Abstract
Die Erfindung betrifft ein Verfahren zur Herstellung von Hochreinen Aquatischen Scovillinen Compositionen (HASC) und damit herstellbare Produkte. Hierunter verstehen sich Kompositionen aus organischen bzw. pflanzlichen Ausgangsstoffen, aus denen durch Hochdruckverfahren Scovilline (Scharfstoffe) extrahiert und mittels eines Emulgators in eine ÖI-in-Wasser-Verbindung (aquatisch) gebracht werden. Im Folgenden werden diese z.B. mittels Sprühtrocknung getrocknet. Um die höchstmögliche Reinheit zu erzielen wird in einem weiteren Schritt mit einer Kolonne im Kreislauf der SFE fraktioniert abgeschieden. Unter der Bezeichnung "scovillin" werden nicht wasserlösliche, scharf schmeckende Substanzen natürlichen Ursprungs verstanden, deren Schärfegrad durch die Scoville-Skala dargestellt werden kann (sogenannte ScharfStoffe). Mit dem erfindungsgemäßen Verfahren ist es möglich geworden, Scovilline (Scharfstoffe) sowohl in hoher Reinheit als auch in hoher Konzentration zu extrahieren und in eine wasserlösliche Form (HASC) zu bringen. Darüber hinaus ist es möglich mittels der "Butz-Hofferschen-Formel" unter zu Hilfenahme der Maßeinheit ASC die für das Verfahren notwendigen Parameter zu definieren. Damit ist eine Verwendung des Produkts überall dort gegeben, wo eine Wasserlöslichkeit gewünscht ist und bislang so noch nicht realisiert werden konnte, wie z.B. bei einer Verwendung als Getränke- oder Nahrungsmittelzusatz.

Compositionen (HASC) mit definierbarer Schärfe und damit herstellbare Produkte.
Die Erfindung betrifft ein Verfahren zur Herstellung von Hochreinen Aquatischen Scovillinen Compositionen (HASC) und damit herstellbare Produkte. Hierunter verstehen sich
Kompositionen aus organischen bzw. pflanzlichen Ausgangsstoffen, aus denen durch
Hochdruckverfahren (Subcritical und Supercritical-Fluid-Extraction: SFE) Scovilline
(Schärfestoffe) extrahiert werden und mittels eines Emulgators in eine Öl-in- Wasser Verbindung (aquatisch) gebracht werden. Im Folgenden werden diese z.B. mittels Sprühtrocknung getrocknet. Um die höchstmögliche Reinheit zu erzielen wird in einem weiteren Schritt mit einer Kolonne im Kreislauf der SFE fraktioniert abgeschieden. Unter der Bezeichnung„scovillin" werden nicht wasserlösliche, scharf schmeckende Substanzen natürlichen Ursprungs verstanden, deren Schärfegrad durch die Scoville-Skala dargestellt werden kann (sogenannte Scharfstoffe).
Die Scoville-Skala
Die Scoville-Skala ist eine Entwicklung des britischen Pharmakologen Wilbur L. Scoville und wird bis heute als eine der zuverlässigsten Kennzeichnungs- und Prüfungs-Indikatoren für den Schärfegrad von Scharfstoffen (Scovillinen) wie z.B. Chilis verwendet. Bei dem Messverfahren wird eine Mischung aus Chilipulver und Alkohol angesetzt und diese solange mit Wasser verdünnt, bis ein Tester auf der Zunge keine Schärfe mehr feststellen kann. Je schärfer z.B. eine Chilifrucht ist, desto stärker muss verdünnt werden. Wenn z.B. für 1 ml Chilitinktur 1 Liter Wasser (1.000 ml) zur Verdünnung benötigt wird damit keine Schärfe mehr wahrgenommen werden kann, dann beträgt die Schärfe dieser Chili 1.000 Scoville-Einheiten.
Vorkommen von natürlichen Scharfstoffen
Natürliche nicht wasserlösliche Scharfstoffe (Scovilline) kommen in zahlreichen organischen bzw. pflanzlichen Ausgangsstoffen vor:
Beispielsweise in der Familie der Nachtschattengewächse Solanaceae, wobei die
Gattung Capsicum, zu denen zum Beispiel Paprika oder auch Chilischoten gehören, am bekanntesten ist.

