本發明係關於含黑醋大蒜作為有效成分,用以增強黏膜免疫之食品。

Description

黏膜免疫增強用食品
本發明為關於用以增強黏膜免疫之食品。
大蒜(Allium sativum)已知具有如提高γ δ T細胞及NK細胞的活性,有增強免疫細胞機能之效果(非專利文獻1)。
黑醋係在約200年前,開始在日本鹿兒島縣福山地區製造,以米、米麴及水在壺中,以包含糖化、酒精醱酵及醋酸醱酵的三個步驟之傳統製造方法所製造。黑醋曾被指出具有脂質代謝改善作用、紅血球變形機能改善作用、抗過敏作用、血壓調整作用、血糖調整作用等。
黑醋大蒜被指出具有滋補強壯及恢復疲勞的效果,已市售多種補充食品。然而,在經過實驗數據證實,黑醋大蒜之具體的免疫調節作用方面,目前所知並無任何報告。

本發明係提供用以增強黏膜免疫的食品。
本發明人等,致力研究之結果,意外地發現,黑醋大蒜增強唾液中之分泌性免疫球蛋白A的釋出,而完成本發明。亦即,本發明為以下所示之項。[1]一種用於使黏膜免疫增強的食品,其係含有黑醋大蒜作為有效成分;[2]如[1]項所述之食品,其中黑醋為有機發芽糙米黑醋;[3]如[1]項或[2]項所述之食品,其中大蒜為有機大蒜;[4]如[1]項至[3]項所述之食品,更含有有機黑醋醪。
本發明中,黑醋大蒜係指將大蒜浸漬在黑醋者。浸漬期間至少2週,而以3個月以上為佳。視情形,黑醋大蒜亦可再含有黑醋醪。黑醋大蒜,可將其全體粉末化,以冷凍乾燥為佳。
本發明中,大蒜可使用已往以來一般已知之食用者。大蒜以利用有機農業所栽培的大蒜(本發明中,亦稱為有機大蒜。)為佳。有機農業係指基本上未使用化學合成肥料及農藥而且不利用基因重組技術,並使用盡可能減低來自於農業生產對環境之負擔的農業生產方法所進行之農業。更具體言之,在3年以上未使用農藥及化學肥料的農田所栽種者,即可稱為有機農產物(有機農產物之日本 農林規格)。
本發明中,黑醋可使用已往以來一般已知之食用黑醋,而以米黑醋為佳。米黑醋,係穀物醋中,原材料方面只使用米(除去糙米之全部米糠層而碾白者以外。以下之項中亦相同。)或者其中再加上小麥或大麥者,且米的使用量係穀物醋每1L為180g以上,並且,係以醱酵及熟成而著色為褐色或黑褐色者(食用醋品質表示基準,日本平成23年8月31日日本消費者廳公告第8號)。
本發明中,黑醋醪係指黑醋製造過程中所產生之沉澱物。
本發明之食品,可以軟膠囊、錠劑、硬膠囊、粉末、顆粒之形態利用。
本發明的食品之機能方面,例如,可表示為黏膜免疫之增強、疾病之預防、免疫力之提高、上呼吸道感染之預防、流行性感冒、感冒等之感染預防。
本發明之食品,可增強黏膜免疫。
第1圖所示為黑醋大蒜之攝取對於唾液中之sIgA(分泌性免疫球蛋白A)之釋出之影響的經時變化。縱軸為唾液中sIgA釋出速度之變化(μg/分鐘)。Placebo(安慰劑組)為P組,Active(活化組)為A組。
[實施例]
以下,再舉實施例進一步詳細說明本發明,惟本發明並不限定於此。
[實施例1]
先將54名受試者隨機分為2個組,在P組(28人)中投予安慰劑食品,在A組(26人)中投予食品黑醋大蒜。受試者分別每1日攝取6個膠囊。每一日的攝取量(即6個膠囊)之組成如下所示。
唾液中之sIgA的測定
受試者先在試驗前以150mL之水,進行口中清洗2次、漱口2次。在坐下15分鐘之後,受試者再以Salisoft(Sarstedt公司,Numbrecht,德國)採取唾液120秒。並記錄所回收的唾液量。該sIgAno唾液中的濃度再依照BML公 司之公司內操作程序以免疫比濁法進行測定。
在A組方面,在第4週時,唾液中之sIgA的釋出速度,顯著地較P組為高(P=0.028)(第1圖)。A組在第8週的速度,亦較P組為高(第1圖)。由試驗前之值的經時變化,顯示黑醋大蒜攝取後sIgA之分泌速度的增加傾向。
試驗中,亦未確認到有任何不良事件。
由以上之結果咸認,含有黑醋大蒜的食品之攝取,對黏膜免疫的增強係有助益。
sIgA為構成黏膜免疫之主要的效應分子,因此對如轉糖鏈球菌(Streptococcus mutans)及牙齦卟啉單胞菌(Porphyromonas gingivalis)之病原體可提供防禦的重要最前線。推測管腔sIgA可阻礙病原體對黏膜上皮細胞之附著,而促進病原體的細胞內中和化。IgA分泌細胞係在黏膜相關之淋巴組織中分化。因此大部分的IgA分泌細胞係存在於腸黏膜。已有越來越多的證據顯示,抗體分泌細胞向腸的移動在賦予防禦性免疫反應為重要者。本發明之食品係以膠囊提供,使消化道成為其所含成分的最早暴露之組織。因此,咸認消化道中之免疫系統最先為黑醋大蒜所刺激,其次,再藉著向抗體分泌細胞的口腔內黏膜細胞移動而影響唾液中之sIgA的釋出。

Claims (4)

  1. 一種用於使黏膜免疫增強的食品,其係含有黑醋大蒜作為有效成分。
  2. 如申請專利範圍第1項所述之食品,其中黑醋為有機發芽糙米黑醋。
  3. 如申請專利範圍第1項或第2項所述之食品,其中大蒜為有機大蒜。
  4. 如申請專利範圍第1項至第3項中任一項所述之食品,更含有有機黑醋醪。
