Claims (7)
1. Пищевая композиция, включающая пищевой продукт и, по меньшей мере, один компонент, обеспечивающий функциональные свойства в указанной пищевой композиции, отличающаяся тем, что указанный, по меньшей мере, один компонент, по меньшей мере, частично заменен, в основном, неденатурированным изолятом белка канолы, имеющим содержание белка, по меньшей мере, примерно 90 мас.%, при определении его по Кьельдалю азот ×6,25 (N×6,25), в сухом веществе, при этом указанный изолят белка канолы характеризуется белковым профилем, который включает:
от 60 до 95 мас.% белка 2S,
от 5 до 90 мас.% белка 7S,
от 0 до 5 мас.% белка 12S.
2. Композиция по п.1, отличающаяся тем, что указанный изолят белка канолы представляет собой высушенную концентрированную надосадочную жидкость от стадии осаждения твердой фазы из водной дисперсии мицелл белка канолы.
3. Композиция по п.1, отличающаяся тем, что указанный изолят белка канолы имеет содержание белка, по меньшей мере, 100 мас.% (N×6,25).
4. Композиция по любому из пп.1-3, которая представляет собой обогащенный изолятом белка канолы напиток.
5. Пищевая композиция, включающая пищевой продукт и, по меньшей мере, один компонент, обеспечивающий функциональные свойства в указанной пищевой композиции, отличающаяся тем, что указанный, по меньшей мере, один компонент, по меньшей мере, частично заменен не денатурированным, в основном, изолятом белка канолы, имеющим содержание белка, по меньшей мере, 90 мас.%, при определении его по Кьельдалю азот ×6,25 (N×6,25), в сухом веществе, при этом указанный изолят белка канолы представляет собой высушенную концентрированную надосадочную жидкость от стадии осаждения твердой фазы из водной дисперсии мицелл белка канолы.
6. Композиция по п.5, отличающаяся тем, что указанный изолят белка канолы имеет содержание белка, по меньшей мере, 100 мас.% (N×6,25).
7. Композиция по п.5 или 6, которая представляет собой обогащенный изолятом белка канолы напиток.