Capsaicinoide
Capsaicin und andere aus Pflanzen der Gattung Capsicum gewonnene, Schärfeempfinden auslösende Stoffe, werden als Capsaicinoide bezeichnet. Die Schärfe von z.B. Gewürzpaprika und Chilis wird durch die Gruppe der Capsaicinoide verursacht, die ausschließlich in den Früchten von Capsicum-Pflanzen gefunden werden. Die oft als Paprika- oder Chilischoten bezeichneten Früchte sind botanisch betrachtet Beeren.
Die Capsaicinoide Capsaicin und Dihydrocapsaicin sind die beiden Hauptschärfebestandteile in Früchten der Gattung Capsicum. Beide Substanzen sind nach der Scoville-Skala wesentlich schärfer als die in geringeren Mengen vorkommenden Capsaicinoiden Nordihydrocapsaicin, Homodihydrocapsaicin, Homocapsaicin und andere.
Capsaicin ist ein natürlich vorkommender Reizstoff, der für Pflanzen der Gattung Capsicum einen evolutionären Vorteil gegenüber anderen Pflanzen darstellt, weil die Pflanze auf diesem Weg einen natürlichen Schutz gegen Fressfeinde und Parasiten bildet.
Die Pflanzen der Gattung Capsicum werden vorzugsweise in wannen Regionen kultiviert.
Die Anwendung von Chili als Gewürz ist vor allem wegen des scharfen Geschmacks, der aus Capsaicinoiden stammt, weit verbreitet. Eine Reihe physiologischer Wirkungen werden diesem Gewürz ebenfalls zugeschrieben, zum Beispiel gegen Koliken, Kreislaufprobleme und auch gegen neurogenische Schmerzen.
Es hat eine antibakterielle und fungizide Wirkung und wirkt daher konservierend auf lebendiges Gewebe. Das Wirkungsspektrum reicht von einem leichten Wärmeempfinden am Nervenende bei Kontakt, bis hin zu realen Schmerzen und sogar Verbrennungen des umliegenden Gewebes. Hierbei kommt es ganz entscheidend auf die Dosierung an, weswegen der Genuss von besonderes scharfen Arten der Gattung Capsicum nur mit Bedacht erfolgen sollte. Capsaicin wirkt auch entspannend auf die Blutgefäße und fördert die Durchblutung, weswegen
regelmäßiger Verzehr durchaus anregend für den Kreislauf und gut für das allgemeine
Wohlbefinden sein kann. Weitere Verwendungsmöglichkeiten des Reizstoffes finden sich in der Akupunktur, bei Wärmepflastern und bei biologischen Abwehrmitteln wie z.B. Reizgas gegen Hunde. Capsaicinoide Stoffe können ferner helfen bei: Hals- und Nasenbeschwerden,
Kreislaufproblemen, Arterienverkalkung, Asthma, Gürtelrose, Windpocken oder Thrombosen. Revolutionär ist der Einsatz von Capsaicin in der Krebsforschung. Amerikanische
Wissenschaftler fanden 2006 heraus, dass durch die gezielte Verwendung von Chili das
Wachstum von Krebszellen um bis zu 80% reduziert werden kann.
Extraktion von Capsaicinoiden
Das Capsaicin ist ein lipophiles und weitestgehend hydrophobes Vanillylamid. Somit sind capsaicinoide Stoffe faktisch wasserunlöslich. Die Inhaltsstoffe von Chili können daher durch Lösungsmittelextraktion mittels Ethanol gewonnen werden. Eine Extraktion von capsaicinoiden Stoffen wird in bisher bekannter Weise durch Pressung durchgeführt, um anschließend den Presskuchen und diese Öle mittels organischen Lösungsmitteln weiter zu fraktionieren. Probleme ergeben sich daraus, dass die erhaltenen Extrakte sehr ölreich sind. Die darin enthaltenen ungesättigten Fettsäuren werden vom Luftsauerstoff oxidiert, weshalb die Gefahr besteht, dass das Extrakt einen ranzigen Geruch annimmt. Außerdem sind in den Extrakten unerwünschte Begleitstoffe, wie Schwefelverbindungen, Phenole und Bitterstoffe enthalten, die ebenfalls einen
unangenehmen Geruch aufweisen. Für einen gewünschten Einsatz in Lebensmitteln oder pharmazeutischen Anwendungen muss das erhaltene Endprodukt frei von Rückständen sein. Dies ist bei der Lösungsmittelextraktion problematisch, da die Lösungsmittel nicht ohne weiteres vollständig entfernbar sind. Ein wesentlicher Nachteil dieser Art von Extraktion ist ebenfalls, dass die gelösten bzw. extrahierten Stoffe nicht wasserlöslich sind.
