  • Each heater 44, 66 comprises two heat conductors 64, 65, and 67, 68, respectively, which extend parallel to each other and which in the internal end within the housing 33 are connected with each other by a U-type connection.
  • the secondary steam generator 34 comprises a heater 46 having two heat conductors 70, 71 that enter into the housing 35 from an axial end thereof.
  • the two heat conductors 70, 71 at an internal end are connected with each other in a U-type connection.
  • the two heaters 44, 66 are each configured as cartridge heaters, each comprising two heat conductor 64, 65, and 67, 68, respectively leading in and leading out.
  • the two cartridge heaters 44, 66 are arranged at the bottom of the housing 33 parallel to each other.
  • the water feed line 48 being configured as a water pipe extending above the metal bars 74 and having a plurality of outlet openings 78 that allow to spray water directly onto the metal bars 74.
  • the metal bars 74 are heated by the heaters 44, 66 up to a temperature considerably beyond 100°C, for instance up to a temperature of about 300°C to 400°C. If a sudden steam generation is desired, water is fed via the respective control valve 52 into the water feed line 48 or water pipe and is sprayed via the water outlet openings 78 onto the heated metal bars 74. This leads to an almost instantaneous steam generation at a high rate. It allows for preparing crusty bakery products.
  • the design of the secondary steam generator 34 can be seen in more detail from Figs. 4 and 5.
  • the secondary steam generator 34 is located on top of the primary steam generator 32, however has a smaller square cross section than has the primary heat generator 32 and is located somewhat offset in lateral direction.
  • the secondary steam generator 34 also comprises a closed housing 35 that is connected with the closed housing 33 of the primary steam generator 32.
  • a metal plate 76 in this case being configured as a rectangular water receptacle having a bottom and four walls extending upwardly therefrom.
  • the two heat conductors 70, 71 extend that at the end of the water receptacle 76 are connected with each other in a U-shape.
  • the water feed line 50 within the closed housing 35 extends from an axial end thereof as a short stud ending shortly behind the beginning of the water receptacle 76 (see Fig. 4) .
  • the water receptacle 76 is configured with a small decline towards the end opposite the water feed line 50 so that water output from the water feed line 50 is dispersed on the bottom of the water receptacle 76 almost evenly. If water is fed through the water feed line 50 into the water receptacle 76 when the respective control valve 54 is opened, the water evaporates upon contact with the water receptacle 76 and the generated steam is guided into the steam duct 36 through the respective steam opening 39 as shown in Fig. 4. Steam generated by the primary steam generator is guided into the common steam duct 36 via an opening 41 at the top of the housing 33 of the primary steam generator 32.
  • the steam generator 30 may comprise an overheating pro-tection comprising a sensor, as common in the art (not shown) .
  • the primary steam generator 32 and the secondary steam generator 34 having a common housing 33, 35.
  • the housing 33, 35 comprises a water drainage opening 80 leading from the axial end of the housing 35 of the secondary steam generator 34 through the bottom thereof into the housing 33 of the primary steam generator 32.
  • a common water drain 72 configured as a pipe leading to the outside and being configured for removing excess water into an associated line connected thereto.
  • the design of the apparatus 10 described above with reference to Figs. 1 to 6 describe a steam generator 30 with a primary steam generator 32 configured as splash-on-material steam generator in combination with a secondary steam generator 34 configured as a splash-on-heater steam generator.
  • the primary steam generator 32 is configured for generating steam quickly with high power to allow the preparation of crusty bakery products.
  • the secondary steam generator 34 of the splash-on-heater type allows to generate steam in a continuous or almost continuous way, however at a considerably lower volume per time unit than possible with the primary steam generator 32. So the secondary steam generator 34 is configured for making soft bakery products of the Asian style, while the primary steam generator 32 is configured for making crusty bakery products of the European style.
  • the combination of the primary and secondary steam generators 32, 34 may be varied in several ways, as explained in the following with respect to Figs. 7 to 9.
  • the steam generator 30a comprises a primary steam generator 32 and a secondary steam generator 34 which are both of the splash-on-material type.
  • the secondary steam generator 34 may be configured smaller than the primary steam gener-ator 32, since less steam generation per time unit is required than shall be possible by the primary steam generator 32.
  • the primary steam generator 32 may be controlled by the control valve 52 in a burst mode, i.e. with short admission of a high water quantity, so as to effect a quick generation of a relatively large amount of steam, as needed for making European style bakery products.
  • the secondary steam generator 34 may be controlled in a pulsed mode, i.e. supplying relatively small amounts of water repeatedly over a longer time. This allows a continuous or almost continuous evaporation of a smaller amount of water over time. Thus this mode is suitable for generating a relatively moist atmosphere over a relatively long time period, suitable for making soft bakery products according to the Asian style.
  • Fig. 8 a steam generator according another different design is depicted in total with 30b.
  • the steam generator 30b comprises a primary steam generator 32 that together with a secondary steam generator 34 is combined within a common housing 33.
  • the primary steam generator 32 is of the splash-on-material type as described above with reference to Fig. 5.
  • Within the common housing 33 there is a separate compartment 81 separated from the rest of the housing 35 by a plate 83.
  • Within the separate compartment 81 at the bottom there is a separate or dedicated heater 82.
  • the secondary steam generator 34 allows to produce steam by spraying small amounts of water directly onto the heater 82, thereby allowing a generation of small amounts of steam, but in continuous or almost continuous way, but independently from the steam generated by the primary steam generator 32 within the other (left) part of the housing 33.
  • Fig. 9 shows a different steam generator depicted in total with reference numeral 30c. Only the secondary steam generator 34 is shown.
  • the secondary steam generator 34 is of the boiler type having a closed housing 35 within which a water reservoir 90 is contained.
  • the water reservoir 90 is directly heated by two heaters 44, 66.
  • a water feed line 50 leads into the water reservoir 90.
  • the primary or secondary heater must not necessarily be configured as external heaters but may also be contained within the oven 12.
  • the secondary steam generator may be formed by one or more heaters directly contained within the oven chamber 14 or within a hollow space connected therewith. Water may be fed directly onto the heaters or onto a metal plate arranged in the vicinity thereof.

Abstract

La présente invention concerne un appareil de cuisson de produits de boulangerie qui inclut un four (12) comprenant : une chambre de four (14) dotée d'une ouverture d'accès (16) permettant d'insérer ou retirer des produits de boulangerie ; une porte (18) destinée à fermer l'ouverture d'accès (16) ; un ou plusieurs dispositifs de chauffage (20, 21) destinés à chauffer la chambre de four (14) ; et un générateur de vapeur (30) destiné à générer de la vapeur, ledit générateur étant couplé à la chambre de four (14) de manière à introduire de la vapeur dans la chambre de four (14) et ledit générateur de vapeur (30) comprenant : un générateur de vapeur primaire (32) configuré sous la forme d'un générateur de vapeur pulvérisée sur des produits comprenant un boîtier fermé, dans lequel un ou plusieurs corps de stockage de chaleur sont agencés, comprenant en outre un ou plusieurs dispositifs de chauffage (44) destinés à chauffer le ou les corps de stockage de chaleur et une ou plusieurs conduites d'alimentation en eau (48) conçues pour introduire de l'eau dans le boîtier fermé (33) et pour pulvériser de l'eau sur le corps de stockage de chaleur ; et comprenant en outre un générateur de vapeur secondaire (34) doté d'un ou plusieurs dispositifs de chauffage (46) et d'une ou plusieurs conduites d'alimentation en eau (50) destinées à alimenter en eau le dispositif de chauffage (46) afin de générer de la vapeur en continu ou par intermittence.
