Abstract
La préparation selon l'invention ainsi obtenue répond aux principes nutritionnels souhaitables pour une personne souffrant de diabète (procédé hypoglycémiant), d'un excès de cholestérol, (procédé d'absorption des graisses et leur élimination par voie naturelle), activant ainsi la perte de poids, pour une personne souffrant, en sus, d'un excès de poids.
Description
Préparation diététique alimentaire hypoqlycémiante, favorisant l'absorption des graisses: régulant le taux de cholestérol et favorisant le processus d'amaigrissement.
La présente invention concerne une préparation diététique alimentaire naturelle présentant un intérêt nutritionnel intéressant pour les personnes à besoins spécifiques, soumises à un régime alimentaires lié au diabète, à l'excès de cholestérol et/ou à l'excès de poids.
En effet, les personnes souffrant d'un déséquilibre de leur métabolisme, doivent en général, suivre un régime restrictif limitant les produits riches en sucres rapides et en acides gras (saturés).
Il en est de même pour les personnes souffrant d'un excès de poids et/ou sujettes à des risques cardio-vasculaires.
Il existe sur le marché alimentaire des produits de substitution, mais qui ne résolvent ces déséquilibres du métabolisme, tels que les sucres de substitution (pour le diabète).
Il existe également des produits à faible teneur en cholestérol, mais qui ne tiennent pas compte du profil lipidique et font intervenir le plus souvent une matière grasse tel que certaines huiles ou des graisses d'origine végétale tel que le coprah (pour l'excès de cholestérol)
De plus, ces produits diététiques ont souvent une utilisation ciblée -visant la réduction de l'appétit et/ou la substitution à l'un ou + des principaux repas (pour l'excès de poids) .
Des produits alimentaires de substitution, n'ont pas toujours un profil équilibré et ne répondent pas entièrement aux principes nutritiohnels lipidiques souhaitables.
Il existe également des produits à utiliser comme substitut de repas, mais qui sont présentés sous forme fluide, ce qui limite leur utilisation.
Ainsi, aucun produit actuellement disponible sur le marché alimentaire, ne présente un aspect et une qualité gustative satisfaisante et, qui puisse être nutritionnellement adapté aux régimes proposés pour ces déséquilibres du métabolisme susvisés, à savoir : le diabète, l'excès de cholestérol et l'excès de poids.
La présente invention se propose de combler cette lacune, en proposant une préparation alimentaire diététique compacte, pouvant accompagner les trois principaux repas de la journée.
La préparation diététique alimentaire est réalisée à partir de produits naturels, d'origine végétale : à teneur élevée en protéines > 11 ,8% (effet coupe faim). Riche en pectine et en cellulose. Très riche en calcium et en potassium.
La préparation de la présente invention répond donc aux principes nutritionnels souhaitables, contribuant ainsi à :
17 l'amélioration du contrôle du taux du sucre dans le sang et l'augmentation de la sécrétion de l'insuline chez les personnes diabétiques.
27 La diminution du niveau des graisses (lipides) dans le sang et la régulation du taux de cholestérol.
37 L'activation du processus d'amaigrissement.
Avantageusement, la préparation diététique de la présente invention est préparée à partir d'une composition à base de farines permettant d'obtenir un profil nutritionnel complet correspondant aux normes recommandées par les organismes de santé.
La préparation diététique, selon l'invention, présente l'avantage d'être hypoglycémiante, favorisant l'absorption des graisses: régulant le taux de cholestérol et favorisant le processus d'amaigrissement.
La préparation diététique, selon l'invention, présente l'avantage de rassasier, à partir de petites quantités ingérées, de favoriser le processus de régulation de l'appétit et de perte de poids.
Avantageusement, la préparation diététique de la présente invention, est préparée à partir de deux farines, par exemple la farine de maïs et la poudre de cactus.
De manière à obtenir en moyenne un profil nutritionnel correspondant aux quantités recommandées par les organismes de santé, la préparation diététique selon l'invention, est réalisée d'au moins deux autres farines, à savoir les farines complètes de blé dur et de seigle.
