The essence of the invention: ripe milk or a mixture of fresh with the addition of 25% ripe milk pasteurizes at a temperature of 74-78 o C with a holding time of 11-15 s and cool to 34-38 o C. Pasteurization of milk at 82-86 o C. milk is added with an aqueous solution of calcium chloride at the rate of 15-25 g per 100 kg of processed milk, bacterial fermentation of lactic streptococci in the amount of 2 - 4% and 0.1 - 2.0 g of milk-clotting enzyme per 100 kg of milk. Lactic acid bacteria starter culture is prepared on the basis of dry bacterial starter culture for hard, small, soft and brine cheeses with a low second-heating temperature or the bacterial preparations BP - Uglich N 4, BP - Uglich - 5A, or Bioantibut.
The milk with the added ingredients is kneaded for 4-6 minutes and left alone to clot. The duration of milk coagulation is 40-60 minutes. The finished clot should be dense, have sharp edges in the cut and secrete a small amount of transparent serum.
The clot is carefully cut to obtain particles with a face size of 20-30 mm and knead for 13-17 minutes. At the end of kneading, whey is selected, after which table salt is added at the rate of 500 - 700 g per 100 kg of milk,
Before forming, the residual whey is removed and the prepared chopped garlic is added at the rate of 150 g of peeled garlic per 100 kg of the mixture.
Garlic is peeled, washed at a water temperature of 55 - 65 o C and chopped. You can use dried garlic canned with table salt.
The cheese mass with garlic is evenly distributed in forms, zosterol dissolved in pasteurized chilled water is added and self-pressed. The total duration of self-pressing is 12 - 16 hours with periodic turning of cheese. At the beginning of self-pressing for 2.0 - 2.5 hours, the process is carried out at a room temperature of 15 - 25 o C. The first turning over is performed after 15 - 25 minutes, and the next after 1.5 - 2.0 hours
After the second inversion, the cheese is transferred to a refrigerator with a temperature of 8 - 12 o C and the process of self-pressing is continued for 10 - 14 hours. By the end of the self-pressing, the cheese takes the necessary shape, and its dough becomes sufficiently monolithic.
The cheese is added in brine with a mass fraction of table salt of 18 - 20% at a brine temperature of 8 - 12 o C. The duration of salting of cheese, depending on the presence of moisture in it, is 15 - 60 minutes. After salting, the cheese is kept at 8 - 12 o C and a relative humidity of 90 - 95% for 10-12 hours and packaged.
Zosterin - pectin from marine herbs contributes to an intensive reduction in blood cholesterol, which is of exceptional importance in diseases of the liver, gall bladder, heart and blood vessels. The degree of binding of heavy metals by pectins depends on the degree of methoxylation: the lower it is, the more intensely the pectin binds heavy elements. In terms of galacturonic acid content, pectin from sea grass is superior to known pectins, and in terms of methoxylation, it is much lower, which leads to a higher activity of pectin from sea herbs in relation to the binding and excretion of heavy metals from the body.
The use of zosterol as a dietary supplement has an antiulcer effect, normalizes the function of the gastrointestinal tract, strengthens the feeling of satiety, thereby facilitating the tolerance of low-calorie diets.
Zosterin has antitumor properties and the ability to prolong the life of normal animals, i.e. act as a potential geroprotector.
Physico-chemical characteristics of cheese are given in the table.
