Abstract

The present utility model is a process of producing jackfruit Artocarpus heterophyllus jam with iota carrageenan comprises of jam products as highly nutritious foodstuff for human consumption and potential food products for entrepreneurial venture, wherein at least the process comprising the steps of sorting the jackfruit avrils from rags; soaking the jackfruit avrils and rags in kalamansi juice for about 15 minutes; slicing the avrils and rags into small pieces; boiling the sliced avrils and rags until tender in texture; simultaneously blending the boiled jackfruit avrils and rags and caramelizing the refined sugar and dissolving the iota carrageenan in 400 ml of water; adding the blended jackfruit mixture and iota carrageenan solution into the caramel until homogenously mixed the jam; and cooling the jam.
