Abstract

L'invention concerne un procédé de préparation d'une composition lyophilisée qui comprend les étapes suivantes :a) préparation d'un concentré de bactéries lactiques dans un milieu liquide, ledit milieu liquide comprenant : (i) un composé antioxydant hydrosoluble ou une association de composés antioxydants hydrosolubles ; et (ii) un composé ou une association de composés augmentant la température de transition vitreuse du produit lyophilisé; b) lyophilisation du concentré de bactéries lactiques lioprotégé préparé à l'étape a), selon les étapes de lyophilisation suivantes : (b1) congélation du concentré de bactéries ; (b2) dessication primaire, de préférence dans des conditions opératoires douces ; (b3) dessication secondaire jusqu'à obtenir une composition bactérienne lyophilisée ayant une activité de l'eau d'environ 0,1 et dont la température de transition vitreuse (Tg) est supérieure d'au moins 20°C à la température de stockage (Ts) prédéterminée.
