Abstract
본 발명은 햄버거용 패티제조방법을 개시한다. 본 발명은, 닭, 쇠고기, 돼지고기 등의 육류와 새우, 오징어 등 어류들을 덩어리 형태로 삶는 단계와; 덩어리 형태의 고기를 1~30㎜의 크기를 갖도록 깍둑 썰기를 행하는 단계와; 양파, 양배추 당근 등의 야채를 후라이팬에 데쳐 야채를 준비하는 단계와; 깍둑 썰기된 고기와 야채를 빵가루, 깨, 치즈와 계란물 및 우유와 양념 등을 섞어 반죽을 만든후 패티 성형틀에 적재시키는 단계와; 성형틀을 오븐기에 넣고 220℃~240℃에서 8~12분간 가열하여 패티를 완성하는 단계;를 포함하여 된 것으로서, 치즈 첨가에 의한 완성된 패티가 탄력있고 손쉽게 부서지지 않아 불량률이 감소되며, 1차로 고기를 익힐때 고기를 삶는 것이기 때문에 굽거나 튀기는 과정에서 발생될 수 있는 발암물질 발생의 우려를 방지할 수 있다.