HD-Extraktion mit überkritischen Gasen, Super- und Subcritical Fluid Extraction
Bei der Hochdruckextraktion (HD-Extraktion), auch als Super- und Subcritical Fluid Extraction (SFE) oder "Extraktion mit kritischem Gas" wird ein Gas verwendet bei dem die Temperatur und der Druck die kritischen Parameter überschreiten oder unterschreiten. Da bei der Extraktion mit super- und subkritischem Gas in einfacher Weise das Extraktionsmittel aus einer Lösung abgetrennt und sie in relativ niedrigen Temperaturbereichen durchgeführt werden kann, stellt sie ein wirksames Trennverfahren für thermisch unstabile oder wärmeempfindliche Stoffe dar. Die Hochdruckextraktion bietet Möglichkeiten, Stoffe selektiv und bei größter Schonung der beteiligten Materialien voneinander zu trennen.
Die Extraktion von Inhaltsstoffen mittels Kohlenstoffdioxid ist bereits ein in großtechnischem Maßstab etabliertes Verfahren. Wenn ein Gas über den sogenannten kritischen Punkt hinaus erhitzt und unter höheren als den kritischen Druck gesetzt wird, geht es in den überkritischen Zustand über. Dann lässt sich nicht mehr unterscheiden, ob es gasförmig oder flüssig ist, denn überkritische Fluide besitzen die hohe Dichte einer Flüssigkeit und die niedrige Viskosität eines Gases. Beim Übergang in diesen Zustand steigt das Lösungsvermögen sprunghaft an.
Es wird zur Gewinnung von Hopfenbitterstoffen für die Bierherstellung, zur Entkoffeinierung von Kaffee und Tee und zur Herstellung von Gewürzextrakten und Aromastoffen bereits im großen Maßstab weltweit industriell angewendet. Zum Beispiel wird zur Entkoffeinierung Kohlenstoffdioxid als Extraktionsmittel bei Hochdruckverfahren eingesetzt um Koffein herauszulösen ohne andere Komponenten zu beeinträchtigen.
Die Extraktion von Inhaltsstoffen des Neem-Baumes ist beispielsweise aus der DE 196 01 482 AI bekannt.
Geeignete Fluide, die zur HD-Extraktion herangezogen werden, sind sehr unterschiedlich.
Bekannt sind Trifluormethane, Chlorodifluorethane, Methanol, Äthan, Distickstoffoxid, Propan,
Butan, Benzol und Kohlenstoffdioxid. Meistens wird Kohlenstoffdioxid für die Supercritical- Fluid-Extraction verwendet. Das Gas erreicht seinen kritischen Punkt bereits bei 31 °C und einem Druck von 74 bar. Der zu bearbeitende Stoff muss nur wenig über Zimmertemperatur erhitzt werden. Das ist nicht nur bei empfindlichen Pflanzenprodukten ein wesentlicher Vorteil dieses Gases. Nach der Extraktion wird es vollständig verdampft und kann in einem
geschlossenen Kreislauf anschließend wieder als Lösungsmittel verwendet werden.
Die Sprühtrocknung, auch Zerstäubungstrocknung genannt, ist ein industriell durchgeführtes Verfahren zur Trocknung von Lösungen, Suspensionen oder Emulsionen. Dabei wird mittels eines Zerstäubers das zu trocknende Gut in einen Heißgasstrom eingebracht, der es in sehr kurzer Zeit zu einem feinen Pulver trocknet. Um die Gesamtoberfläche des zu trocknenden Stoffes zu vergrößern wird dieser mittels eines Druckzerstäubers oder eines Rotationszerstäubers in ein Spray überführt. Das daraus resultierende Spray wird in einen Heißgasstrom eingebracht und auf Grund der vergrößerten Oberfläche in kürzester Zeit zu einem feinen Pulver getrocknet wird. Üblicherweise handelt es sich bei dem Heißgas um Luft, jedoch werden für
oxidationsempfindliche oder leicht entzündliche Stoffe auch Inertgase (reaktionsträge Gase) eingesetzt. Für diesen Vorgang werden Heißgas-Temperaturen unter 250 °C verwendet. In einigen Fällen der chemischen Industrie können hier auch Temperaturen von bis zu 600 °C verwendet werden.
