Abstract

Et yoghurtprodukt smakssatt med sjokolade eller annet som ikke er surt og ikke inneholder frukt, fremstilles for å tilveiebringe en unik kombinasjon av teksturer ved å tilveiebringe en fluid smakssettende del og en herdet søtsaksdel. Søtsaken kan være en kontinuerlig fettblanding som har et smeltepunkt over kjøleskap- temperatur, men under romtemperatur. Søtsaken skiller det fluide smaksstoff (f.eks. sjokoladesirup) fra yoghurten, som fortrinnsvis inneholder aktive kulturer. Denne nye produktform muliggjør produksjon og lagring på vanlig måte for yoghurt.
