The present utility model relates to food products more particularly to the process of making a donut composition enriched with kerson fruit (Muntingia calabura) which involves selecting, picking, washing, and blending the ripe kerson fruit, mixing the donut composition, adding the blended ripe kerson fruit to the mixture, kneading the dough until smooth and elastic, resting the dough for 15 minutes, punching down, cutting, weighing, shaping, resting the dough for another 5 minutes, and deep frying the donut. The ingredients used in this utility model include all-purpose flour, activated yeast, powdered milk, salt, margarine, whole egg, water, oil and ripe kerson fruit. The formulation consisting of 25.64 pcnt by weight of ripe kerson fruit attained the highest acceptability rating by the trained and consumer panelists.
