Abstract
The invention is referred to alcoholic beverage industry, in particular, to liqueur production. The liqueur, which contains fortified chokeberry juice, fortified apple juice, a mountain-ash raw material ingredient, citric acid, sugar syrup, ethyl alcohol rectified, contains the cinnamon infusion of the 1st and 2nd discharge additionally, and as the mountain-ash raw material comprises fortified mountain-ash juice in the following ratio of the ingredients per 1000 dal of the finished product: fortified chokeberry juice, 637.5 - 862.5 l, fortified apple juice, 3442.5 - 4657.5 l, fortified mountain-ash juice, 212.5 - 287.5 l, cinnamon infusion of 1st and 2nd discharge, 18.23 - 24.73 l, citric acid, 5.95 - 8.05 kg, sugar syrup 65.8%, 2762.5 - 3737.5 l, rectified ethyl alcohol and water the rest. Owing to this fact the liqueur is obtained of the red colour with cherry tint, with the palatable sweet taste of a slightly astringent flavour, composite aroma with the cinnamon tint enriched with biologically active substances which makes it possible to increase organoleptic indices and medicinal properties of the liqueur.