Das erhaltene pulverförmige Trocknungsgut wird mit Hilfe eines Zyklonenabscheiders vom Luftstrom getrennt und kontinuierlich abgeschieden.
Kolonnenabscheidung im Kreislauf der SFE (Subcritical und Supercritical-Fluid-Extraction)
In einer senkrecht stehenden Kolonne wird oben kontinuierlich die spezifisch schwerere
Flüssigkeit, z. B. das zu extrahierende Flüssigkeitsgemisch, eingebracht. Im unteren Teil wird die spezifisch leichtere Flüssigkeit eingeleitet, z. B. das Extraktionsmittel. Die beiden
Flüssigkeiten werden über Verteilerspiralen eingeleitet, um die gewünschte Feinverteilung zu erreichen. Während die schwerere Flüssigkeit in der Kolonne herabsinkt, diffundiert die leichtere durch diese hindurch nach oben. Dabei kommt es zwischen den vielen kleinen Tropfen zum Stoffaustausch und das Extrakt geht von der Trägerflüssigkeit in das Lösemittel über. Geeignete Vorrichtungen und Einbauten begünstigen eine intensive Durchmischung, wodurch es zu vielfachem Vermischen und Abscheiden kommt. Einbauten in der Kolonne sind notwendig, da
sonst die nach oben aufsteigenden Flüssigkeitstropfen zusammenlaufen und die Flüssigkeiten im Gegenstrom aneinander vorbeilaufen würden.
Die leichtere Flüssigkeit, das mit Extrakt beladene Lösemittel, wird am Kopf der Kolonne abgenommen, während am Boden die schwerere Flüssigkeit (ausgelaugter Trägerstoff) abläuft. Um eine hohe Reinheit des Extrakts zu gewährleisten ist es notwendig, die oben genannte Vorrichtung der Kolonnenabscheidung in den Prozess der HD-Extraktion (SFE) zu integrieren.
Aufgabe
Es ist Aufgabe der Erfindung, ein Verfahren zur Herstellung von Hochreinen Aquatischen Scovillinen Compositionen (HASC) und damit herstellbare Produkte mit einem hohen
Wirkstoffgehalt, bei verbesserter Qualität anzugeben, bei der die Wasserlöslichkeit des
Endprodukts gegeben ist. Ferner soll eine Vorrichtung zur Durchführung des Verfahrens angegeben werden.
Erfindungsgemäße Lösung
Bei Hochreinen Aquatischen Scovillinen Compositionen HASC der eingangs beschriebenen Art, wird die Aufgabe erfindungsgemäß durch die in den Ansprüchen angegebenen Merkmale gelöst.
Fraktionierte Abscheidung bei der Kohlenstoffdioxid-Hochdruckextraktion
Aufgrund des unterschiedlichen Lösungsverhaltens von ätherischen Ölen und Scharfstoffen in überkritischem Kohlendioxid, ergibt sich die Möglichkeit der getrennten Gewinnung dieser beiden Komponenten durch entsprechende Wahl der Parameter beim Extraktionsprozess.
Die zu extrahierende Biomasse muss folgende Charakteristiken aufweisen:
Die Früchte, beispielsweise der Gattung Capsicum, werden Reif geerntet und idealerweise bis auf 20 Prozent Restfeuchtigkeit getrocknet. Die zu extrahierenden Ausgangsmaterialien z.B. Chilifrüchte werden vorzugsweise in biologischen Anbauverfahren kultiviert. Nach der Ernte werden die Früchte getrocknet und zerkleinert. Wenn die Trocknung mit einem Sprüh- oder Vakuumverfahren erfolgt, ist das vorteilhaft, weil es schnell geht und darüber hinaus die Früchte von Bakterien, Viren, Pilzen und dgl. größtenteils befreit werden.
Die wertbestimmenden Inhaltsstoffe der Früchte der Gattung Capsicum sind Capsaicin, Dihydrocapsaicin, Nordihydrocapsaicn, Nomordihydrocapsaicin I, Nomordihydrocapsaicin II, N-vanillylnonanamide, N-vanillyldecanamide, Homocapsaicin I, Homocapsaicin II,
Homodihydrocapsaicin I, Homodihydrocapsaicin II, Nonivamide.

