Abstract
L'invention se rapporte à un procédé et un appareil destinés à la manipulation de volailles abattues, en particulier de poulets à griller. Selon ce procédé, chaque poulet est fixé, au cours du procédé d'abattage secondaire, où l'on ouvre le poulet et on en enlève les organes internes et les entrailles, à un dispositif de fixation (2, 32) individuel et mobile de sorte que le poulet assujetti puisse être tourné de manière précise dans des positions requises autour d'un axe horizontal (24) parallèle au sens de transport. Le poulet est maintenu dans ledit dispositif de fixation (2), côté blanc vers l'extérieur, de sorte que ledit axe de rotation (24) passe à travers le poulet perpendiculairement à l'épine dorsale et au bréchet du poulet. Chaque poulet, maintenu dans ledit dispositif de fixation mobile (2), peut en outre être tourné autour d'un axe vertical perpendiculaire au sens de transport du poulet. Il est ainsi possible de maintenir de façon précise et simple chaque poulet de sorte qu'au cours du procédé d'abattage secondaire, il puisse présenter des positions de rotation requises autour d'un axe horizontal parallèle au sens principal de transport du poulet. De cette manière, il est possible de positionner le poulet, au cours du procédé délicat d'éviscération, de façon que les organes et les entrailles, y compris les intestins, soient suspendus, après l'éviscération, hors du poulet et que la partie externe du poulet n'entre pas en contact avec les intestins.
