Abstract
【課題】 最小限の添加剤で長期保存できる不溶性ミネラル強化乳入り飲料の提供、および、当該不溶性ミネラル強化乳入り飲料の製造方法の提供。 【解決手段】 乳成分、不溶性ミネラル、および、κーカラギーナンを含む分散剤を含有し、不溶性ミネラルの沈殿量が製造時を100とした際に、保存10日後のカルシウム沈殿量が300以下であることを特徴とする不溶性ミネラル強化乳入り飲料の提供。
Description
本発明は、乳入り飲料に関し、特に長期保存できる不溶性乃至難溶性(以下「不溶性」と略する)ミネラル強化乳入り飲料、および、当該不溶性ミネラル強化乳入り飲料の製造方法に関する。
本発明は、特に、乳入り飲料に関し、特に長期保存できる、不溶性ミネラル、例えばカルシウム、マグネシウムまたは鉄強化乳入り飲料、および、当該不溶性ミネラル、例えばカルシウム、マグネシウムまたは鉄等強化乳入り飲料の製造方法に関する。
本発明は、特に、乳入り飲料に関し、特に長期保存できる、不溶性ミネラル、例えばカルシウム、マグネシウムまたは鉄強化乳入り飲料、および、当該不溶性ミネラル、例えばカルシウム、マグネシウムまたは鉄等強化乳入り飲料の製造方法に関する。
栄養学におけるミネラルは、一般的な有機物に含まれる元素(炭素・水素・窒素・酸素)以外に、生体にとって欠かせない元素のことを指す。糖質、脂質、蛋白質、ビタミンと並び五大栄養素の一つとして数えられる。具体的には、少なくとも日本において健康増進法に基づく食事摂取基準の対象として厚生労働省により定められている13元素(亜鉛・カリウム・カルシウム・クロム・セレン・鉄・銅・ナトリウム・マグネシウム・マンガン・モリブデン・ヨウ素・リン)を含む。その中、人体への不溶性ミネラル、例えば、カルシウム、マグネシウムまたは鉄の供給は、問題となっている。
カルシウムは、骨の成長に不可欠であるばかりでなく、体液のアルカリ性の保持、血液の凝固作用の促進、神経の興奮性の抑制等重要な役割を果す栄養素である。しかしながら、現代の食生活においてもカルシウムは不足しがちな栄養素の一つであり、比較的カルシウムに富んでいる食品である牛乳や乳入り飲料についても、カルシウム強化が行われているのが現状である。
また、マグネシウムは、人体にとってリボソームの構造維持やタンパク質の合成、その他エネルギー代謝に関する生体機能に必須な元素であるためマグネシウムの欠乏は虚血性心疾患などの原因のひとつと考えられている。
さらに、鉄は人体の生物学において需要な役割を担っている。赤血球の中に含まれるヘモグロビンは、鉄のイオンを利用して酸素を運搬している。ヘモグロビンと酸素分子の結合は弱く、筋肉のような酸素を利用する組織に到着すると容易に酸素を放出することができる。
最近では、上記元素は、ミネラル成分のひとつとしてサプリメントや飲料などに添加されることが多くなってきている。
カルシウムは、骨の成長に不可欠であるばかりでなく、体液のアルカリ性の保持、血液の凝固作用の促進、神経の興奮性の抑制等重要な役割を果す栄養素である。しかしながら、現代の食生活においてもカルシウムは不足しがちな栄養素の一つであり、比較的カルシウムに富んでいる食品である牛乳や乳入り飲料についても、カルシウム強化が行われているのが現状である。
また、マグネシウムは、人体にとってリボソームの構造維持やタンパク質の合成、その他エネルギー代謝に関する生体機能に必須な元素であるためマグネシウムの欠乏は虚血性心疾患などの原因のひとつと考えられている。
さらに、鉄は人体の生物学において需要な役割を担っている。赤血球の中に含まれるヘモグロビンは、鉄のイオンを利用して酸素を運搬している。ヘモグロビンと酸素分子の結合は弱く、筋肉のような酸素を利用する組織に到着すると容易に酸素を放出することができる。
最近では、上記元素は、ミネラル成分のひとつとしてサプリメントや飲料などに添加されることが多くなってきている。
乳をベースとした乳入り飲料のミネラル強化は、例えば、カルシウムの場合、主に、乳酸カルシウム等の水溶性カルシウム、あるいは、炭酸カルシウムまたは食品添加物用合成炭酸カルシウム等の不溶性カルシウムの添加によって行われる。
