Abstract
The invention provides a process for the production of corn tortillas, which comprises the production of flour from the pulp of Renealmia alpinia, which is mixed with corn flour and water in a range from 2.5 to 10% (wt/wt.), the production of dough balls that are subsequently flattened to obtain a dough flat disc, and cooking the dough disc to a desired doneness.
