Задачей изобретения является повышение лечебных свойств и биологической ценности продукта, улучшение органолептических показателей. Это достигается тем, что в известном способе производства кефира с проведением процессов нормализации, гомогенизации, термической обработки, охлаждения до температуры заквашивания, внесения кефирной закваски, сквашивания, охлаждения и розлива осуществляют внесение кефирной закваски одновременно с биомассой бифидобактерий и/или в процессе сквашивания в термически обработанное и охлажденное до 22 - 28oC молоко вносят биомассу бифидобактерий в соотношении:
