本発明の香料組成物は、所定の化合物を混合することにより得られるため、当業者において一般に利用されている装置で製造でき、その製造条件も容易に制御できる。
さらに、本発明の香料組成物は所定の化合物を含有するものであり、調味料及び食品の種類に応じて組成を調整する必要はないため、様々な調味料及び食品に広く利用できる。
ここで、「成分グループAと成分グループBの総重量比」とは、成分グループAの総重量と成分グループBの総重量との比を意味し、成分グループAの総重量は(A1)の重量と(A2)の重量の合計であり、成分グループBの総重量は、例えば、成分グループBが(B1)のみからなる場合は、(B1)の重量であり、成分グループBが(B1)、(B2)及び(B3)からなる場合は、(B1)の重量と(B2)の重量と(B3)の重量の合計である。
ここで、「成分グループAと(C)の重量比」とは、成分グループAの総重量と成分Cの重量との比を意味する。
(A1)と(A2)の重量比が、1:0.01~100(より好ましくは1:0.05~50、特に好ましくは1:0.1~10)であり、且つ、
成分グループAと成分グループBの総重量比が、1:0.001~10000(より好ましくは1:0.001~2000、特に好ましくは1:0.001~1500)であることが好ましい。
(A1)と(A2)の重量比が、1:0.01~100(より好ましくは1:0.05~50、特に好ましくは1:0.1~10)であり、
成分グループAと成分グループBの総重量比が、1:0.001~10000(より好ましくは1:0.001~2000、特に好ましくは1:0.001~1500)であり、且つ、

また本発明の組成物は、成分Cを含有する場合、成分グループA及びB並びに成分C以外の香気成分(例えば、図1に示される香気成分の少なくとも1種等)を、更に含有してよい。本発明の組成物は、図1に示される香気成分等を含有することによって、調味料及び食品に、より強い調理感(例えば、調理香、スパイス感)を付与できる。

これらの濃度は、本発明の組成物の全重量に対する、各成分の重量の割合である。
本発明において「調理感」とは、調理(例えば、炒め、焼き、揚げ、蒸し、煮込み等の加熱調理や、熟成等の非加熱調理)された食品から感じられる香り、風味、味(例えば、熟成したチーズのまろやかな香り、煮込んだ肉の香り等の調理操作によって生ずる香り、風味、味)を意味し、これは調理される前の食材から感じられる香り、風味、味とは異なるものであり、調理という物理的操作によって食材に化学反応が起こり、不可逆的に発生する。食品の種類及びその調理方法等によって得られる調理感は異なるが、通常、調理香、塩味及びスパイス感から選ばれる少なくとも一つを構成要素として含む。ここで「調理香」とは、調理(例えば、炒め、焼き、揚げ、蒸し、煮込み等の加熱調理や、熟成等の非加熱調理)された食品から発現する特有の香りを意味する。例えば、煮込んだビーフシチューの香り、揚げものの香ばしい香り、熟成したチーズのまろやかな香り等の調理操作によって生ずる香りを指す。「スパイス感」とは、スパイスから感じられる特有の香り、辛味、酸味等の風味を意味する。
また、本発明において調理感の「付与」とは、調理感を有しない調味料又は食品に、調理感を新たに付与することのみならず、調理感を有する調味料又は食品に、調理感を更に付与すること、すなわち調理感を増強すること、も含む概念である。
本発明における「調理感の付与」は「調理香の付与」を含み、調理感の付与用香料組成物は、一態様として、調理香の付与用香料組成物であってよい。
また、本発明における「調理感の付与」は「塩味の増強」を含み、調理感の付与用香料組成物は、一態様として、塩味の増強用香料組成物であってよい。本発明において「塩味の増強」とは、あたかも塩分濃度を高めたかのように、塩味が強く感じられるようになることをいう。
また、本発明における「調理感の付与」は「スパイス感の増強」を含み、調理感の付与用香料組成物は、一態様として、スパイス感の増強用香料組成物であってよい。本発明において「スパイス感の増強」とは、あたかもスパイス濃度を高めたかのように、スパイス感が強く感じられるようになることをいう。
また、調理感の付与用香料組成物には、例えば、調理香の付与及び/又は塩味の増強用香料組成物;調理香の付与及び/又はスパイス感の増強用香料組成物;塩味及び/又はスパイス感の増強用香料組成物;調理香の付与、塩味の増強及びスパイス感の増強から選ばれる少なくとも1つの用途のための香料組成物等が含まれる。
また本発明は、本発明の組成物を添加する工程を含む、調理感の付与方法を提供する。
また、本発明は、成分グループA及び成分グループBを添加する工程を含む、調理感の付与方法を提供する。
また、本発明は、成分グループA、成分グループB及び成分Cを添加する工程を含む、調理感の付与方法を提供する。
また、成分Cを更に添加するとき、成分グループAと(C)の重量比は、本発明の組成物のものと同様である。
また、成分Cを更に添加する場合も、添加の順序及び間隔は特に制限されない。
また、成分グループA及びB、並びに成分Cを個別に添加する場合、成分Cは、成分グループA及びBと同様に、調味料又は食品の製造中のみならず、調味料又は食品の製造後にも添加できる。成分グループA及びB、並びに成分Cを食品に添加する場合、成分グループA及びB、並びに成分Cを添加した調味料を、食品の製造中又は製造後に添加してもよい。以下において「本発明の組成物等」には、成分グループA及びB、並びに成分Cを添加することも包含される。
例えば、天然系調味料又は風味調味料に本発明の組成物等が添加される場合、該天然系調味料又は風味調味料における各成分の濃度は、以下の範囲であることが好ましい。