Der extrahierte Stoff wird nun im nächsten Schritt mittels einer Öl-in- Wasser-Emulsion unter Zugabe von einem natürlichen, halbsynthetischen oder synthetischen Emulgator in
wasserlösliche Form gebracht.

Die im Rahmen der Erfindung gefundene, im Folgenden genannt„Butz-Hoffersche-Formel", gilt für alle Emulsionen, welche auf Basis von natürlichen, halbsynthetischen oder synthetischen Emulgatoren in Verbindung mit Scovillinen gebracht werden. Mit ihr wird der Anteil von Wasser in der fertigen Emulsion (Endprodukt) in Abhängigkeit des Schärfegrades des extrahierten hochreinen Scovillin (SHU) und dem gewünschten Schärfegrad der fertigen
Emulsion (x*ASC) bestimmt:

Die Anwendung der Formel wird durch folgende Berechnung gezeigt:
Es werden 10 Kilogramm des Endprodukts hergestellt. Auf der Grundlage des unten angeführten Beispiels, wurden für eine gewünschte Zielschärfe von 1.000.000 Scoville bzw. 1.000 ASC, folgende Mengen für eine funktionierende Öl-in- Wasser-Emulsion ermittelt. Darüber hinaus wird angenommen, dass ein natürlicher Emulgator, z.B. Lecithin verwendet wird, welcher im Verhältnis von eins zu zehn der beigemischten Menge an Öl (Scovillin) zugeführt wird.
Rechenbeispiel:

Für die Herstellung von 10 Kilogramm des gewünschten Endproduktes werden bei Einsatz von 625 g Capsaicin und 62,5 g Emulgator (Lecithin) 9.312,5 g bzw. 9,3125 1 Wasser benötigt.
Für synthetische Emulgatoren gilt es mit der fertigen Emulsion einen HLB-Wert (HLB steht für engl, hydrophilic-lipophilic-balance) von größer gleich 13 zu erreichen. Hierfür werden
Emulgatoren wie Polysorbat 20, Polysorbat 40, Polysorbat 60 oder Polysorbat 80 verwendet.
Die erhaltene Emulsion
wird z.B. mittels Sprühtrocknung getrocknet um ein capsaicinhaltiges Pulver zu erhalten. Hierfür ist es notwendig, eine Heißlufttemperatur von bis zu 250 °C zu verwenden.
Möglicher Arbeitsbereich:
Heißlufttemperatur: 0 °C bis 600 °C
Idealer Arbeitsbereich:
Heißlufttemperatur: 0 °C bis 250 °C
Im einem weiteren Schritt wird das erhaltene Trocknungsgut in eine Kolonne gegeben und im Kreislauf der Hochdruckextraktion fraktioniert abgeschieden um die höchstmögliche Reinheit zu erhalten.
Vorteile der Erfindung
Mit dem erfindungsgemäßen Verfahren ist es möglich geworden, Scovilline (Scharfstoffe) sowohl in hoher Reinheit als auch in hoher Konzentration zu extrahieren und in eine
wasserlösliche Form HASC zu bringen. Darüber hinaus ist es möglich mittels der„Butz- Hofferschen-Formel" unter zu Hilfenahme der Maßeinheit ASC die für das Verfahren notwendigen Parameter zu definieren. Damit ist eine Verwendung des Produkts überall dort gegeben, wo eine Wasserlöslichkeit gewünscht ist und bislang so noch nicht realisiert werden konnte, wie z.B. bei einer Verwendung als Getränke- oder Nahrungsmittelzusatz.
Anhand der Zeichnungen wird ein Ausführungsbeispiel der Erfindung erklärt.

Anhand von Fig. 1 wird ein Ausführungsbeispiel der Hochdruckextraktion beschrieben. Der zu extrahierende Naturstoff 1 wird in einen Extraktor 2 eingebracht. Mittels einer Hochdruckpumpe 4 wird Kohlendioxid aus dem Tank 12 über einen Wärmetauscher 3 in den Extraktor 2 eingeführt. Die ausgelösten Substanzen werden über einen Wärmetauscher 5 in einen ersten Abscheider 6 geleitet, um in einer ersten Fraktionierung 7 entnommen zu werden. Vom ersten Abscheider 6 werden die gelösten Substanzen über einen zweiten Wärmetauscher 8 in einen zweiten Abscheider 9 geleitet und können dort als zweite Fraktion 10 entnommen werden. Das überschüssige Kohlendioxid wird über einen Kondensator 1 1 verflüssigt und in den Tank 12 zurückgeführt.
