В результате происходит гидролиз протопектина и переход первоначально содержащихся в сырье и образующихся в результате гидролиза пектиновых веществ в экстракт. Экстракт отделяют от шрота. Возможно осуществление повторного экстрагирования шрота с объединением полученных экстрактов. При высоком гидромодуле полученный экстракт предварительно концентрируют одним из известных методов, например упариванием, вымораживанием или обратноосмотической обработкой. В экстракт или его концентрат добавляют ацетон. В результате дегидратации происходит осаждение пектина. Осадок отделяют от надосадочной жидкости одним из известных методов, например отстаиванием, фильтрованием, центрифугированием или декантированием. Для удаления балластных веществ осуществляют промывку отделенного осадка ацетоном, а затем удаляют ацетон из очищенного целевого продукта. Для этого при давлении выше атмосферного осуществляют промывку целевого продукта жидкой двуокисью углерода. Ацетон неограниченно растворим в жидкой двуокиси углерода и легко отделяется от нерастворимого в ней пектина. После завершения промывки давление сбрасывают до атмосферного. В результате двуокись углерода переходит в газовую фазу и выделяется из пектина. Попадание двуокиси углерода в атмосферу не может вызвать взрыва или пожара, поскольку ее горение в кислороде воздуха невозможно. Отделенный в результате промывки двуокисью углерода ацетон выделяется из последней при некотором повышении температуры и/или снижения давления до значений, при которых двуокись углерода переходит в газовую фазу. Разделение двуокиси углерода и ацетона происходит при параметрах, исключающих испарение ацетона. Отделенный в жидкой фазе ацетон может быть повторно использован в технологическом процессе. Газовая фаза двуокиси углерода, полученная после выделения из нее ацетона, путем охлаждения и/или компремирования ожижается и возвращается в цикл для повторного использования. The precipitate is separated from the supernatant by one of the known methods, for example, sedimentation, filtration, centrifugation or decantation. To remove ballast substances, the separated precipitate is washed with acetone, and then acetone is removed from the purified target product. To do this, at a pressure above atmospheric, the target product is washed with liquid carbon dioxide. Acetone is unlimitedly soluble in liquid carbon dioxide and is easily separated from pectin insoluble in it. After washing, the pressure is released to atmospheric. As a result, carbon dioxide passes into the gas phase and is released from pectin. The release of carbon dioxide into the atmosphere cannot cause an explosion or fire, since its combustion in oxygen is impossible. The acetone separated as a result of washing with carbon dioxide is released from the latter with a certain increase in temperature and / or decrease in pressure to values at which carbon dioxide passes into the gas phase. The separation of carbon dioxide and acetone occurs at parameters excluding the evaporation of acetone. The acetone separated in the liquid phase can be reused in the process. The carbon dioxide gas phase obtained after acetone is separated from it, by cooling and / or compression, liquefies and returns to the cycle for reuse.