これらの濃度は、本発明の組成物等が添加されたメニュー用調味料の全重量に対する、各成分の重量の割合である。
本発明において「食品」とは、経口摂取し得るものを広く包含する概念であり、飲料等も含まれる。
例えば、炒め物、蒸し物、焼き物、揚げ物、煮物、スープ又は飲料等に本発明の組成物等が添加される場合、これらの食品における各成分の濃度は、以下の範囲であることが好ましい。
(A1):0.01重量ppm以上(より好ましくは0.05重量ppm以上、特に好ましくは0.08重量ppm以上)30重量ppm以下(より好ましくは20重量ppm以下、特に好ましくは15重量ppm以下)

これらの濃度は、本発明の組成物等が添加された食品の全重量に対する、各成分の重量の割合である。また、これらの濃度は、食品の喫食時における濃度であることが好ましい。
本発明の組成物等を含む調味料を食品に添加することによって、食品に調理感(例、調理香、塩味、スパイス感等)を付与できる。
また、本発明の組成物等を添加する工程を含む、調理感の付与方法には、例えば、調理香を付与し、且つ/又は、塩味を増強する方法;調理香を付与し、且つ/又は、スパイス感を増強する方法;塩味及び/又はスパイス感の増強方法;調理香を付与し、且つ/又は、塩味及び/又はスパイス感を増強する方法等が含まれる。
下記表1に示される各化合物を5g秤量した後、それぞれ食用油脂(製品名:AJINOMOTO さらさらキャノーラ油、J-オイルミルズ社製)95gに溶解し、各化合物の5重量%溶液(添加溶液)を調製した。
上記1.において調製した各成分の添加溶液を、市販のメニュー用調味料(製品名:香味ペースト、味の素社製)に所定量添加し、十分に混合して試験調味料(6g)を調製した後、該試験調味料にキャベツ180g、食用油脂(製品名:AJINOMOTO さらさらキャノーラ油、J-オイルミルズ社製)大さじ1杯(15ml)を加えて混合し、得られた混合物を電子レンジで加熱(1000W、1.5分)することにより、蒸しキャベツ(200g)を評価サンプル(実施例1~16、比較例1~5)として調製した。添加溶液の添加量、各成分の試験調味料中の濃度及び評価サンプル中の濃度は、下記表2-1~表2-3の「添加量(mg)」、「調味料中濃度(ppm)」及び「サンプル中濃度(ppm)」に示す通りである。
また、食用油脂(製品名:AJINOMOTO さらさらキャノーラ油、J-オイルミルズ社製)大さじ1杯(15ml)をフライパンにて中火で30秒熱し、そこにキャベツ180gを加えてフライパンでキツネ色になるまで炒めてキャベツ炒めを調製し、市販のメニュー用調味料(製品名:香味ペースト、味の素社製)6gで調味した。これを調理香を十分に有するポジティブコントロールとして用いた。

