Abstract

L'invention concerne un procédé pour décongeler de la viande qui a été congelée sous forme de blocs (1), lequel consiste à utiliser un appareil pour effectuer la séparation initiale d'un bloc de viande (1) avant qu'il soit placé dans un contenant rotatif (7), ledit bloc de viande (1) étant soumis, avant son traitement dans le contenant rotatif (7), à une pression qui lance un processus de division du bloc de viande (1) en morceaux individuels (2). Cette pression peut être appliquée diagonalement par rapport au bloc de viande (1). L'invention concerne également un appareil pour la mise en oeuvre dudit procédé, lequel comprend une pluralité de pistons (3, 4, 5, 6) qui coopèrent soit par paires, soit avec une surface opposée ferme, pour exercer une pression sur le bloc de viande (1). Les faces des pistons (3, 4, 5, 6) peuvent être planes ou comprendre des bosses ou des creux de façon à pouvoir agir sur au moins une des diagonales du bloc de viande (1).
