- the present invention relates to a method for preparing a snack for companion animals comprising abalone.
- It relates to a method for manufacturing a snack for companion animals, including abalone comprising a.
- step (S1) removing the skin of the abalone and separating the intestines and flesh is a step to obtain.
- Abalone (Haliotis discus hannai), the end of rollover (Holiotis gigantea), blackcurrant abalone (Haliotis discus), Siebold abalone (Haliotis sieboldi ) or pentagram ( Haliotis diversicolor super-texta), more preferably abalone, horse abalone, black abalone or sibold abalone, even more preferably abalone or abalone, even more preferably true abalone. It is abalone, and most preferably, it is abalone inhabited or farmed in Wando-gun and Jindo-gun, Jeollanam-do, Republic of Korea.
- the skin may be removed from the raw abalone, but the raw abalone is boiled in water at 90 to 110° C. for 1 to 2 minutes and then deshelled.
- raw abalone is boiled at the above temperature and time, only the flesh and internal parts of the abalone are cooked, making it easier to remove the skin compared to raw abalone.
- the flesh and intestines of raw abalone or the flesh and intestines of abalone that have only been cooked on the outside are fully cooked through the following step (S2).
- step (S2) it is a step of cooking the intestines and flesh of abalone separated and obtained in step (S1) with high-pressure steam.
- step (S2) is a step of cooking the flesh and intestines of the raw abalone in the step (S1) or the flesh and intestines of the abalone only the outer part is cooked with high pressure steam.
- the process of cooking the flesh and intestines of abalone in step (S2) uses high-pressure steam, wherein the high-pressure steam is 90 to 110 MPa, preferably 95 to 105 MPa, more preferably 100 to 100 MPa under conditions of 100 MPa. Steam at 150° C., preferably at 110 to 140° C., more preferably at 110 to 130° C., even more preferably at 120° C.
- This high-pressure steam not only cooks the flesh and intestines of abalone so that it can be completely ingested in a short time, but also reduces the loss of useful components of abalone and maintains the chewy texture, thereby improving the palatability of abalone.
- the steam is characterized in that the steam generated from water in which the smoking liquid containing the pine needle extract is diluted.
- the smoked liquid refers to a wood vinegar having a smokey taste and fragrance obtained by dry distillation of smoked wood such as oak, walnut, beech, cherry, and chestnut wood. If the smoked liquid is used to smoke the flesh and intestines of abalone, the taste and aroma of the smoke permeates into the flesh and intestines of the abalone, improving the palatability of the abalone.
- the smoking liquid is diluted 100 times to 300 times, preferably 150 times to 250 times, more preferably 180 times to 220 times, even more preferably 200 times in water. If the dilution is less than 100 times the dilution factor, the taste and flavor of smoke is too strongly absorbed in the abalone, reducing the preference, and if it is diluted more than the dilution factor of 300 times, the taste and flavor of the smoke absorbed into the abalone is too weak. decreases.
- the pine needle extract is an extract containing oil in terpenes as a main component.
- the oil in the terpene is a completely different component from the terpene oil, and it has a lot of unsaturated fatty acids and is known to have the effect of lowering cholesterol and promoting blood circulation.
- it has a similar action to vitamin E, so it has peripheral vasodilation and plays a big role in promoting hormone secretion. It is said that eating pine needles does not catch a cold because of the action of terpenes.
- pine needles dissolve wastes in the body and excrete them out of the body, thereby washing away impurities from the body and enhancing stamina, as well as enhancing body functions and structures, and providing immunity to diseases, thereby creating a healthy body.
- Such a pine needle extract can be obtained by treating pine needles with an extraction solvent, and the extract includes an extract of pine needles, a concentrate thereof, a powder thereof, and the like.
- the extraction solvent is (a) water, (b) anhydrous or hydrous lower alcohols having 1-4 carbon atoms (eg, methanol, ethanol, propanol, butanol, n-propanol, iso-propanol and n-butanol, etc.), (c) A mixed solvent of the lower alcohol and water, (d) acetone, (e) ethyl acetate, (f) chloroform, (g) 1,3-butylene glycol, (h) hexane, (i) diethyl ether, or (j) Butyl acetate, and the like.
- the pine needle extract may use a commercially available product, and may be prepared by a method disclosed in Korean Patent Registration No. 0804722 and the like.
- the pine needle extract is 0.2 to 5% by weight, preferably 0.2 to 4% by weight, more preferably 1 to 3% by weight, even more preferably 1.5 to 2.5% by weight, most preferably 2% by weight based on the total weight of the smoked liquid. contained
- the content of the pine needle extract is less than 0.2% by weight, the effect of pine needles cannot be obtained according to the consumption of the final snack, and when the content of the pine needle extract exceeds 5% by weight, the effect of the pine needles according to the consumption of the final snack is not obtained. There is a problem in that the effect does not increase compared to the content and the cost increases.
