A process of making an ampalaya noodle by mixing flour, eggs, ampalaya pulp and juice, and salt together into a dough, wherein the ampalaya pulp and juice are produced by cutting the ampalaya into pieces and soaking the same for 30 minutes and then squeezing the ampalaya.
