Abstract

Domates esasli bir ürün hazirlamaya mahsus bir yöntem olup, bu yöntem asagidaki kademleri içerir: (a) bir domates parçasina poligalaturonaz deaktive olacak ancak pektinmetil-esteraz ve tercihan peroksidaz deaktive olmayacak sekilde çok yüksek basinç uygulanmasi; b) domates parçasinin, arzu edilen bir kivami saglamak üzere endojen pektinmetil esteraz ve tercihan taze aroma ve/ veya tad profili gerçeklestirmek üzere peroksidaz ile birlikte inkübe edilmesi; ve c) pektin-metilesteraz ve herhangi bir peroksidazin deaktive edilmesi.
