Abstract

L'invention appartient au domaine de la pharmacologie biomoléculaire et permet de fabriquer une composition capable de réduire la carence en protéines de l'organisme d'un mammalien. Elle concerne également un procédé de fabrication correspondant et porte sur une composition qui se présente comme un produit du traitement biologique ou chimique d'une biomasse végétale ou de ses déchets avec la participation de micro-organismes. La matière de base utilisée est une biomasse hydrocarbonée d'origine végétale, la partie hydrocarbonée représentant pas moins de 5 % de la biomasse initiale totale. La biomasse est mélangée avec de l'eau, et l'on y ajoute des bactéries bifidus, prises comme ferment initial, avec une teneur de 0,2 à 0,5 % pour chaque litre de mélange aqueux. Le mélange est incubé à une température de 36 à 42 °C pendant au moins 6 h, le pH étant maintenu à un niveau de 6,75 ? 0,05 grâce à l'apport d'hydroxyde d'ammonium. Le mélange pâteux ainsi obtenu peut être utilisé en tant que précurseur de protéine assimilable. L'invention concerne aussi une caractéristique du procédé de fabrication, qui comprend le traitement de la biomasse initiale par des bactéries de bifidus et l'apport fractionnel d'hydroxyde d'ammonium visant à maintenir un niveau de pH à 6,75 ? 0,05, le produit final se présentant comme une masse comprenant de précurseurs de protéine assimilables. L'invention permet ainsi d'élargir la base de fabrication de protéines destinées aux produits alimentaires ou aux aliments.