- the treatment time may vary slightly depending on the conditions of the high-pressure steam, but it is generally performed for 2 to 5 minutes. Specifically, when the high pressure is 110 MPa and the steam temperature is 150 ° C, the flesh and intestines of the abalone are sufficiently cooked even if the treatment is for 2 minutes, and when the high pressure is 100 MPa and the steam temperature is 120 ° C, the abalone is sufficiently cooked for 3 minutes flesh and intestines ripen.
- step (S3) it is a step of drying the intestines and flesh of the cooked abalone of the step (S2).
- the drying in step (S3) may be performed by a conventional method, but is preferably made by low-temperature hot air drying.
- the low temperature is 50 to 60 °C, and dried with hot air for 1 hour to 2 hours.
- step (S4) it is a step of pulverizing the intestines and flesh of the dried abalone of the step (S3) and pulverizing it.
- the pulverization is to pulverize the intestines and flesh of the dried abalone, and may be accomplished by a conventional method.
- the prepared abalone flesh and intestine powder is also referred to as abalone powder for convenience in the present specification.
- step (S5) it is a step of molding the flesh and intestines of the powdered abalone of the step (S4) to a predetermined size.
- the molding of a certain size refers to a size suitable as a companion animal snack, for example, it may be molded to a size of 1 to 2 cm ⁇ 1 to 2 cm ⁇ 0.1 to 0.5 cm in width ⁇ length ⁇ height. However, it is not necessarily limited thereto.
- the snack for companion animals containing abalone prepared in this way has improved storage properties by 1.5 to 2 times compared to dried and sliced abalone after heating only, and companion animal using pine needle extract and abalone The increase in immunity and the preference of companion animals according to the smoke solution increased.

- the meat is provided as a snack to companion animals, and includes, for example, pork, beef, chicken, horse meat, and the like, but is not necessarily limited thereto.
- the pine needle extract and the impregnation solution containing the flesh and intestine powder of abalone in step (S4) contain 0.2 to 5% by weight, preferably 0.2 to 4% by weight, of the pine needle extract and the flesh and intestine powder of abalone, respectively, among the total content, More preferably 1 to 3% by weight, still more preferably 1.5 to 2.5% by weight, and most preferably 2% by weight.
- the impregnating liquid may further include a flavoring agent, a softening agent, etc. in order to improve the quality of the meat, such as taste and aroma.
- a flavoring agent such as taste and aroma
- each of these additional components is preferably added in an amount of 1% by weight or more, preferably 0.1 to 1% by weight in weight% of the total impregnation solution, which is added in an amount exceeding 1% by weight, the taste and aroma of meat This is because the quality of the back may be deteriorated and the preference of companion animals may decrease.
- the aging by immersion is preferably made at a low temperature, preferably 0 to 10 °C for 10 to 24 hours, preferably for 18 to 20 hours.
- a low temperature preferably 0 to 10 °C for 10 to 24 hours, preferably for 18 to 20 hours.
- immersion is performed at a temperature below 0°C, thin ice occurs and a part of the meat is frozen, reducing the quality of the meat, and when immersion is performed at a temperature exceeding 10°C, protein denaturation and external contamination such as microorganisms occur. This can be reduced.
- immersion is performed for less than 10 hours, not only does the meat not mature sufficiently, but also the pine needle extract in the impregnation liquid and the abalone flesh and intestine powder do not permeate into the meat. This is because the quality such as taste and smell of the food may be altered, and the preference of companion animals may decrease.
- the step (S7) is a step of heating or drying the aged meat of the step (S6).
- the heating or drying method in step (S7) may be determined differently depending on the type of final snack provided to the companion animal. For example, when it is desired to provide a fully cooked snack to a companion animal, it is preferable to heat the aged meat in step (S6). For example, when it is desired to provide a soft snack to companion animals, it is preferable to dry only the surface of the aged meat in the step (S6).
- the quality (hardness, etc.) of the aged meat may be differently determined according to the heating temperature and time, the drying temperature and time, and the like.
- the present invention is for companion animals including abalone, which does not go through steps (S6) and (S7) after step (S5) or further comprises the following steps after step (S7)
- a method for preparing snacks is provided.
- step (S9) attaching one or more powders selected from the group consisting of abalone skin powder and vegetable powder to the surface to which the edible adhesive of step (S8) is applied;