結果を下記表2-1~表2-3に示す。
一方、比較例1~5のサンプルは、いずれも調理香がなく、調理香は付与されなかった。
上記1.において調製した各成分の添加溶液を、市販のメニュー用調味料(製品名:ナシゴレンの素、インドフード社製)に所定量添加し、十分に混合して試験調味料(20g)を調製した。フライパンにて食用油脂(製品名:AJINOMOTO さらさらキャノーラ油、J-オイルミルズ社製)大さじ1杯(15ml)を中火で30秒熱し、そこに当該試験調味料を加えて30秒炒め、さらに炊飯米200gを加えて炒めることにより、ナシゴレン(220g)を評価サンプル(実施例17~32、比較例6~8)として調製した。添加溶液の添加量、各成分の試験調味料中の濃度及び評価サンプル中の濃度は、下記表3-1~表3-3の「添加量(mg)」、「調味料中濃度(ppm)」及び「サンプル中濃度(ppm)」に示す通りである。
また、メニュー用調味料に各成分の添加溶液を添加しなかったこと以外は上記と同様の手順によりナシゴレンを調製し、これをコントロールとして用いた。

一方、比較例6~8のサンプルは、いずれもコントロールと同等、又はコントロールよりやや強い塩味及びスパイス感が感じられるに過ぎず、塩味及びスパイス感は十分に増強されなかった。
鍋にて食用油脂(製品名:AJINOMOTO オリーブオイル、J-オイルミルズ社製)大さじ1杯(15ml)を中火で30秒熱し、そこに1cm角にカットしたニンジン(90g)、1cm角にカットしたタマネギ(100g)及び3cm角にカットしたキャベツ(110g)を加えて2分炒め、さらにカットトマト(製品名:デルモンテ完熟カットトマト、デルモンテ社製、400g)、固形コンソメ(製品名:味の素KKコンソメ<固形タイプ>、味の素社製、15.9g)及び水(600g)を加えて5分煮込んだ後、具材を網で濾してスープを得、次いで当該スープに、上記1.において調製した各成分の添加溶液を所定量添加し、十分に混合することにより、ミネストローネスープ(200g)を評価サンプル(実施例33~38、比較例9~14)として調製した。添加溶液の添加量、各成分の評価サンプル中の濃度は、下記表4-1、表4-2の「添加量(mg)」及び「サンプル中濃度(ppm)」に示す通りである。

一方、比較例9~14のサンプルは、いずれも調理感が感じられなかった。
鍋にて食用油脂(製品名:AJINOMOTO オリーブオイル、J-オイルミルズ社製)大さじ1杯(15ml)を中火で30秒熱し、そこに1cm角にカットしたニンジン(90g)、1cm角にカットしたタマネギ(100g)及び3cm角にカットしたキャベツ(110g)を加えて2分炒め、さらにカットトマト(製品名:デルモンテ完熟カットトマト、デルモンテ社製、400g)、固形コンソメ(製品名:味の素KKコンソメ<固形タイプ>、味の素社製、15.9g)及び水(600g)を加えて5分煮込んだ後、具材を網で濾してスープを得、次いで当該スープに、上記1.において調製した各成分の添加溶液を所定量添加し、更に、図2に記載の各香気成分を添加して、十分に混合することにより、ミネストローネスープ(200g)を評価サンプル(実施例39、比較例15)として調製した。添加溶液の添加量、各成分の評価サンプル中の濃度は、下記表5の「添加量(mg)」及び「サンプル中濃度(ppm)」に示す通りである。またミート様の香気成分の評価サンプル中の濃度は図2に示す通りである。