しかしながら、水溶性カルシウムを0.02重量%以上添加すると、加熱殺菌処理を施した場合は、カルシウムイオンと乳蛋白との反応で蛋白質の熱凝集沈澱が生じるという問題がある。

一方、不溶性カルシウムである炭酸カルシウムを食品添加物用とする場合は、例えば、一般に水酸化カルシウムの水懸濁液(石灰乳)に炭酸ガスを反応させる炭酸ガス法によりスラリー状炭酸カルシウムとして調製する方法が知られている。そして、このスラリー状炭酸カルシウムを脱水乾燥、および、粉砕粉末化して用いられている。
また、炭酸カルシウム等不溶性カルシウム塩は、蛋白質と反応して凝集をひき起すことはないため、添加時期は加熱殺菌の前でも後でも良いが、不溶性であるために沈澱等が生じる欠点は避けられない。
マグネシウムには、食品添加物として塩化マグネシウムが知られている。これは豆腐凝固剤「にがり」の主成分であると同時に、その名前からもわかるように苦味を生じる成分であることから、栄養強化剤として使用するのには課題がある。この苦味は水溶性マグネシウムを使用しているため強く現れるのであるが、不溶性マグネシウムを使用することで改善できる。ただし、不溶性塩を使用していることから、カルシウム同様の沈殿等の欠点は避けられない。
一方、近年、鉄分不足による貧血症状を起こす女性が多数見られる。この傾向は、女子高生や若い成人女性において特に顕著である。この鉄不足を解消するために、牛乳等に鉄分を強化した商品も多数販売され始めている。例えば鉄添加剤としては、乳酸鉄、クエン酸鉄ナトリウム、グルコン酸第1鉄等の水溶性の有機酸鉄塩があるが、これらは鉄味が強く、食感の問題で、一度にあまり多くの量を使用できないという問題がある。又、ピロリン酸第2鉄等の水不溶性及び難溶性鉄塩の分散体を用いた場合、鉄臭は改善されるものの、比重が2.75以上と高く、清涼飲料水等に分散させた場合、液中で短時間に沈澱し、懸濁安定性に問題がある。

従来では、結晶セルロース、および、κーカラギーナンを分散剤として併用する提案(特開平11-276132号公報)があった。結晶セルロースは、液相中で互いに絡み合った網目構造を形成し、不溶性カルシウムをその中に捕捉することが知られている。また、κーカラギーナンは、乳成分と反応して極めて微細な流動性に富んだマイクロゲルを形成し、カルシウムを表面に吸着してその粒子同士の二次凝集を防止する作用を有し、前記結晶セルロースとの相乗作用により優れた沈降防止効果を発揮すると考えられる。
しかしながら、上記提案においては、両者をそれぞれ単独で使用したときの効果は、併用したときに比して不充分であり、併用した場合でもκーカラギーナンの配合割合が大きすぎると、カルシウムの沈降防止効果はあるものの液相がマクロ的にゲル化して乳入り飲料として適さない、とも記載されている。すなわち、従来技術を参酌すると、乳入り飲料の調整にあたり、分散剤としてのκーカラギーナン以外の成分を必須とする。そこに、結晶セルロースを添加しても、κーカラギーナンとの配合が難しく、かつ、乳入り飲料の風味を損なう欠点も存在していた。沈殿に達する量等は異なるが、同じ不溶性ミネラルである、マグネシウムや鉄についても同様である。
乳を基本とする乳性食品は、乳に由来する自然で健康的なイメージがあるため、結晶セルロース等そのイメージを損なう食品原料(食品添加剤)を使用しないことで、消費者に対する訴求力が強まる。このため、最小限の添加剤で長期保存できる不溶性ミネラル強化乳入り飲料を提供することで、更なる購買層の拡大を期待することができる。

すなわち、本発明は、乳成分、不溶性ミネラル、および、κーカラギーナンを含む分散剤を含有し、カルシウムの沈殿量が製造時を100とした際に、保存7日から10日後の不溶性ミネラルの沈殿量が240以下であることを特徴とする不溶性ミネラル強化乳入り飲料である。特に、本発明は、不溶性ミネラルがカルシウムの場合、保存15日後のカルシウム強化乳入り飲料の沈殿量が130以下であることが好ましく、不溶性ミネラルがマグネシウムの場合、保存15日後のマグネシウム強化乳入り飲料の沈殿量が205以下であることが好ましく、不溶性ミネラルが鉄の場合、保存15日後の鉄強化入り乳飲料の沈殿量が400以下であることが好ましい。
