Abstract
Prozdrowotny produkt spożywczy, który stanowią mikrokapsuły z immobilizowanymi komórkami mikroorganizmów probiotycznych, charakteryzuje się tym, że ma postać proszku, który zawiera 22,3-60% wagowych źródła niezbędnych nienasyconych kwasów tłuszczowych (NNKT) i 106 - 1013 żywych komórek mikroorganizmów probiotycznych w gramie produktu oraz do 5% wagowych emulgatora z grupy estrów kwasów tłuszczowych i sorbitolu i/lub emulgatora z grupy oksyetylenowanych estrów kwasów tłuszczowych i sorbitolu. Otoczkę mikrokapsuły stanowi naturalny polimer lub modyfikowany naturalny polimer w ilości 10-50% wagowych oraz maltodekstryna lub mieszanina maltodekstryn różnych wskaźnikach glukozowych i/lub syrop glukozowy w ilości 3-60% wagowych. Otoczka stanowi 30-63% wagowych mikrokapsuły.
