Abstract
A method for fructose crystallization comprises the cooling of fructose syrup to the supersaturation state, introducing of inoculating crystal followed by their growing at pumping of fructose-containing solution and separation of crystals from mother waters. For increasing of yield and improving of granulometric composition of fructose the sampling of massecuite 0.75-2,5% in 1 part to its total mass during 40-42 hours is made after achievement of crystal concentration in massecuite 30-35%, heating of sampled part of massecuite on 5-10°C higher than the temperature of total massecuite mass and return of heated massecuite into starting mass followed by the mixing.