本発明でいう不溶性ミネラル沈殿量とは、誘導結合プラズマ(Inductively Coupled Plasma)発光法を用いて、牛乳、乳入り飲料、または、乳入り清涼飲料を始めとする乳入り飲料の下層(全量の10分の1を占める下層部)に対し、直接に不溶性ミネラル濃度を測定して得る値である。測定値が小さいほど、新たな不溶性ミネラルの沈殿が少ないことになり、当該乳入り飲料の品質が良いとされている。
本発明の特徴は、後述する実施例(比較例等を含む)およびそのデータを示した図1で見られうる。図1は、カルシウム強化乳入り飲料の製造時の沈殿量が100であるのに対して、保存経過日数とそのカルシウムの沈殿量との分布グラフである。これらのデータから、2つの実施例のデータと比較例のデータとの間に、明らかにy=100+2xという線を引くことできる。即ち、カルシウムの沈殿量が製造時を100とした際に、10℃保存10日後のカルシウム沈殿量が120以下で、10℃保存15日後のカルシウムの沈殿量が130以下であれば、当該カルシウム強化乳入り飲料の品質が良いとされ、10℃保存10日後のカルシウムの沈殿量が118以下で、10℃保存15日後のカルシウムの沈殿量が127以下であれば、当該カルシウム強化乳入り飲料の品質がより良いとされ、10℃保存10日後のカルシウムの沈殿量が117以下で、10℃保存15日後のカルシウムの沈殿量が126以下であれば、当該カルシウム強化乳入り飲料の品質がさらに良いとされ、10℃保存10日後のカルシウムの沈殿量が116以下で、10℃保存15日後のカルシウムの沈殿量が124以下であれば、当該カルシウム強化乳入り飲料の品質がさらに良いとされる。

以下は、カルシウムを例に本発明を説明するが、他の不溶性ミネラル例えば、マグネシウムや鉄も同様である。
本発明の乳成分とは、獣乳、植物乳、人工乳由来の乳原料や乳加工品であれば、特に制限はない。獣乳とは牛乳、羊乳、水牛乳など哺乳類由来の乳のことをいい、植物乳は豆乳、大豆乳など植物由来の乳のことをいい、人工乳とは食用油脂と水を乳化剤などで人工的に乳化させた乳のことをいう。乳加工品とは、例えば、牛乳の場合、生乳、濃縮乳、脱脂乳、脱脂粉乳、脱脂濃縮乳、全脂粉乳、全脂濃縮乳、練乳、クリーム、バター、チーズ、発酵乳など、乳を加工したものであれば、全て含まれる。
本発明のカルシウム強化乳入り飲料(以下、乳入り飲料という)とは、カルシウム分を強化した牛乳、加工乳、乳酸菌飲料、および、乳成分を含有するコーヒー、紅茶、抹茶、ココア、または、果汁入り飲料等をいう。上記乳入り飲料中の乳成分は、無脂乳固形分で3重量%以上が好ましく、4重量%以上がより好ましく、6重量%以上が更に好ましく、8重量%以上とするのが更に好ましい。
本発明の乳入り飲料に添加するカルシウムは、不溶性カルシウムであり、粉末状の炭酸カルシウム以外に、スラリー化(キレート化)して沈殿が固着しにくいカルシウム製剤を用いても同様の効果が得られる。
本発明に用いるスラリー化の不溶性カルシウムには、炭酸カルシウムスラリー、または、リン酸カルシウムスラリー等が例としてあげられるが、スラリー化の不溶性カルシウムであれば特に限定されない。炭酸カルシウムは、石灰石由来、リン酸カルシウムは牛乳由来やリン鉱石由来のものを使用することができる。
本発明の乳入り飲料に添加するカルシウム分は、不溶性カルシウム、好ましくはスラリー化の不溶性カルシウム類である。不溶性カルシウムは、その平均粒径に特に制限はないが、平均粒径が100μm以下であることが好ましく、平均粒径が75μm以下であることがより好ましく、平均粒径が50μm以下であることがさらに好ましく、平均粒径が25μm以下であることがさらに好ましく、平均粒径が10μm以下であることがさらに好ましく、平均粒径が1μm以下であることがさらに好ましい。