+++:調理感が非常に強く感じられる
++++:調理感が極めて強く感じられる
+++++:調理感が最も強く感じられる
一方、比較例15のサンプルは、調理感が感じられなかった。
また本発明の香料組成物は調味料及び食品の塩味を増強できるため、塩の使用量を減らすことができ、健康を保持又は増進できる。
また本発明の香料組成物は調味料及び食品のスパイス感を増強できるため、スパイス使用量を減らすことができ、料理のコストを削減できる。
本発明の香料組成物は、所定の化合物を混合することにより得られるため、当業者において一般に利用されている装置で製造でき、その製造条件も容易に制御できる。
さらに、本発明の香料組成物は所定の化合物を含有するものであり、調味料及び食品の種類に応じて組成を調整する必要はないため、様々な調味料及び食品に広く利用できる。
Claims (21)
- (A1)2,6-ジメチルピラジン及び(A2)2-エチル-3-メチルピラジンからなる成分グループA、並びに
(B1)アリルスルフィド、(B2)アリルジスルフィド及び(B3)アリルメチルジスルフィドから選択される少なくとも一つの化合物からなる成分グループB
を含む香料組成物。 - (A1)と(A2)の重量比が、1:0.01~100であり、成分グループAと成分グループBの総重量比が、1:0.001~10000である、請求項1記載の組成物。
- (C)フルフリルアルコールを更に含有する、請求項1又は2記載の組成物。
- 成分グループAと(C)の重量比が、1:0.01~1000である、請求項3記載の組成物。
- 調理感の付与用である、請求項1~4のいずれか1項に記載の組成物。
- (A1)2,6-ジメチルピラジン及び(A2)2-エチル-3-メチルピラジンからなる成分グループA、並びに
(B1)アリルスルフィド、(B2)アリルジスルフィド及び(B3)アリルメチルジスルフィドから選択される少なくとも一つの化合物からなる成分グループB
を添加する工程を含む、調味料の製造方法。 - (A1)2,6-ジメチルピラジン及び(A2)2-エチル-3-メチルピラジンからなる成分グループA、並びに
(B1)アリルスルフィド、(B2)アリルジスルフィド及び(B3)アリルメチルジスルフィドから選択される少なくとも一つの化合物からなる成分グループB
を添加する工程を含む、食品の製造方法。 - (A1)と(A2)の重量比が、1:0.01~100であり、成分グループAと成分グループBの総重量比が、1:0.001~10000である、請求項6又は7記載の方法。
- (C)フルフリルアルコールを更に添加することを含む、請求項6~8のいずれか1項に記載の方法。
- 成分グループAと(C)の重量比が、1:0.01~1000である、請求項9記載の方法。
- 調味料が、調理感が付与された調味料である、請求項6及び8~10のいずれか1項に記載の方法。
- 食品が、調理感が付与された食品である、請求項7~10のいずれか1項に記載の方法。
- 請求項6及び8~11のいずれか1項に記載の方法により製造される、調味料。
- 請求項7~10及び12のいずれか1項に記載の方法により製造される、食品。
- (A1)2,6-ジメチルピラジン及び(A2)2-エチル-3-メチルピラジンからなる成分グループA、並びに
(B1)アリルスルフィド、(B2)アリルジスルフィド及び(B3)アリルメチルジスルフィドから選択される少なくとも一つの化合物からなる成分グループB
を添加する工程を含む、調理感の付与方法。 - (A1)と(A2)の重量比が、1:0.01~100であり、成分グループAと成分グループBの総重量比が、1:0.001~10000である、請求項15記載の方法。
- (C)フルフリルアルコールを更に添加することを含む、請求項15又は16記載の方法。
- 成分グループAと(C)の重量比が、1:0.01~1000である、請求項17記載の方法。
- 調理感の付与が、調理香の付与である、請求項15~18のいずれか1項に記載の方法。
- 調理感の付与が、塩味の増強である、請求項15~18のいずれか1項に記載の方法。
- 調理感の付与が、スパイス感の増強である、請求項15~18のいずれか1項に記載の方法。