Afin d'avoir un profil nutritionnel encore plus affiné et complet, l'objet de l'invention est préparé à partir d'au moins une autre farine, à savoir le son d'avoine.
De façon à correspondre au profil nutritionnel pouvant être conseillé aux personnes souffrant d'un déséquilibre du métabolisme traduit par un excès de cholestérol ou un diabète et/ou une prise de poids, la préparation diététique est réalisée à partir d'un mélange de farines dans les proportions comprise entre 20 et 40% pour la farine complète de blé dur et de manière préférentielle 22%, entre 20 et 40% pour la farine complète de seigle et de manière préférentielle 22%, entre 20 et 40 % pour le son d'avoine et de manière préférentielle 20%, entre 10 et 20% pour la farine de mais et de manière préférentielle 11 %, entre 10 et 25% et de poudre de cactus et de manière préférentielle 10% . Soit, dans une teneur d'au moins 85% de la teneur globale.
De façon à équilibrer l'apport en protides, glucides, acides aminés et des minéraux contenus dans le produit final sous forme de préparation boulangère toastée ( biscottes).
De plus, la présence de Cellulose dans la farine de cactus, généralement non attaqué par les enzymes digestives, mais utile à l'organisme, augmente le volume fécal et facilite remarquablement le transit intestinal et l'élimination.
De plus, la teneur en fibres de la préparation intervient dans la rapidité d'absorption des principes énergétiques (glucides en particulier) en la diminuant.
De plus, l'ingestion de protéines contenues dans le son d'avoine notamment, stimule la synthèse de glucose par l'intestin et génère ainsi un signal de satiété pour le cerveau. Ces données, permettent d'envisager des approches thérapeutiques de l'obésité.
La préparation diététique de la présente invention peut rentrer dans le cadre d'une alimentation équilibrée, à vie, sans aucun danger pour la santé. Elle permet de couvrir les besoins journaliers en nutriments et assure une perte de poids sans régime restrictif et draconien, pouvant entraîner carences et perturbation de la flore intestinale.
De plus, la préparation diététique de la présente invention présente avantageusement un apport élevé en protéines végétales compris entre 10 et 13% nnπr 1 ΩΩπr
De plus, la préparation diététique de la présente invention contient avantageusement la présence de sucres réducteurs compris entre 5 et 6 ,6% pour 100gr .
De plus, la préparation diététique de la présente invention contient avantageusement l'absence de matières grasses ajoutées, hormis une faible teneur de 0,6% présente dans la farine de cactus qui rentre dans la composition du produit objet de la présente invention.
La préparation diététique de la présente invention est maintenant décrite à partir uniquement d'un mode de réalisation particulier et en aucun cas limitatif de l'invention.
La fabrication de la dite préparation se fait à partir d'un premier mélange contenant les farines sélectionnées, soit un poids du mélange solide compris entre 80 et 90%, et de manière préférentielle 85% de la teneur globale.
Ce mélange d'ingrédients est ensuite malaxé avec une matière fluide composée d'eau , de levain et de sel, dans les proportions comprises entre 15 et 25% et de manière préférentielle 15% du poids global obtenu en mélangeant éléments solides et éléments fluides de la composition.
Ce mélange est laissé au repos à température ambiante pour une première opération de fermentation.
On obtient ainsi un mélange plus aéré et léger.
Ce mélange est réparti dans des moules à biscottes avec couvercles et laissé 20 mn à température ambiante pour une seconde fermentation.
Ce mélange contenu dans les moules est enfourné à une température comprise entre 100 et 2000C1 et de manière préférentielle 1500C.
Ce mélange contenu dans les moules est enfourné pour une durée de cuisson de 20 à 30 mn, et de manière préférentielle 25 mn.
Le refroidissement du mélange est par la suite obtenu par démoulage pour une aération totale. Cette aération se fait à une température comprise entre 20 et 300C, et de manière préférentielle 25°C.
L'aération du mélange se poursuit jusqu'à obtention d'une température équivalente à la température ambiante.
Le mélange est une nouvelle fois refroidi par passage dans un refroidisseur à une température comprise entre 15 et 200C, et de manière préférentielle 18°C.