本発明の乳入り飲料に添加するカルシウム分は、不溶性カルシウム、好ましくはスラリー化の不溶性カルシウム類である。不溶性カルシウムは、その平均粒径に特に制限はないが、平均粒径が100μm以下であることが好ましく、平均粒径が75μm以下であることがより好ましく、平均粒径が50μm以下であることがさらに好ましく、平均粒径が25μm以下であることがさらに好ましく、平均粒径が10μm以下であることがさらに好ましく、平均粒径が1μm以下であることがさらに好ましい。
上記不溶性カルシウムは、乳入り飲料全量に対して、カルシウム相当量として、0.01乃至0.5重量%、好ましくは0.01乃至0.4%添加する。不溶性カルシウムが0.5重量%より多いと、沈殿が生じたり、味にザラツキが出て好ましくない。
上記不溶性マグネシウムは、乳入り飲料全量に対して、マグネシウム相当量として、0.001乃至0.2重量%、好ましくは0.001乃至0.1重量%、より好ましくは0.005乃至0.1重量%添加する。不溶性マグネシウムが0.2重量%より多いと、沈殿が生じたり、味にザラツキが出て好ましくない。
上記不溶性鉄は、乳入り飲料全量に対して、鉄相当量として、0.0001乃至0.005重量%、好ましくは0.0001乃至0.004重量%、より好ましくは0.0005乃至0.003重量%添加する。不溶性鉄が0.005重量%より多いと、沈殿が生じたり、味にザラツキが出て好ましくない。
上記不溶性マグネシウムは、乳入り飲料全量に対して、マグネシウム相当量として、0.001乃至0.2重量%、好ましくは0.001乃至0.1重量%、より好ましくは0.005乃至0.1重量%添加する。不溶性マグネシウムが0.2重量%より多いと、沈殿が生じたり、味にザラツキが出て好ましくない。
上記不溶性鉄は、乳入り飲料全量に対して、鉄相当量として、0.0001乃至0.005重量%、好ましくは0.0001乃至0.004重量%、より好ましくは0.0005乃至0.003重量%添加する。不溶性鉄が0.005重量%より多いと、沈殿が生じたり、味にザラツキが出て好ましくない。
前記κーカラギーナンの添加量は、乳入り飲料全量に対して0.005乃至0.02重量%であり、特に、0.005重量%乃至0.01重量%であることが好ましい。当該範囲において、乳入り飲料へのκーカラギーナン単独添加で、最小限の添加剤で乳入り飲料を長期保存できる効果が得られる。また、κーカラギーナンとしては、品種などの制限は特になく、具体的には、カラギニンCSK-1〔三栄源エフ・エフ・アイ(株)製〕、サンカラーV10〔太陽化学(株)製〕等の市販品を用いることが出来る。
κーカラギーナンは、冷水で分散溶解しにくいという難点より、あらかじめ分散溶解させ、分散剤としたものを乳入り飲料のその他の原料と混合させる必要がある。また、κ-カラギーナン以外のカラギーナン類やガム類を乳入り飲料中で等量(0.005重量%乃至0.02重量%)置換しても本発明の効果は得られなかった。
実際に、上記分散剤を使用する時は、例えば、粉末のκーカラギーナンを30乃至80℃の温水中で予備分散してから用いるのが好ましい。また、上記の諸成分を所定割合で配合して調製した乳入り飲料は、加熱殺菌処理することができる。加熱殺菌処理は牛乳や乳入り飲料等の殺菌条件と同等の65℃、30分間以上の加熱条件で行うことが例示され、具体的には、65℃30分間以上保持の低温殺菌、85℃15秒間以上保持や130℃2秒間以上保持の高温短時間殺菌、140℃2秒間以上保持のUHT殺菌などがあり、適宜に選択することができる。
本発明におけるカルシウム、マグネシウムまたは鉄強化乳入り飲料は、その種類(コーヒー、紅茶など)に応じて常套的に使用されている副原料、例えばpH調整剤、乳化剤、安定剤、香料を適宜に配合することができる。当該副原料は、本発明の出願時の技術常識において周知されたものであれば、特に制限はされない。
以下、本発明を実施例を挙げて具体的に説明するが、本発明はこれらに限定されるものではない。実施例中、CSK-1はκーカラギーナンの具体例、カラギニンCSK-1を意味する。不溶性ミネラルの平均粒子径は粒度分布計(レーザー回折式の粒度分布測定装置SALD-2001システム(島津製作所製))にて実測値を掲載した。
