Abstract

Bu buluş hali hazırda gıda, eczacılık ve sağlık sektöründe kullanılan ve amigladin gibi biyoaktif bileşenleri içeren ve fonksiyonel özellikteki gıda maddelerinden bir tanesi olan acı kayısı çekirdeğinin kontrollü salınımına imkan veren bir enkapsülasyon tekniğinin geliştirilmesi ve bu teknik ile mikroenkapsüle edilmiş acı kayısı çekirdeğinin üretimi ile ilgilidir. Bu amaçla vücuda alındıktan sonra kontrollü salınımı hedeflenen bir biyoaktif bileşen olan amigdalin, acı kayısı çekirdeğinden ekstrakte edilmeden öğütülerek mikro boyuta indirgenmiş ve doğrudan taşıyıcı özellikteki bir biyopolimer olan maltodekstrin ile belli koşullarda homojenize edilmiş, püskürtmeli kurutucu ile çözgen uzaklaştırılıp enkapsülasyonu işlemi gerçekleştirilmiştir.
