- the said prismatic block 7 defines in its interior a distribution chamber of the fluid to be injected, which it is constituted by a plurality of vertical ducts 3, cylindrical, through, arranged equidistant and distributed along several rows parallel to each other, as best seen in Fig. 4, being mounted inside each of said vertical ducts 3 an injection needle 4 so that it can slide along it.
- the inside diameter of said ducts 3 is slightly larger than the outside diameter of the needles 4 so that between the needles 4 and the inner wall of the ducts 3 there is a gap that forms an annular cavity that is filled by the fluid to be injected.
- the corresponding needle 4 is centered and its movement guided by a few bushings 5 established in the bosom of sleeves 9 threaded into the mouths of entry and exit of each duct 3.
- the conduits 3 of each row are communicated with each other by a transverse conduit 10, and each of these transverse conduits 10 links at its ends with separate distribution conduits 11 integrated in said support elements 6 attached to each side of the block 7, said Distributor pipes 11 in communication with said inner ducts 2 of the hollow columns 1, whose ducts 2 are in turn connected to the fluid supply reservoir to be injected.

- Each needle 4 faces, at its upper end 18, the carrier of the block 17, distal of the penetration tip 14, against elastic retention means, to allow a retraction of the needle 4 with respect to the head in case of finding bone in the piece to be injected.
- These elastic means are preferably formed, as best shown in the enlarged detail of Fig. 1, by small pistons 26 that can be moved by sliding inside some cylindrical chambers 27, aligned with the path of the needles 4, against the force of a fluid, typically air, under pressure introduced therein through an inlet 28.
- Each of said sliding pistons 26, offers on its base face, facing the upper end of a corresponding needle 4, a recess 29 suitable to accommodate said end 18 distal to the end of the penetration tip 14 thereof, in case of needle recoil 4.
- each conduit 3 is slightly greater than the maximum permissible recoil that an injection needle 4 may experience , in case of finding bone in the piece to be injected.
- the set of cylindrical chambers 27 is mounted between two plates 19, spaced apart, that form a support frame located above said block 7, whose frame is configured in the form of two frames 30a, 30b lockable in operative position and capable of tilting towards the outside of the head (to a position shown in dashed lines in Fig. 1) to release the upper ends of the ducts 3 and allow access and eventual replacement of the needles 4.
- said means for supplying the fluid substance to be injected into the head of the present invention are activated only when the head has descended completely, each needle 4 is stuck to the maximum in the meat piece and the injection is started.
- the fluid is supplied under a constant pressure greater than 5 kg / cm 2 , preferably of the order of 8-12 kg / cm 2 , and said holes 15 located in the immediate area to the penetration tip 14 of the needle 4 have a diameter of the order of about 0.6 mm. This combination of pressure and hole size determines that the fluid, when leaving, is sprayed while the needle is penetrated into the piece of meat material, evenly distributed between the muscle fibers thereof.
- the head includes retractable tampers 31 that act by pressing the meat piece when the head descends and the needles 4 penetrate the pieces of meat material and act as extractors when the head is raised, holding the pieces of meat material to help unlock the needles 4.
- These tampers 31 are guided by vertical bars 32 and linked to elastic means, such as helical springs 33 (Fig. 3).
- the tampers are independent of each other, as shown in Fig. 5, and each is fixed to a pair of said guide rods 32 and linked to one of said helical springs 33 arranged around a rod 34 fixed to the ram 31 between the bars 32.
- Each ram 31 includes holes 35 for passage through the needles 4, whose holes 35 have a diameter greater than that of the needle 4 except in a lower end area 36, where the pitch diameter is adjusted to that of the needles 4.
- the thickness of the rammers 31 is such that the larger diameter portion of the holes 35 covers the entire area of the needle near the penetration tip 14 where the various injection holes 15 are distributed, in a situation prior to injection .
