Claims (16)
- 용기에 충진된 원재료를 F0 값 4 이상의 조건으로 살균하는 단계;상기 살균된 원재료에 살균한 물 또는 살균한 소스를 첨가하는 단계;상기 물 또는 소스가 첨가된 용기를 실링하는 단계; 및상기 실링된 용기를 90 ℃ 내지 125 ℃의 온도로 10분 내지 25분 동안 가열하는 단계;를 포함하는, 즉석밥의 제조방법.
- 청구항 1에 있어서,상기 원재료는 곡류, 두류, 버섯류, 서류, 구근류, 나물류, 과실/종실류, 육류, 어육 및 알류로 이루어진 군으로부터 선택되는 적어도 하나를 포함하는 것인, 즉석밥의 제조방법.
- 청구항 2에 있어서,상기 곡류는 백미, 현미, 보리, 콩, 팥, 조, 밀, 호밀, 피, 메밀, 귀리, 기장, 옥수수 및 수수로 이루어진 군으로부터 선택되는 적어도 하나를 포함하는 것인, 즉석밥의 제조방법.
- 청구항 2에 있어서,상기 버섯류는 새송이버섯, 표고버섯, 느타리버섯, 양송이버섯 및 팽이버섯으로 이루어진 군으로부터 선택되는 적어도 하나를 포함하는 것인, 즉석밥의 제조방법.
- 청구항 2에 있어서,상기 과실/종실류는 대추, 밤, 잣, 건포도 및 호박씨로 이루어진 군으로부터 선택되는 적어도 하나를 포함하는 것인, 즉석밥의 제조방법.
- 청구항 2에 있어서,상기 원재료는 살균 전 원재료 내 미생물 수가 102 cfu/㎖ 내지 108 cfu/㎖인 것인, 즉석밥의 제조방법.
- 청구항 1에 있어서,상기 살균하는 단계는, 가압스팀살균, 진공가압스팀 살균 및 초고온 살균로 이루어진 군으로부터 선택되는 적어도 하나의 방법으로 살균하는 것인, 즉석밥의 제조방법.
- 청구항 1에 있어서,상기 살균하는 단계는 단계는 120 ℃ 내지 140 ℃의 스팀으로 1분 내지 10분 동안 살균하는 것인, 즉석밥의 제조방법.
- 청구항 1에 있어서,상기 살균하는 단계는 140 ℃ 내지 155 ℃의 스팀을 원재료에 3초 내지 10초간 접촉시키는 것을 5회 내지 10회 반복하는 것인, 즉석밥의 제조방법.
- 청구항 1에 있어서,상기 용기에 원재료를 충진하기 전, 상기 원재료를 물에 침지하는 단계를 더 포함하는, 즉석밥의 제조방법.
- 청구항 1에 있어서,상기 살균한 물 또는 살균한 소스를 첨가하는 단계에서, 상기 살균은 물 또는 소스에 130 ℃ 내지 140 ℃의 스팀을 직접 분사하여 6분 내지 8분 동안 살균하는 것인, 즉석밥의 제조방법.
- 청구항 1에 있어서,상기 방법은 취반 단계를 포함하지 않는 것인, 즉석밥의 제조방법.
- 청구항 1에 있어서,상기 방법은 상기 살균하는 단계 이후 실링하는 단계 이전까지, 90 ℃ 이상의 열을 가하지 않는 것인, 즉석밥의 제조방법.
- 청구항 1에 있어서,상기 방법은 상기 살균하는 단계 이후 실링하는 단계 이전까지, 89 ℃ 이하의 온도가 유지되는 것인, 즉석밥의 제조방법.
- 청구항 1에 있어서,상기 가열하는 단계 이후 측정된 원재료 내 미생물 수는 0 cfu/㎖인 것인, 즉석밥의 제조방법.
- 청구항 1 내지 청구항 15 중 어느 한 항에 따른 제조방법으로 제조된 즉석밥.