(実施例1)
生乳を15.0重量%、脱脂粉乳を9.1重量%、無塩バターを1.8重量%、不溶性カルシウムスラリー(カルシウム含量15重量%)を1.76重量%、CSK-1を0.01重量%、並びに合計100重量%となるよう原料水を添加し乳入り飲料のベースを調製した。CSK-1は、予め一部の原料水に分散溶解させ、分散剤として添加した。この乳入り飲料のベースの組成は、乳脂肪分2.2重量%、無脂乳固形分は9.8重量%、カルシウム含量は0.38重量%であった。
生乳を15.0重量%、脱脂粉乳を9.1重量%、無塩バターを1.8重量%、不溶性カルシウムスラリー(カルシウム含量15重量%)を1.76重量%、CSK-1を0.01重量%、並びに合計100重量%となるよう原料水を添加し乳入り飲料のベースを調製した。CSK-1は、予め一部の原料水に分散溶解させ、分散剤として添加した。この乳入り飲料のベースの組成は、乳脂肪分2.2重量%、無脂乳固形分は9.8重量%、カルシウム含量は0.38重量%であった。
乳入り飲料のベースを130℃2秒間のプレート式熱交換方式で均質化、殺菌・冷却処理を行い、冷却後の乳入り飲料を殺菌した1Lのポリカーボーネート製容器に充填し、10℃で最大15日間の保存を行い。保存後上清90%をパスツールピペットで、底に沈んだカルシウムの沈澱を巻き込まないよう静かに吸って除去した後に、誘導結合プラズマ(Inductively Coupled Plasma)発光法で、残りの10%に対し測定したカルシウム濃度を沈殿量とした。製造直後(保存開始時)の沈殿量を100とした場合に、5日保存後には101、10日保存後には108、15日保存後には118であった。沈殿量の変化は図1の■の通りであった。
(実施例2)
CSK-1の添加量を0.005重量%とした以外は、実施例1と同様の手法により乳入り飲料を調製した。この乳入り飲料の組成は乳脂肪分2.2重量%、無脂乳固形分は9.8重量%、カルシウム含量は0.39重量%であった。充填した乳入り飲料を10℃で最大15日間の保存を行い、保存中の沈殿量を測定した。製造直後(保存開始時)の沈殿量を100とした場合に、4日保存後には103、10日保存後には111、15日保存後には114であった。沈殿量の変化は図1の▲の通りであった。

CSK-1の不添加以外は、実施例1と同様の手法により乳入り飲料を調製した。この乳入り飲料の組成は乳脂肪分2.2重量%、無脂乳固形分は9.8重量%、カルシウム含量は0.39重量%であった。充填した乳入り飲料を10℃で最大15日間の保存を行い、保存中の沈殿量を測定した。製造直後(保存開始時)の沈殿量を100とした場合に、5日保存後には113、10日保存後には125、15日保存後には145であった。沈殿量の変化は図1の●の通りであった。
CSK-1の不添加以外は、実施例1と同様の手法により乳入り飲料を調製した。この乳入り飲料の組成は乳脂肪分2.2重量%、無脂乳固形分は9.8重量%、カルシウム含量は0.39重量%であった。充填した乳入り飲料を10℃で最大15日間の保存を行い、保存中の沈殿量を測定した。製造直後(保存開始時)の沈殿量を100とした場合に、5日保存後には113、10日保存後には125、15日保存後には145であった。沈殿量の変化は図1の●の通りであった。

CSK-1の代わりにλ-カラギーナンを0.01%添加した他は、実施例1と同様の手法により乳入り飲料を調製し、殺菌したガラスビンに充填した。この乳入り飲料の組成は乳脂肪分2.2重量%、無脂乳固形分は9.8重量%、カルシウム含量は0.39重量%であった。充填した乳入り飲料を10℃で14日間の保存を行い、底部を目視したところ、比較例1と同様に沈殿量が増加した。
CSK-1の代わりにλ-カラギーナンを0.01%添加した他は、実施例1と同様の手法により乳入り飲料を調製し、殺菌したガラスビンに充填した。この乳入り飲料の組成は乳脂肪分2.2重量%、無脂乳固形分は9.8重量%、カルシウム含量は0.39重量%であった。充填した乳入り飲料を10℃で14日間の保存を行い、底部を目視したところ、比較例1と同様に沈殿量が増加した。
