Abstract
L'invention porte sur des compositions d'acide lactique et/ou glycolique thermisées qui sont utilisées dans le traitement antimicrobien de surfaces, de préférence de surfaces alimentaires telles que des fruits, des légumes et des carcasses d'animaux, et des surfaces de substances particulaires telles que la viande hachée ou autres matières auxquelles les compositions peuvent être mélangées (figure 1). Les compositions d'acide lactique et/ou glycolique thermisées ont un poids moléculaire moyen de préférence inférieur ou égal à environ 700 D et sont des mélanges de molécules uniques de complexes d'acides et d'esters des molécules d'acide contenant de deux à moins de dix molécules par complexe (figure 3). De préférence, ces compositions comprennent environ plus de 50 % en poids des complexes d'ester, et idéalement environ 75 %. L'invention porte également sur des solutions aqueuses de ces compositions et sur des procédés de fabrication et d'utilisation de ces compositions, ainsi que sur les substances alimentaires les comprenant.
