Abstract
La invencion se refiere a una composicion en polvo, en que la composicion en polvo se reconstituye para formar una bebida de proteina con estabilidad incrementada, dicha composicion en polvo comprendiendo de aproximadamente 3 a aproximadamente 30% de pectina (peso/peso del contenido de proteina), la pectina teniendo un grado de esterificacion de 50%; la invencion se refiere a un procedimiento para la produccion de dicha composicion y al uso de la misma.
