなるように切断したものをサンプルとして使用し、レオメーター(SHIMADZU製テクスチャーアナライザー「EZ-SX」)を用いた圧縮試験にて実施した。具体的条件は次の通りである。サンプルを台座中央において、プランジャー(φ20mmアルミ製円柱状)を下降スピード1mm/secで7.5mm押し下げ、10secホールドし、その際の応力のピークを応力の測定値とした。

2.1.5.結果
表2にタンパク質の含有量に対する食塩の含有量、グルコン酸の含有量、グルコン酸カリウムの含有量の各割合、食塩に対するグルコン酸の質量比、食塩とグルコン酸の含有量の合計、応力測定結果、及び異味の強度を示す。また、図1に応力の測定結果を示したグラフを、図2に異味強度を示したグラフを示す。
表2にタンパク質の含有量に対する食塩の含有量、グルコン酸の含有量、グルコン酸カリウムの含有量の各割合、食塩に対するグルコン酸の質量比、食塩とグルコン酸の含有量の合計、応力測定結果、及び異味の強度を示す。また、図1に応力の測定結果を示したグラフを、図2に異味強度を示したグラフを示す。
表2及び図1に示すように、タンパク質に対する食塩の割合が1.1%である試験区番号1及び2の方が、タンパク質に対する食塩の割合が3.5%である試験区番号3及び4に比べて応力が小さい結果となった。この結果は、パン作製2日経過後よりも3週間経過後において顕著であった。
また、表2及び図2に示すように、タンパク質に対する食塩の割合が3.5%である試験区番号3の異味強度が最も低い値となった。試験区番号3については、「甘味感じない、塩味を感じる、えぐみなく美味しく食べられた」といったコメントが見られた。パンの応力が低い試験区番号1では、食塩の量を減らしたことにより異味強度が高くなった。試験区番号1については、「甘さが目立つ、ミルク用の甘さ、やや甘ったるく、コーンか大豆のような風味がたっており違和感あり、好ましくない蒸れた風味を感じる、おいしくない後味、金属味」といったコメントが見られた。これに対し、グルコン酸(グルコン酸カリウム)を含有する試験区番号2については、試験区番号3に比べて異味強度が下がる結果となった。試験区番号2については、「雑味のマスクはされている、甘味はわずか」といったコメントが見られた。このように、パン中の食塩の含有量を減らした場合であっても、パンがグルコン酸(グルコン酸カリウム)を含むことにより、異味強度を低減できることがわかった。
2.2.試験2
食塩を低減した条件でグルコン酸(グルコン酸カリウム)が呈味に及ぼす影響を調べるために、試験2を行った。

試験区番号5~8に示すように、タンパク質に対する食塩の割合が低くなるほど、異味強度が高くなる傾向にあり、特に、甘たるさや乳脂肪の風味についてはその傾向が顕著であった。試験区番号5については、「塩気が強いため、後ギレがよい、硬い、若干塩感がある」といったコメントが見られた。試験区番号6については、「乳感が強く全体的な味の輪郭がマイルド、先味に甘味」といったコメントが見られた。試験区番号7については、「甘味強め、味の輪郭がぼやけているため、後引く甘味や乳感が強い」といったコメントが見られた。試験区番号8については、「甘味が強く味にしまりがない、金属臭を強く感じた」といったコメントが見られた。
試験区番号8の配合にグルコン酸カリウムを添加した試験区番号9~12については、グルコン酸カリウムを増やすほど異味強度が低下したが、試験区番号13については、グルコン酸カリウム量を増やしたことにより、異味強度が増す結果となった。甘たるさについては、グルコン酸カリウムを増やすほど低下した。乳脂肪の風味、金属臭については、試験区番号9~12については、グルコン酸カリウムを増やすほど強度が低下したが、試験区番号13については強度が増す結果となった。
試験区番号9については、「甘たるさを感じるが、試験区番号4に比べてやや弱くなっている」といったコメントが見られた。試験区番号10については、「やや甘さは残るが、マスクされている」といったコメントが見られた。試験区番号11については、「甘ったるさがかなりマスクされている、乳感と後引く甘たるさを感じたが、長くは続かなかった」といったコメントが見られた。試験区番号12については、「甘ったるさがかなりマスクされている、甘くなくなったことで、異味が減った」といったコメントが見られた。試験区番号13については、「自然な味わいに近い、フラットな味になった、カリウム由来の苦味とえぐみが強い」といったコメントが見られた。以上により、食塩の含有量を減らした場合であっても、グルコン酸カリウムを添加したパンは、異味強度を改善できることがわかった。
2.3.試験3
食塩を低減した条件で食塩とグルコン酸(グルコン酸カリウム)の比率が呈味に及ぼす影響を調べるために、試験3を行った。

