Abstract

【課題】発酵乳の製造に脱脂乳を用いる際に,脱脂乳の加熱処理の条件にかかわらず,十分な硬さを有する発酵乳を製造する方法を提供する。 【解決手段】第1の脱酸素工程において,脱脂乳に含まれる酸素濃度を低減し,第1の殺菌工程において,前記第1の脱酸素工程の後の脱脂乳を加熱殺菌し,水分除去工程において前記第1の殺菌工程の後の脱脂乳から水分を除去し,ヨーグルトミックス調製工程において,前記水分除去後の脱脂乳を用いてヨーグルトミックスを調製し,発酵工程において,前記調製したヨーグルトミックスを発酵させる。