Anhand von Fig. 2a wird erläutert wie eine Öl-in-Wasser-Emulsion herzustellen ist. Hierbei wird das aus Fig. 1 erhaltene Öl 13 mittels eines Emulgators 14 unter Zugabe von Wasser 15 in eine Öl-in-Wasser-Emulsion Fig.2b gebracht.
Anhand von Fig. 3 wird eine Vorrichtung zur Sprühtrocknung von Emulsionen erläutert. Die Emulsion befindet sich im Behälter 16 und wird mittels der Pumpe 17 über den Zerstäuber 18 in einen Heißgasstrom eingebracht. Der Heißgasstrom wird über die Luftzufuhr 20 und den Ventilator 21 mittels eines Lufterhitzers 22 erzeugt, so dass in dem Trocknungsraum 19 der Trocknungsprozess vollzogen wird. Das Trocknungsgut wird in einen Zyklonen-Abscheider 23 transportiert und mittels der generierten Fliehkräfte in Pulverform 24 überführt. Die nicht weiter benötigte Luft wird über einen Ventilator 25 ausgeleitet.
Anhand von Fig. 4 wird eine Vorrichtung zur fraktionierten Kolonnenabscheidung im Kreislauf der SFE erläutert. In die senkrecht stehende Kolonne 26 wird über die Substratzuführungen 29, 30 oder 31 mittels einer Pumpe 28 der abzuscheidende Naturstoff 27 aus Fig. 3 zugeführt. Die zu extrahierende Flüssigkeit wird je nach Dichte in die verschiedenen Substratzuführungen 29, 30 oder 31 geleitet. Wobei die spezifisch leichteren Substrate weiter unten und die schwereren Substrate weiter oben in die Kolonne 26 eingeführt werden. Aus einem Tank 32 wird mittels einer Pumpe 34 über einen Wärmetauscher 33 und 37 Kohlendioxid in Gasform von unten in die Kolonne 1 gepumpt. Der Trägerstoff 35 wird über die Pumpe 36 und den Wärmetauscher 37
ebenfalls in die Kolonne transportiert. Das mit dem Extrakt beladene Lösemittel wird am Kopf der Kolonne 26 über den Wärmetauscher 38 in einen ersten Separator 39 geführt, wo die erste Fraktion 40 entnommen. Das weitere ebenfalls mit Extrakt beladene Lösemittel wird über einen Wärmetauscher 41 in einen zweiten Separator 42 geleitet und in einer zweiten Fraktionierung 43 entnommen. Das übrige Lösemittel wird über den Kondensator 44 wieder in Kohlendioxidtank 32 transportiert. Innerhalb der Kolonne findet eine Trennung von leichtflüchtigen und schwerflüchtigen Substanzen statt. Das Raffinat 45 mit den schwerflüchtigen Substanzen sammelt sich im unteren Teil und kann dort entnommen werden.
Mit dem Ausfuhrungsbeispiel nach Fig. 1 sind Wirkstoffkonzentrationen von 30 Prozent und mehr erreichbar. Durch die Herstellung der Öl-in- Wasser-Emulsion gemäß Fig. 2 stellt sich eine Wirkstoffkonzentration kleiner gleich 10 Prozent ein. Eine Erhöhung der Wirkstoffkonzentration auf bis zu 80 Prozent wird mit der Sprühtrocknung nach Fig. 3 erreicht. Die höchste
Wirkstoffkonzentration kann durch Ausführung der Kolonnenabscheidung nach Fig. 4 erreicht werden, mit Werten von über 90 Prozent.
Claims
1. Verfahren zur Herstellung von Hochreinen Aquatischen Scovillinen Compositionen HASC aus Inhaltsstoffen von scharfstoffhaltigen organischen Bestandteilen,
mit folgenden Verfahrensschritten:
Zerkleinern der Biomasse,
Hochdruckextraktion der Inhaltsstoffe der Biomasse mittels eines Gases in superkritischem oder subkritischem Zustand als Extraktionsmittel
Versetzen des extrahierten Stoffs mit Wasser unter Zugabe eines Emulgators um eine 01- in- Wasser Emulsion herzustellen.
