Abstract

Det beskrives en fremgangsmåte for fremstilling av stekte potetprodukter som har et lavt fettinnhold, for eksempel mindre enn 19 vekt% basert på vekten av potetproduktet etter steking og oljefjerning, og som omfatter de trinn å tilveiebringe potetskiver, blanchere potetskivene med en løsning omfattende toverdige kationer ved en temperatur på 50°C eller høyere, steking av potetskivene og oljefjerning fra de stekte potetskivene, fortrinnsvis ved påføring av overhetet damp. Videre beskrives et stekt potetprodukt som kan oppnås ved hjelp av nevnte fremgangsmåte.
