Abstract

Se da a conocer que se proporciona un aparato para inactivar bacterias y/o reducir el recuento microbiano en un producto alimenticio o un envase para el mismo, que es propenso a presencia microbiana en la superficie y bajo la superficie, comprendiendo dicho aparato una camara sellable que esta operativamente conectada a i) un generador de ozono para generar gas ozono, y ii) un ventilador de evacuacion para forzar el movimiento de gas ozono a traves de la camara sellable. Tambien se da a conocer que se proporciona un metodo para inactivar bacterias y/o reducir el recuento microbiano en un producto alimenticio o un envase para el mismo, que es propenso a presencia microbiana en la superficie y bajo la superficie , comprendiendo dicho metodo a) proporcionar una pluralidad de dicho producto alimenticio o envase en una camara sellable que esta operativamente conectada a i) un generador de ozono para generar gas ozono, y ii) un ventilador de evacuacion para forzar el movimiento de gas ozono verticalmente a traves de la camara sellable; b) crear condensacion sobre la superficie del producto alimenticio o envase ajustando la humedad en la camara sellable hasta alcanzar una humedad predeterminada; e) hacer fuccionar el generador de ozono y el ventilador de evacuacion para generar una velocidad de aire de escape predeterminada para hacer pasar gas ozono generado por el generador de ozono a traves de la camara sellable durante un periodo de tiempo de permanencia predeterminado; y d) expulsar gas ozono de la camara sellable. La presente invencion proporciona ademas un metodo para reducir un nivel de bacterias, levadura, moho y mildiu en o sobre un envase.
