Abstract

For fremstilling av en gasstilsatt konditorvaremasse, mates en ubearbeidet konditorvaremasse ved en matehastighet fra et forråd (10, 12) til en gasstilsettingsenhet (18) for innføring av gass i konditorvaremassen, og hvor den gasstilsatte konditorvaremasse mates til en produksjonslinje (32) for produksjon av konditorvarer eller små plater. Matehastigheten for den ubearbeidede konditorvaremasse styres slik at den korresponderer til etterspørselen fra produksjonslinjen (32), idet mengden av innført gass styres som respons på matehastigheten for konditorvaremassen, slik at gasstilsettingsnivået i konditorvaremassen forblir hovedsakelig konstant og temperaturen i gasstilsettingsmassen inne i gasstilsettingsenheten (18) styres slik at den forblir hovedsakelig konstant og uavhengig av matehastigheten. Gasstilsettingsenheten (18) kan inkludere en rotor for røring og knaing av konditorvaremassen som inneholder den innførte gass, idet rotasjonshastigheten til rotoren styres slik at den økes for høyere matehastigheter og reduseres for lavere matehastigheter, for å frembringe gassbobler med tilnærmet den samme størrelse uavhengig av matehastigheten. For å holde boblestørrelsen liten under avleveringstrinnet, realiseres avleveringen via en trykksatt manifold som inneholder flere dyser.