(比較例3)
CSK-1の代わりにι-カラギーナンを0.01%添加した他は、実施例1と同様の手法により乳入り飲料を調製し、殺菌したガラスビンに充填した。この乳入り飲料の組成は乳脂肪分2.2重量%、無脂乳固形分は9.8重量%、カルシウム含量は0.39重量%であった。充填した乳入り飲料を10℃で14日間の保存を行い、底部を目視したところ、比較例1と同様に沈殿量が増加した。

CSK-1の代わりにキサンタンガムを0.01%添加した他は、実施例1と同様の手法により乳入り飲料を調製し、殺菌したガラスビンに充填した。この乳入り飲料の組成は乳脂肪分2.2重量%、無脂乳固形分は9.8重量%、カルシウム含量は0.39重量%であった。充填した乳入り飲料を10℃で14日間の保存を行い、底部を目視したところ、比較例1と同様に沈殿量が増加した。
(比較例5)
CSK-1の代わりにグアーガムを0.01%添加した他は、実施例1と同様の手法により乳入り飲料を調製しし、殺菌したガラスビンに充填した。この乳入り飲料の組成は乳脂肪分2.2重量%、無脂乳固形分は9.8重量%、カルシウム含量は0.39重量%であった。充填した乳入り飲料を10℃で14日間の保存を行い、底部を目視したところ、比較例1と同様に沈殿量が増加した。

(比較例7)
CSK-1の代わりにネイティブジェランガムを0.01%添加した他は、実施例1と同様の手法により乳入り飲料を調製した。この乳入り飲料の組成は乳脂肪分2.2重量%、無脂乳固形分は9.8重量%、カルシウム含量は0.39重量%であった。充填した乳入り飲料を10℃で14日間の保存を行ったところ、比較例1と同様に沈殿量が増加した。

(比較例8)
CSK-1の代わりに脱アシル型ジェランガムを0.01%添加した他は、実施例1と同様の手法により乳入り飲料を調製した。この乳入り飲料の組成は乳脂肪分2.2重量%、無脂乳固形分は9.8重量%、カルシウム含量は0.39重量%であった。充填した乳入り飲料を10℃で14日間の保存を行ったところ、比較例1と同様に沈殿量が増加した。
CSK-1の代わりに脱アシル型ジェランガムを0.01%添加した他は、実施例1と同様の手法により乳入り飲料を調製した。この乳入り飲料の組成は乳脂肪分2.2重量%、無脂乳固形分は9.8重量%、カルシウム含量は0.39重量%であった。充填した乳入り飲料を10℃で14日間の保存を行ったところ、比較例1と同様に沈殿量が増加した。
(実施例3)
生乳を15.0重量%、脱脂粉乳を9.1重量%、無塩バターを1.8重量%、平均粒径31μmの酸化マグネシウム(マグネシム含量60重量%)0.084重量%、CSK-1を0.01重量%、並びに合計100重量%となるよう原料水を添加し乳飲料のベースを調整した。CSK-1は、予め一部の原料水に分散溶解させ、分散剤として添加した。この乳飲料のベースの組成は、乳脂肪分2.2重量%、無脂乳固形分は9.8重量%、マグネシウム含量は0.062重量%であった。
生乳を15.0重量%、脱脂粉乳を9.1重量%、無塩バターを1.8重量%、平均粒径31μmの酸化マグネシウム(マグネシム含量60重量%)0.084重量%、CSK-1を0.01重量%、並びに合計100重量%となるよう原料水を添加し乳飲料のベースを調整した。CSK-1は、予め一部の原料水に分散溶解させ、分散剤として添加した。この乳飲料のベースの組成は、乳脂肪分2.2重量%、無脂乳固形分は9.8重量%、マグネシウム含量は0.062重量%であった。
乳飲料のベースを130℃ 2秒間のプレート式熱交換方式で均質化、殺菌・冷却処理を行い、冷却後の乳飲料を殺菌した50mlのポリプロピレン製容器に充填し、10℃で最大15日間の保存を行い、保存後上清90%をピペットで、底に沈んだマグネシウムの沈殿を巻き込まないよう静かに吸って除去した後に、誘導結合プラズマ(Inductively Cupled Plasma)発光法で、残りの10%に対し測定したマグネシウム濃度を沈殿量とした。製造直後(保存開始時)の沈殿量を100とした場合に、7日保存後には129、15日保存後には139であった。沈殿量の変化は図2の◆の通りであった。