2. Verfahren nach Anspruch 1 dadurch gekennzeichnet, dass der Anteil von Wasser in der fertigen Emulsion gemäß folgender Formel Butz-Hoffersche-Formel berechnet wird:

Hierbei gilt:
ASC = Aquatisches Scovillin, mit einem Schärfemaß von 1.000 Scoville x = Faktor, der multipliziert mit dem Wert ASC die gewünschte Endschärfe des fertigen Produkts angibt
SHU = Scoville Heat Unit, d.h. Schärfemaß des extrahierten hochreinen Scovillin EG = Verhältnis von Emulgator zum ölhaltigen Extrakt
3. Verfahren nach einem der vorhergehenden Ansprüche,
dadurch gekennzeichnet,
dass als Extraktionsmittel Kohlenstoffdioxid im superkritischen Zustand verwendet wird.
4. Verfahren nach einem der vorhergehenden Ansprüche,
dadurch gekennzeichnet,
dass die Extraktionstemperatur 10 °C bis 120 °C
und der Extraktionsdruck 50 bar bis 2500 bar beträgt.
5. Verfahren nach einem der vorhergehenden Ansprüche,
dadurch gekennzeichnet,
dass die Extraktionstemperatur 30 °C bis 80 °C
und der Extraktionsdruck 100 bar bis 600 bar beträgt.
6. Verfahren nach einem der vorhergehenden Ansprüche,
dadurch gekennzeichnet,
dass insbesondere bei Capsaicinoiden die Extraktionstemperatur 55 °C bis 77 °C und der Extraktionsdruck 300 bar bis 600 bar beträgt.
7. Verfahren nach einem der vorhergehenden Ansprüche,
dadurch gekennzeichnet,
dass der Wassergehalt des Kohlenstoffdioxids maximal 1000 ppm beträgt.
8. Verfahren nach einem der vorhergehenden Ansprüche,
dadurch gekennzeichnet,
dass als Emulgator Lecithin eingesetzt wird.
9. Verfahren nach Patentanspruch 8,
dadurch gekennzeichnet,
dass als Emulgator Lecithin gewonnen aus biologisch angebautem Soja eingesetzt wird.
10. Verfahren nach einem der vorhergehenden Ansprüche,
dadurch gekennzeichnet,
dass die erhaltene Öl-in- Wasser-Emulsion einer Trocknung mittels Sprühtrocknung oder Vakuumtrocknung unterzogen wird.

dadurch gekennzeichnet,
dass im Zuge der Hochdruckextraktion eine Kolonnenabscheidung erfolgt.
12. Verfahren nach einem der vorhergehenden Ansprüche,
dadurch gekennzeichnet,
dadurch, dass Biomasse aus biologischem Anbau verwendet wird.
13. Vorrichtung zur Durchführung des Verfahrens nach einem der vorhergehenden Ansprüche, dadurch gekennzeichnet,
dass eine Hochdruckextraktionsvorrichtung mit zwei Fraktionierungsstufen (5, 6 und 7 sowie 8, 9 und 10) und einer daran angeschlossenen Stufe zur Herstellung einer Öl-inWasser-Emulsion (13, 14 und 15) vorgesehen ist.
14. Vorrichtung zur Durchführung des Verfahrens nach Patentanspruch 13,
dadurch gekennzeichnet,
dass für einen anschließenden Verarbeitungsschritt eine Sprühtrocknungsvorrichtung (18 bis 22) mit einem Fliehkraftabscheider (23 und 25) vorgesehen ist.
15. Vorrichtung zur Durchführung des Verfahrens nach Patentanspruch 13,
dadurch gekennzeichnet,
dass für einen anschließenden Verarbeitungsschritt eine Vakuumtrocknungsvorrichtung vorgesehen ist.
16. Vorrichtung zur Durchführung des Verfahrens nach Patentanspruch 13, 14 oder 15,
dadurch gekennzeichnet,
dass für einen weiteren Verarbeitungsschritt eine Kolonnenabscheidung (26) vorgesehen ist.
17. Verwendung des mit dem Verfahren hergestellten Stoffes für folgende Anwendungen:
Medizin, Beimischung von Kompositwerkstoffen, Kosmetikindustrie, Textilindustrie, Filtertechnik, Bauindustrie, Antischimmelmittel, Fungizid, Abwehrmittel, Tierabwehr, Pflanzenschutz, Schutzanstriche, Farben, Lebensmittel, Nahrungsergänzungsmittel oder Getränken.
