- the present invention relates to a process for purifying the sugar juice of beets and more particularly the sweet juice obtained by pressing the beets. It also relates to purified juice and its uses in particular as a fermentation substrate and for the preparation of crystalline sugar.
- Sugar beet juice is generally obtained by an extraction process referred to as "diffusion extraction”.