(比較例9)
CSK-1の不添加以外は、実施例3と同様の手法により乳飲料を調製した。この乳飲料の組成は乳脂肪分2.2重量%、無脂乳固形分は9.8重量%、マグネシウム含量は0.062重量%であった。充填した乳飲料を10℃で最大15日間の保存を行い、保存中の沈殿量を測定した。製造直後(保存開始時)の沈殿量を100とした場合に、7日保存後には190、15日保存後には214であった。沈殿量の変化は図2の■の通りであった。
CSK-1の不添加以外は、実施例3と同様の手法により乳飲料を調製した。この乳飲料の組成は乳脂肪分2.2重量%、無脂乳固形分は9.8重量%、マグネシウム含量は0.062重量%であった。充填した乳飲料を10℃で最大15日間の保存を行い、保存中の沈殿量を測定した。製造直後(保存開始時)の沈殿量を100とした場合に、7日保存後には190、15日保存後には214であった。沈殿量の変化は図2の■の通りであった。
(実施例4)
生乳を15.0重量%、脱脂粉乳を9.1重量%、無塩バターを1.8重量%、平均粒径2μmのピロリン酸第二鉄(鉄含量24重量%)を0.008重量%、CSK-1を0.01重量%、並びに合計100重量%となるよう原料水を添加し乳飲料のベースを調整した。CSK-1は、予め一部の原料水に分散溶解させ、分散剤として添加した。この乳飲料のベースの組成は、乳脂肪分2.2重量%、無脂乳固形分は9.8重量%、鉄含量は0.00192重量%であった。

CSK-1の不添加以外は、実施例3と同様の手法により乳飲料を調製した。この乳飲料の組成は乳脂肪分2.2重量%、無脂乳固形分は9.8重量%、鉄含量は0.00192重量%であった。充填した乳飲料を10℃で最大15日間の保存を行い、保存中の沈殿量を測定した。製造直後(保存開始時)の沈殿量を100とした場合に、7日保存後には1033、15日保存後には1228であった。沈殿量の変化は図3の■の通りであった。

生乳を15.0重量%、脱脂粉乳を7.1重量%、無塩バターを2.9重量%、平均粒径5μmの炭酸カルシウムを0.173重量%、CSK-1を0.015重量%、並びに合計100重量%となるよう原料水を添加し乳入り飲料のベースを調製した。CSK-1は、予め一部の原料水に分散溶解させ、分散剤として添加した。この乳入り飲料のベースの組成は、乳脂肪分3.0重量%、無脂乳固形分は8.1重量%、カルシウム含量は0.18重量%であった。
生乳を15.0重量%、脱脂粉乳を7.1重量%、無塩バターを2.9重量%、平均粒径5μmの炭酸カルシウムを0.173重量%、CSK-1を0.015重量%、並びに合計100重量%となるよう原料水を添加し乳入り飲料のベースを調製した。CSK-1は、予め一部の原料水に分散溶解させ、分散剤として添加した。この乳入り飲料のベースの組成は、乳脂肪分3.0重量%、無脂乳固形分は8.1重量%、カルシウム含量は0.18重量%であった。

CSK-1の不添加以外は、実施例5と同様の手法により乳飲料を調整した。この乳飲料の組成は乳脂肪分3.0重量%、無脂乳固形分は8.1重量%、カルシウム含量は0.18重量%であった。充填した乳飲料を10℃で最大15日間の保存を行い、保存中の沈殿量を測定した。製造直後(保存開始時)の沈殿量を100とした場合に、7日保存後には178であった。
CSK-1の不添加以外は、実施例5と同様の手法により乳飲料を調整した。この乳飲料の組成は乳脂肪分3.0重量%、無脂乳固形分は8.1重量%、カルシウム含量は0.18重量%であった。充填した乳飲料を10℃で最大15日間の保存を行い、保存中の沈殿量を測定した。製造直後(保存開始時)の沈殿量を100とした場合に、7日保存後には178であった。