Le refroidissement1 du mélange doit se poursuivre pendant au moins δheures consécutives, et de manière préférentielle 10 heures.
Le mélange ainsi stabilisé dans sa texture est ensuite découpé en tranches régulières comprises entre 2 et 5mm d'épaisseur, et de manière préférentielle 3 mm d'épaisseur.
Les tranches ainsi obtenues sont disposées dans des plaques métalliques pour torréfaction.
La torréfaction s'obtient par cuisson à double face.
La torréfaction s'effectue à une température ne dépassant pas 175°C, et de manière préférentielle 150°C.
La durée de torréfaction doit être comprise entre 15 et 35 mn, et de manière préférentielle 25 mn.
Les tranches sont, par la suite, retirées des plaques pour aération et refroidissement total.
L'aération et refroidissement des tranches se poursuivent jusqu'à obtention d'une température équivalente à la température ambiante.
Ces opérations s'effectuent à une température comprise entre 20 et 300C, et de manière préférentielle 25°C.
Le conditionnement des tranches ainsi toastées, par la mise eh paquets, se déroule dans une dernière étape.
La préparation de l'invention présente les caractéristiques nutritionnelles suivantes :
- une teneur élevée en protéines végétales, c'est-à-dire compris entre 11 ,8 et 13,5%, et de manière préférentielle 13%.
Une teneur garantie en fibres supérieure à 50%, et de manière préférentielle 50%.
- Une présence de pectine et de cellulose.
Une teneur élevée en calcium, soit 46 mg pour 100 g.
- et en potassium.
Un taux de matière grasse compris entre 0 ,5% et 1 ,5 %, et de manière préférentielle 6%.
En outre, la préparation de l'invention est considérée comme rentrant dans la catégorie de panifications toastées, qui permet sa consommation comme substitut du pain frais et/ou des féculents.
Claims
1. Préparation diététique alimentaire à base de céréales, pour la fabrication industrielle de produits alimentaires.
Caractérisée en ce que les céréales comportent du son d'avoine, de la farine de maïs jaune, de la poudre de cactus, des farines complètes de blé dur et de seigle, dans une teneur d'au moins 85% de la teneur globale et sont mélangées à au moins un composant fluide et à un agent favorisant la prise en masse de la préparation lors de la cuisson.
2. Préparation selon la revendication 1 , caractérisée en ce que le composant fluide est de l'eau et du levain.
3. Préparation selon la revendication 2, caractérisée en ce en ce que l'agent favorisant la prise en masse de la préparation lors de la cuisson, est le levain.
4. Préparation selon l'une des revendications précédentes, caractérisée en ce qu'elle est préparée à partir d'un mélange de quatre farines dans les proportions comprises entre 20 et 40% pour la farine complète de blé dur et de manière préférentielle 22%, entre 20 et 40% pour la farine complète de seigle et de manière préférentielle 22%, entre 20 et 40 % pour le son d'avoine et de manière préférentielle 20%, entre 10 et 20% pour la farine de mais et de manière préférentielle 11 %, entre 10 et 25% et de poudre de cactus, et de manière préférentielle 10% .
5. Préparation selon la revendication 4, caractérisée par un apport en matière fluide composée d'eau et de levain, dans les proportions comprises entre 15 et 25% et de manière préférentielle 15% du poids global des éléments solides de la composition.
6. Préparation selon la revendication 9, caractérisée par un faible apport en matières grasses inférieur à 1 ,5g pour 100g de préparation.
7. Préparation selon la revendication 10, caractérisée par une teneur en protéines végétales, soit entre 11 ,8 et 13 g pour 100g de préparation.
8. Préparation selon la revendication 11 , caractérisée par une teneur en fibres supérieure à 50%, provenant des sons d'avoine, de blé et de seigle.
9. Préparation selon la revendication 12, caractérisée par une présence de pectine provenant de la poudre de cactus, soit jusqu'à 1 ,9 g pour 100g.
10. Préparation selon la revendication 13, caractérisée par une présence remarquable de cellulose provenant de la poudre de cactus./.
