Abstract
Винахід належить до харчової промисловості та може використовуватись при виділенні стабільних, їстівних білково-ліпідних харчових продуктів з рослинної сировини за допомогою рідких побічних продуктів молочного виробництва, що використовуються у якості рідкого екстрагувального середовища. Винахід також стосується їстівних продуктів, а саме емульгаторів, що утворюються в результаті екстракційної обробки цільних бобів сої сирною сироваткою. Спосіб одержання білково-ліпідного комплексу з твердої рослинної сировини включає неперервне змішування рослинної сировини з екстрагувальним агентом із утворенням суспензії й наступним розділенням останньої на твердофазний залишок та рідку фазу, що містить білково-ліпідний комплекс. У якості екстрагувального агента використовується побічний молочний продукт.