本発明によれば、不溶性ミネラル特に、カルシウム、マグネシウムまたは鉄の強化乳入り飲料の製造時において、蛋白の熱凝集沈澱やカルシウム等の二次凝集による沈澱が発生しないのみならず、7日または10日から15日を経過しても、カルシウム等の沈殿を一定量以下に抑え、乳入り飲料本来の風味を長時間に維持するカルシウム等の強化乳入り飲料およびその製造方法が提供される。
Claims (15)
- 乳成分、不溶性ミネラル、および、κーカラギーナンを含む分散剤を含有し、不溶性ミネラルの沈殿量が製造時を100とした際に、保存7日から10日後の不溶性ミネラル沈殿量が240以下であることを特徴とする不溶性ミネラル強化乳入り飲料。
- 前記不溶性ミネラルがカルシウムで、その沈殿量が製造時を100とした際に、保存10日後のカルシウム沈殿量が120以下であることを特徴とするカルシウム強化乳入り飲料。
- 前記不溶性ミネラルがマグネシウムで、その沈殿量が製造時を100とした際に、保存7日後の不溶性マグネシウム沈殿量が149以下であることを特徴とするマグネシウム強化乳入り飲料。
- 前記不溶性ミネラルが鉄で、その沈殿量が製造時を100とした際に、保存7日後の不溶性鉄沈殿量が240以下であることを特徴とする鉄強化乳入り飲料。
- 前記カルシウムの沈殿量が製造時を100とした際に、保存15日後のカルシウム沈殿量が130以下であることを特徴とする、請求項2に記載のカルシウム強化乳入り飲料。
- 前記マグネシウムの沈殿量が製造時を100とした際に、保存15日後のマグネシウム沈殿量が205以下であることを特徴とする、請求項3に記載のマグネシウム強化乳入り飲料。
- 前記鉄の沈殿量が製造時を100とした際に、保存15日後の鉄沈殿量が400以下であることを特徴とする、請求項4に記載の鉄強化乳入り飲料。
- 前記カルシウム強化乳入り飲料全量に対し、(a)無脂乳固形分で3重量%以上の乳成分、(b)0.01乃至0.5重量%の不溶性カルシウム、(c)0.005乃至0.02重量%のκーカラギーナンを含む分散剤を配合することを特徴とする請求項2および請求項5に記載のカルシウム強化乳入り飲料。
- 前記マグネシウム強化乳入り飲料全量に対し、(a)無脂乳固形分で3重量%以上の乳成分、(b)0.001乃至0.2重量%の不溶性マグネシウム、(c)0.005乃至0.02重量%のκーカラギーナンを含む分散剤を配合することを特徴とする請求項3および請求項6に記載のマグネシウム強化乳入り飲料。
- 前記鉄強化乳入り飲料全量に対し、(a)無脂乳固形分で3重量%以上の乳成分、(b)0.0001乃至0.005重量%の不溶性鉄、(c)0.005乃至0.02重量%のκーカラギーナンを含む分散剤を配合することを特徴とする請求項4および請求項7に記載の鉄強化乳入り飲料。
- 乳入り飲料全量に対し、(a)無脂乳固形分で3重量%以上の乳成分、(b)0.01乃至0.5重量%の不溶性カルシウム、(c)0.005乃至0.02重量%のκーカラギーナンを含む分散剤を添加することを特徴とする請求項2および請求項5に記載のカルシウム強化乳入り飲料の製造方法。
- 乳入り飲料全量に対し、(a)無脂乳固形分で3重量%以上の乳成分、(b)0.001乃至0.2重量%の不溶性マグネシウム、(c)0.005乃至0.02重量%のκーカラギーナンを含む分散剤を添加することを特徴とする請求項3および請求項6に記載のマグネシウム強化乳入り飲料の製造方法。
- 乳入り飲料全量に対し、(a)無脂乳固形分で3重量%以上の乳成分、(b)0.0001乃至0.005重量%の不溶性鉄、(c)0.005乃至0.02重量%のκーカラギーナンを含む分散剤を添加することを特徴とする請求項2および請求項5に記載の鉄強化乳入り飲料の製造方法。
- 乳成分、不溶性カルシウムまたは不溶性マグネシウムまたは鉄、および、κーカラギーナンを含む分散剤を配合し、加熱殺菌処理若しくは加熱滅菌処理する工程を特徴とする請求項11または請求項13のいずれかに記載の製造方法。
- 乳入り飲料が、牛乳、加工乳、乳酸菌飲料、または乳成分を含有する、コーヒー、紅茶、抹茶、ココア、または、果汁入り飲料のいずれかであることを特徴とする請求項11乃至請求項14のいずれかに記載の製造方法。
