Abstract
Способ производства яблочного пектинового концентрата включает промывание яблочных выжимок водой до содержания сухих растворимых веществ 0,4-0,9%, прессование, гидролиз лимонной кислотой при температуре 72-85 °С, рН 2,5-3,4, одновременное экстрагирование и охлаждение водой при соотношении гидролизная масса : вода 1:(2,5...4,0), деление, осветление, фильтрование, концентрирование до содержания пектиновых веществ 2,5-4,5% при температуре 45-65 °С и консервирование.