2.3.1.パンの作製
表5に記載の配合比で原材料を準備し、最終製品が63~65gになるようにロールパンを作製した。具体的には、先ず、バター以外の原料(小麦粉、小麦タンパク、パン酵母、砂糖、食塩、全卵、水、グルコン酸カリウム)をミキサーへ投入して、低速で2分間、高速で5分間混合した。次いで、バターを添加し、低速で2分間、高速で7分間混合し、生地を作製した。その後、温度28℃、湿度75%RHで40分間のフロアタイムを取った。次いで、生地を70gに分割し、30~50回転を目安に丸めを手で行い、成形した。成型後の生地を天板に載せ、温度38℃及び湿度85%RHで、60分間で発酵を行った。次いで、オーブンにて、上火210℃、下火210℃で12分焼成した後に60分間、常温で放冷した。その後、得られたパンを品質保持剤(「ネガモールド」、フロイント産業)と共に包装した。

2.3.5.乳脂肪の風味の測定及び効果

表6に結果を示す。

試験区番号14及び15の対比から分かるように、タンパク質に対する食塩の割合が低くなるほど、異味強度が高くなっていた。甘たるさ、乳脂肪の風味、及び金属臭が現れやすくなった。試験区番号14については、「先味にインパクトがある」といったコメントが見られた。試験区番号15については、「乳チーズ様の脂肪酸臭、油の風味が出ている」、「甘さがあり味にしまりがない」、「異風味が後味に残る」、「金属臭を後味に感じる」等といったコメントが見られた。
試験区番号15の配合にグルコン酸カリウムを添加した試験区番号16~21の内、試験区番号17~200では、異味強度、甘たるさ、乳脂肪の風味、及び金属臭の改善効果が認められた。試験番号16では、グルコン酸カリウムの添加量が少ないため、異味強度、甘たるさ、及び乳脂肪の風味の改善が不十分であった。また、試験番号21では、グルコン酸カリウムの添加量が多すぎたため、異味強度が増し、乳脂肪の風味及び金属臭の改善効果も不十分であった。試験区番号16については、「チーズ臭と甘ったるさもあるため、グルコン酸カリウムのマスキング効果は不十分」「金属臭はやや抑えられている」等といったコメントが見られた。試験区番号17については、「甘ったるさ、脂肪酸臭、金属臭などのオフフレーバー抑えめで味がすっと通る」等といったコメントが見られ、高評価であった。試験区番号18については、「チーズ臭を感じにくい」、「金属臭と甘ったるさが共にかなり抑えめである」等といったコメントが見られ、高評価であった。試験区番号19については、「すっと食べれる」、「異味が少なかった」といったコメントが見られ、高評価であった。試験区番号20については、「ややえぐみが生じる」、「オフフレーバーは少ないが塩味が出る」等といったコメントが見られ、比較的高い評価であった。試験区番号21については、「えぐみ、苦味、グリス様の油臭を感じ、異なる異風味が出るため、グルコン酸カリウムの濃度としては不適当」、「ややえぐみが生じる」等といったコメントが見られた。
即ち、これらの結果から、タンパク質の含有量が11.0質量%以上であり、かつ食塩の含有量がタンパク質の含有量に対して16.0質量%以下であるパンにおいて、食塩に対するグルコン酸の質量比が、0.08以上43.5以下、特に10.0以上43.5以下の範囲を満たす場合には、異味強度の改善効果が格段顕著に奏され得ることが分かった。
以上により、本実施形態に係るパンによれば、食塩の低減により、経時的に柔らかさを保つ高タンパク質のパンを提供することができた。また、食塩を低減したことに起因する異味については、原材料としてグルコン酸カリウムを適量添加したことにより、低減することができた。
以上、本実施形態について説明したが、上記実施形態は本発明の理解を容易にするためのものであり、本発明を限定して解釈するためのものではない。本発明は、その趣旨を逸脱することなく、変更、改良され得ると共に、本発明にはその等価物も含まれる。
例えば、上記実施例においては、生地にイースト等の酵母を加えた発酵パンを例として挙げたが、本発明はベーキングパウダーや重曹等のガスを発生するふくらし粉により膨らませて焼いた発酵パン以外のパンも本発明の範囲に含まれる。すなわち、本発明において特徴的な原材料の配合の生地を用いていれば、生地を膨らませて焼く工程がどのようなものであっても本発明の範囲に含まれる。
Claims (11)
- タンパク質の含有量が11.0質量%以上であり、
食塩の含有量が、前記タンパク質の含有量に対して0.1質量%以上16.0質量%以下である、パン。 - さらにグルコン酸を含み、
前記食塩に対するグルコン酸の質量比が、0.08以上43.5以下である、請求項1に記載のパン。 - 前記食塩と前記グルコン酸の含有量の合計量が、前記タンパク質の含有量に対して0.4質量%以上19.7質量%以下である、請求項2に記載のパン。
- 応力が2.0N以上13.0N以下である、請求項1又は2に記載のパン。
- 前記タンパク質は、小麦タンパクである、請求項1又は2に記載のパン。
- タンパク質と、食塩とを含み、
