一种河鱼无水保鲜方法,(1)将河塘养殖的鱼从河塘捞出后,放入2%乙醇水溶液中40分钟;乙醇水溶液的重量为鱼重量的90倍;(2)将经步骤(1)处理的鱼,用胶带纸将鱼眼封住,随即放入-15℃冰库中速冻40分钟;(3)经经步骤(2)处理的鱼放入-18℃的冷冻设备中保存备用;(4)烹饪前,掀开封在鱼眼上的纸,并将鱼放入15~20℃温水盆中半小时,鱼苏醒。所述方法保活时间长,保活时间15天以上,而且成本低、运输方便。

本发明涉及一种河鱼保鲜方法。
背景技术
河鱼是人们食用的美味佳肴,但人们对食用鱼要求较高,长期以来,河鱼的长时间保鲜是个研究课题。
技术问题
本发明的目的在于提供一种保鲜时间长,成本低的河鱼保鲜方法。
技术解决方案
一种河鱼无水保鲜方法,其特征是:包括下列步骤:
(1)将河塘养殖的鱼从河塘捞出后,放入2%乙醇水溶液中40分钟;乙醇水溶液的重量为鱼重量的90倍;
(2)将经步骤(1)处理的鱼,用胶带纸将鱼眼封住,随即放入-15℃冰库中速冻40分钟;
(3)经经步骤(2)处理的鱼放入-18℃的冷冻设备中保存备用;
(4)烹饪前,掀开封在鱼眼上的纸,并将鱼放入15~20℃温水盆中半小时,鱼苏醒。
有益效果
本发明保活时间长,保活时间15天以上,而且成本低、运输方便。
